I made up my mind to eat light meals today. I made potato soup and topped it with shredded cheese. Also made some chicken salad that I just ate from a bowl, no bread/buns/crackers.

I hope you're feeling better now but it's smart to eat light. I'm having one of my golf groups for a Christmas breakfast next month so I'm trying out a new recipe. One of my friends is gluten intolerant so I'm making a crustless quiche. Nobody told DH that quiche is a breakfast,-brunch type food so I'm getting away with it. It's like the Mexican soup AKA white chili deal. It's all in his head. Will let you know if it's any good. Right now it's smelling yummy.

georgysmom, you could make a frittata -- it's like a super-loaded crustless quiche. :) I wish I was in your golf group!!!

I just made deviled eggs for a snack and look what I got!!! I don't see many double-yolkers anymore and this is the first ever hard-boiled one for me! :)

Used a 45 minute window to whip up the pumpkin pie and get it in the oven, make the bean salad & dressing, stir up some cream cheese dip and wash all the dishes. Then relax for Happy Hour. A simple can of soup will tide the grumbling belly. (Healthy Choice soup, it's horrible!) That pie may have a slab missing later. Enjoy your holiday.

We had leftover minestrone soup, perfect for the eve before a feast. Robert enjoyed a fresh yeast roll with it.

OF, the Healthy Choice soups, or ANY 'lite' soups are horrible to my tastebuds, too. The reason, 100%, is that the sodium chloride (salt) is replaced with potassium chloride.

A large percentage of us have taste receptors for which the latter is extremely bitter, both immediately and as a horrible aftertaste. Vile. It's a genetic thing. My husband can gobble them up and enjoy.

Party, when Robert brings home extra large or worse, jumbo eggs, they often turn out to be double yolked.

Partymusic, it kind of was like a frittata. I was looking for something meatless because I'm going to have ham with a honey glaze to go with it. It was very good but I'm glad I did a trial run. Will do some tweaking. It had cubed hash browns, zucchini, onions, red bell pepper and spinach in it. I think I will cut the spinach in half. It also called for eggs and egg beaters. I just had eggs but didn't know how much to use in ratio to everything. Next time I will use the eggbeaters, too to give it a little more eggy base. With those adjustments, I think it will be great. I never saw a double yolk hard boiled egg either!

So busy packing up and loading the rv for tomorrow morning I didn't cook so I had delivery, I had orange shrimp with broccoli and husband had the Happy Family. Very good.

We went out to eat at a new chain sports bar and pizzaria called The Other Place. The sandwiches were very good, as was the craft beer. Nice clientele there. Will definitely go back.
We got snow all day today. I got a kick out of everyone wearing parkas and gloves as they left.

Tomorrow, I'm taking my wife and 2 adult sons to a small restaurant that serves a tasty all-you-can-eat buffet. Meat choices are turkey, ham, beef roast, and sausages.

I'm going to have trouble; I'm on a diabetic low-carbohydrate diet.

We were supper busy today. We've been taking the dogs to the vet dentist for cleanings/check ups, and since it's an hour dive each way, we've been doing a lot of driving. We're also gathering the supplies to redo our front fence. It's been a couple trips to the hardware store. In addition, I've been doing some work from home. So, tonight was fast food for dinner. However, I did use some left over chicken and peppers to make Kung Pow Chicken with rice for lunch.

I just had a piece of cheese toast. Husband had left over linguini with white clam sauce. He can't stop talking about how good that turned out. Said it was even better the second day.
