What's for Dinner.....Monday edition?

I'll be heating up the leftover sloppy joe sauce I made several days ago and stuck in the freezer. I'm thinking that some slaw or cucumber salad will be good with the joes.

What will be or has been your main meal today?

Thanks for starting the dinner thread!

I've got a skillet of un-cabbage rolls cooking on my little induction burner. Hamburger, cabbage, rice tomato sauce and rotel tomatoes simmering. Shredding some cheese on top at the end. Can't wait!

We had chicken salad rollups on flour tortillas. Has some fresh fruit on the side.....canteloupe, fresh pineapple, kiwi, strawberries with a yogurt, honey, lemon zest dipping sauce. The chicken salad turned out delicious...I hope that I can duplicate it next time. We ate outside on the patio, with the noisy birds. Good grief but they are expressive at this time of year and that time of night. It was delightful.

Wow some good eats tonight!!! Luckygarndnr-I love beef ribs, but I am not sure I have ever heard of the sauce you had with them. Can you please share your recipe??? I prefer rice over a baked potato. Glenda-Sounds as if you had a feast. Glad you enjoyed the food and fellowship Gadgets- light ryebread with refried beans and cheese sounds like it hit the spot dead on.. Old fixer-I love open-faced roast beef sandwiches with gravy Ellendi-Manicotti is one of my favorite pastas!!!! Rhizo_1 We had the same dinner except you had turkey meatballs with your dinner... Jasdip-We are having homemade cheeseburgers Thursday night my family loves them so much Phyllis_mn-Pan beer battered fish sounds like a very appetizing meal.... Hi Patti!! I'm so glad to see you. I'm thinking pureed foods, or a veggie juice drink would be good for you. Lots of vitamins and nutrients which is what you need. Today was a sunny, cool day. I was expecting rain, it's in the forecast for the whole week, so today was a pleasant surprise. I did a load of whites and put them on the line, made an apple crisp and apple cobbler. The cobbler dough didn't turn out, the first time ever, the dough baked up tough. Inedible, really. I also made Chicken with 40 cloves of garlic, with potatoes and carrots in the pot. Had a friend over for dinner, and it was all eaten with abandon.

Glenda, pot lucks are better than just about anything, IMHO! I just love them. Sorry today's lunch wasn't better. Oh Terri, I'd sure hate to be the girl one of your son's marries. You have really spoiled them with your wonderful homemade cooking. I've never made a sponge cake but I'm thinking of making one at T-giving. Guess I should practice first. Aw Jasdip, that weather stinks! That chicken, however, sounds really good. Did you get the recipe from Pinterest? I'm pretty sure I c/p'd from their site. Love apple crisp. Used to have a recipe that called for peanut butter. It was really good. Stay warm! Seagrass, we all love our leftovers around here. I like chili the second day better anyway. Jean, it really is hard to cut out the carbs. When Harry went on the Atkins diet I craved a baked potato so bad I could taste it, but wouldn't eat one in front of him. He lost a lost of weight, I lost zip, nada, zero! Keep it up though and you will see results--hopefully with a better sugar level! Shirley, you're right about fewer dishes. I like red beans and rice but I put meat in it--either hamburger or chicken. Do you? Raven, again--the second day is better with gumbo, too. Wait--I'm thinking of jambalaya. I don't think I've ever had gumbo. That has okra in it, right? Mary, hoping you don't get snow or high winds. Geez, you've had enough, already. Both your dinners sound delicious!

I had tuna noodle casserole. Baked a potato since the oven was on anyway. I like the skins when they're baked.

This week includes my annual "special day" (a secret!). Last nite started with parmesan shrimp, breaded shrimp, coconut shrimp, shrimp alfredo, baked tater, salad, cheddar biscuits. Guess where? Brought home enough in the box for two lunches! Tonite will be a pig out buffet. Normally $20, I squeaked it down to $5, and that was free. Dumbo still prepared too much food here. A Chocolate Cake, with creamy Chocolate frosting. BBQ ribs. Some hamburger patties. A big pot of Chili. Salsa and Avacado. No cooking the rest of the week. Anybody hungry?

OF, you'll have to tell us! Is it your birthday?

Looks like a lot of comfort food tonight, yum! Some of my favorite meals; I used to request tuna casserole for my birthday supper as a child. Of everything in the world I could have had, lol.

DH and I were both tired and had headaches after work. We went to a little Mediterranean restaurant nearby.

I was going to make something DH really likes, he left for work this morning with an improved but still swollen knee. And his work involves hiking. Then, being Monday or just my days in general, had lots of interruptions and the Italian style pot roast didn't get put into the oven.

It did go into the pressure cooker browned just a half hour ago and is done, now to make some pasta (dried, only have to boil in salted water) and a vegetable and get him fed ;)

Left over butter chicken I made on Sunday. I use the VH butter chicken sauce, add the browned boneless, skinless chicken thighs, fresh broccoli and simmer. I love butter chicken with chunks of pineapple so I add a can of pineapple chunks and instead of rice I add cooked bow tie noodle to eat on a cold night
