What is your best / favorite fudge and the recipe? We still have time to make some.

Peanut Butter Chocolate Fudge

2 cups Sugar
1/8 tsp salt
3 oz (3 squares) semi-sweet chocolate
3/4 Cup evaporated milk
- - - - - -
1 ts vanilla
1 TB butter
6 oz (1/2 cup) chunky Peanut butter

Place first 4 ingredients in a sauce pan, cook on low-med heat 5 min. stirring until mixture boils.
continue cooking low heat 5 min, (should bubble gently)
Remove from heat and next 3 ingredients.

Beat 4 minutes, pour into a well buttered 8" square pan
refrigerate till firm

I use the recipe on the jars of Kraft Marshmallow Cream. Yum!

Lately I have been making it in the microwave. Heat condensed milk on high for 3 minutes, take out and stir in nuts and a bag of chocolate chips and pour into a greased square pan. My Mom used to add marshmallows.

Does anyone have a recipe for an easy to make brown sugar fudge. I wish I still had some of my pure maple syrup because I love maple fudge.

This is easy as could be and everyone thinks you fussed. From Kraft Foods 1993 pamphlet on Holiday Desserts: One Bowl Chocolate Fudge Ingredients: 2 packages (8 squares each) semi sweet chocolate 1 can (14 ounces) sweetened condensed milk 2 teaspoons vanilla 1 1/2 cups chopped walnuts Microwave chocolate and milk in a large microwavable bowl on high for 2-3 minutes or until chocolate is almost melted, stirring halfway through heating time. Stir in vanilla and walnuts. Spread in greased 8 inch square pan. Refrigerate until firm. Cut into squares. Makes 4 dozen Options: Rocky Road Fudge: Add 1 cup miniature marshmallows with vanilla and walnuts. Peanut Butter Fudge: Omit walnuts. Drop 1/2 cup peanut butter by teaspoonfuls on top of fugde. Swirl with knife to mable-ize. Peppermint Fudge: Omit vanilla and walnuts. Stir in 1/2 cup crushed peppermint candies. Coconut Walnut Fudge: Add 1 cup flaked coconut, toasted with vanilla and walnuts. Garnish with additional coconut. I've made the regular fudge, the peanut butter chocolate and the peppermint fudge. All have gone over well. I have a brother-in-law that will hunt for the container that I bring to Christmas. He'll eat the entire container himself!

Grainy fudge

I understand the quality in the fudge that the poster is looking for. I dont much care for smooth, creamy kind of fudge. But, I wonder if grainy is the right description for what is being sought. When I think of "grainy" I think of sugar crystals. But, what I miss about the old fashioned fudge is what I would be inclined to refer to as a flakiness, or a layered texture. Have you ever had melted chocolate seize up ? I wonder if that is part of the chemistry that makes the texture that the poster is looking for. Since I dont make fudge, it is not something that concerns me, but I do know the quality that is being sought. I thought that was the quality that all fudge had until I got older and would go somewhere that actually advertise it's fudge, only to be disappointed that it didnt have that same texture. Sometimes I crave a piece of old fashioned fudge, but have learned that these fancy little shops that sell it will be disappointing. We need someone schooled in food chemistry to explain it. I really think that chocolate that seizes and the fudge that we seek share a bit of chemistry. Sugar crystals are not what is being sought. Sugar crystals are the ruin of any candy.

Used to make this all the time! Need to look up my recipe. I got it from our Tuesday Women's Guild as it was a favorite for lunch there. It's fabulous with a scoop of peppermint ice cream or mint ice cream on top! SO easy...

So sorry for you! The product I've been using that seems to do the trick is "Rabbit and Groundhog Out," by the same company that makes "Deer Out." The former has everything that's in Deer Out, plus even more stuff. So far it has worked for me. There's no rhyme or reason for why deer choose particular plants. Maybe they're walking through your place not with a target in mind, but they're just strolling. And then they go, "What the hey, that looks tasty." Again, sorry for your loss.

\Okay, so shame me.

See's Fudge

3 pkg. (6 oz. ) chocolate chips
2 cups mini marshmallows
1/4 lb. butter
1/4 lb. margarine

Place in large bowl, mix together and set aside.

In tall pot cook 4 1/2 C. sugar, 1 large can evaporated milk. Bring to boil stirring constantly. Boil 9 min. stirring constantly. (Mixture will have brown things floating around in it. This is normal) Pour over chocolate. chip mixture. Beat until creamy. Add 1 tsp vanilla and 1 C. chopped walnuts. Pour into buttered 9 x 13 pan. Refrigerate over night and cut into small pieces and then halve. Easy and delicious!

I just tried Peanut Butter fudge using a 28 oz jar of peanut butter and a can of chocolate frosting. Heat the frosting till liquid and add to bowl with peanut butter - pour into a 9x12 pan and chill till solid - tastes like Reece's Pieces... DH loves it... Easy...
