Glenda's Brownie Brittle

Sorry, Glenda, I'm a bit remiss with this thank you. I made your brownie brittle for Thanksgiving to take to the grands and it disappeared before we had even brought our suitcases in, no lie. I am not sure why you didn't have the foresight to tell everybody to automatically make a double batch right from the get go.

It's in the oven again right now. I used heath toffee bits and it smells fantastic. DH just said to me is this what you made for the kids that disappeared like lightning??? I'm not sure he even got to taste it then!

I made another pan last night, and got so tired, I've got to break it up now.

Buy a pkg of chocolate brownie mix, 10 oz size. I buy Marie Callender's, from Dollar Tree, but Betty Crocker has one at Wall Mart.

Add to the mix, 1 egg, 1/4 cup water, 1/4 cup oil.

Spray a cookie sheet, the one I use is 15 x 10.

Spread the batter thinly all over the cookie sheet and evenly. I use a spatula.

Then with fingers, take chocolate morsels and sprinkle about 1/2 cup or more over the batter.

Bake 325 for 30 minutes.
Turn oven off and let sit inside oven for 30 more minutes.

Brownies will be hard.

Let them cool completely, and make sure the chocolate morsels are cooled and hard.

Lift up at one end with a fork, and break into pieces.

Store in an airtight container.
Eat and enjoy!

Here's my Brownie Brittle story. I found it after Christmas at a Wal-mart near us. Thought it looked interesting, so I got a bag. Checked the price and it was 75% off and only 65 cents!!! I figure it must have been a Christmas item, but put in the regular cookie section. I opened it and couldn't put it down!! SO GOOD! Didn't think it would be so light and crunchy. Brittle sounds harder. Went back to Wal-mart and snatched up 4-5 more bags. Served it for Book Club and everyone liked it. I saw some at Costco, but did not think having a bag that big would be a good idea! Was afraid I'd eat all of that too! Went back to Wal-mart, but someone must have found the bargain because they were all gone :(

Here is an easy brittle recipe that we have been making for years. Peanut Brittle 1 c. sugar 1/2 c. white karo 1/2 c. red karo 2 c. raw shelled peanuts 1 t. baking soda Butter a baking sheet or foil and set aside. Combine first four ingredients in a heavy skillet. Cook until peanuts are done. Stir in baking soda. Pour and spread on the buttered sheet or foil. Allow to cool and break into pieces. This should not be cooked during damp, humid weather.

oh lordy! What a mess!

#1 my oven is not level. Half of it burned before it was half done.

#2 I must not have sprayed the pan well enough. It wouldn't come off. I banged the pan on the counter, and some came loose, enough to taste. Tried scraping the rest off and crumbs flew EVERYWHERE.

It's in the sink, soaking

What I tasted was ok tho

jeaninwa, sorry yours didn't turn out well.
I've made a number of times and it always come out. It pulls away from the sides and I just lift it with a fork and then start breaking it into pieces.

I use parchment paper. I'm not good at getting stuff out of pans LOL.

It would be quite hard spreading the batter out thin on parchment paper.

When the brittle gets hard, it just lifts right off the pan at the ends and you start breaking it into pieces.

Hey Glenda, it really isn't hard at all! I'm a bit of a klutz in the kitchen and parchment paper works just fine for me. Honest! You still have to wash the pan, sorry to say, LOL. Cause the oil goes through the paper lining just a touch :)

woodie, let us know if you make the brownie brittle and tell us if it is easy to thinly spread the batter.

I use parchment paper a lot, but not for the brittle.
