Made some pecan pie cookies yesterday...

I spent yesterday afternoon baking cookies with my granddaughter for a cookie exchange she was participating in (she's 23). One of the recipes she chose was this one:

"Pecan Pie" cookies

I thought it looked rather ambitious, and hoped we could produce something that came close to the picture. Neither of us are particularly advanced bakers. But our cookies looked perfect! Just like the picture. We made three batches, plus a couple of others.

I didn't taste, but my granddaughter said they were delicious. I can tell you they smelled divine!

Oh yum! They look great, and I can almost smell them myself. How come you didn't indulge? I think I'd have a hard time eating any less than 5.

I had to give up sweets a long time ago, so I'm no longer tempted by cookies and cakes. I enjoy making them sometimes, though, especially with my granddaughter. We're planning to have another session closer to Christmas.

Diane - A word of warning on the pecans...they will not keep long if they are cracked unless you freeze them. Of course that may not be a problem, if you are eating them that fast. LOL The reason that I know this is that my niece gave me a bag of cracked ones one time and I left them in the bag for a little too long. One day I opened the door to the room where they were and I had about a thousand littles moths flying around. They had hatched out and been well fed in the bag of pecans. Diane - You have come to the right place for the piecrust. I cannot even stand the thought of using lard and I think it would be way to much trouble if I had to do the frozen chipped butter thing, or the ice water thing that some people do. Warning: You are going to think this ingredient list looks funny, but give it a try. Make sure you have waxed paper. 2 cups flour (scant) 1 teaspon salt 1/2 cup cooking oil 1/4 cup buttermilk You can stir this with a spoon and it should be a soft dough. It will be much softer to roll out than most pie crusts. The trick is in handling the crust, so read this part carefully. Take out a little more than half for the bottom crust and place it between two sheets of waxed paper. Roll out with a rolling pen. After you have rolled it to the proper thickness, remove the top sheet of paper by carefully pulling it from one side. Lay it back down on the dough again. That was just to release it from the paper and make it release better later on. With both sheets back in place, flip the entire thing over so the bottom piece of paper is now the top piece. Remove the paper that is now on top and set it aside. Now here is the tricky part. Pick up the dough, still on the paper, by using both hands placed about 2/3 back on the crust and your pie pan in front of you. Let 2/3 hang toward you and let the 1/3 drop back over your hands. Starting with the 2/3 part, place it in your pan with the paper still attached. As you lay it down, the paper is now on top. Now slowly peel off the paper. This sounds like it slow process, but it really isn't after you get the hang of handling the dough. If you have a problem, just patch it. Since you didn't add more flour in the rolling out process, you can throw the scraps back into the bowl and use them as part of the next crust. I have quadrupled this recipe several times without any difficulty but I would suggest you make it as a single pie the first time so you know how the dough should feel. I predict you will never go back, once you have tried this one. Very little mess to clean up since the rolling pin never touched the crust, and there is no flour mess to contend with.

Ever since she was little, DD loved the pecan pie filling but never liked the pecans. So I always made little pecan-less pecan pie tartlets for her when I made the pie. My pecan pie recipe has a tablespoon of flour in the filling which I think is what helps it set up and not be runny: Pecan Pie 1 cup sugar 1/4 cup unsalted butter, softened 2/3 cup light corn syrup 1 tablespoon flour 1/4 teaspoon salt 3 eggs 1 teaspoon vanilla 1 cup pecan halves (can omit) Combine sugar, butter & corn syrup until smooth. Add flour, salt & eggs together and beat. Stir in vanilla and pecans. Bake in unbaked pie shell 1 hour at 350 F. Notes: Since the pie bakes so long, I make a collar out of foil to cover the edges of the pie crust for the first 45 minutes of baking. Remove the foil and continue baking the remaining 15 minutes.) For anyone who likes pecan pie, but considers it too sweet, and you also like pumpkin pie, this recipe is the best of both worlds (or pies ;-). The first time I made it was for a fall potluck. It makes a 13x9-inch pan and there wasn't any left. Nice for feeding the masses; and it takes up a lot less room in the refrigerator than pies. PUMPKIN/PECAN PIE SQUARES Crust layer: 1 c. flour (I used freshly-milled white whole wheat flour) 1/2 c. brown sugar (I use sucanat or palm sugar and cut it to 1/4 c.) 1/2 c. butter (or coconut oil) Mix until crumbly and press into a 13x9x2" pan. Bake 15 minutes at 350°F. In a large bowl combine: 1 (15-oz.) can pumpkin puree 1/2 c. brown sugar (I use palm sugar) 1 can (13-1/2 oz.) evaporated milk - which are now 13-oz., so use it and add 1 T. of regular milk) (I usually use double-strength powdered milk and you can also use 1/2 & 1/2) 2 eggs 1 t. cinnamon 1/2 t. ginger 1/4 t. cloves Beat well and pour mixture over baked crust. Bake 20-minutes at 350°F. In a small bowl combine: 1 c. chopped pecans 1/2 c. brown sugar (I use palm sugar) 2 T. butter (I use coconut oil) Sprinkle over pumpkin filling and bake 15-20 minutes more at 350°F. Cool in pan on a cooling rack. Cut into 2" squares. Yield: 2 dozen servings

Hubby did this part and it was very scientific. The original recipe called for five eggs, so we needed 2.5 eggs for half. He selected the two largest eggs and the smallest egg out of the carton and called it done! If it had been me, I would have put two eggs in the pecan filling bowl, beaten the third with a fork or whisk in a smaller separate container and poured half by eyeballing it in with the two eggs that were already in the pecan filling. I think the pecan filling is pretty forgiving, because it turned out perfectly for the bars I made.

Curious what is a #50 disher? Is this the same as a regular scoop that I use to make meat balls etc?\

Marie, we didn't know what a #50 disher was, so we ignored it. It was easy to make uniform balls without it. I just looked it up, though, and you're right--it's a scoop.

We were proud of the cookies, and almost as proud of our cleanup. when we were done, her mother's big black KitchenAid mixer didn't look like we'd even touched it, and boy, did we ever! :-)

Tip of the day, remember when doing all these cookies especially when more than one person is making them from the same batch, try flattening the dough out between two sheets of wax paper or saran wrap. Try to keep it the same thickness all over and cut in squares. Each ball should be almost the same size. Works wonderful when making meatballs too, more so this time of year with all the parties. Great time saver so you can make even more cookies lol. I like it when making no bake sweets like buckeyes and cherry balls and coconut truffles.

Alisande, those look just grand! I've been looking for a special cookie to send to work with Robert for his staff. And I have a set of scoops, used often for muffins, cookies, and biscuits. ;-)

Not a sweet eater here, either, but I usually sample a cookie or muffin fresh out of the oven.

A cookie exchange sounds like fun. alisande, I'm so glad that your granddaughter liked the cookies after risking trying a new recipe. I can't believe you didn't at least *taste* one! There's nothing better than holiday baking with the 'little ones' (nieces in my case :)

They do look delicious. I stopped making holiday cookies when I realized that I simply ate too many. But today I'm making scones and Irish soda bread to take to my Irish genealogy group's annual get together. I have to remember to pick up some clotted cream and a jar or two of Dickenson's jam too.

I know it must seem strange that I didn't taste the cookies, but I've learned to be rather rigid about my avoidance of sweets. Back in the days when I was pre-diabetic, I had a sugar addiction going, and one cookie (or whatever) would set off the cravings again.

Also, at this point in my life even a small amount of butter or other saturated fat will have an almost immediate effect on my arteries and give me chest pains. My dad was the same way. It used to be said that one meal could not do that; the plaque had to built up over time. But some years ago I was pleased to see medical researchers report that yes, in some people one meal could definitely do that. I'm one of those people.

Those look so good. I shared the recipe and intend to make them myself. Have three Grands that are in college or young adults that don't bake so I am doing a lot for Christmas.
