What's for dinner Monday?

I just woke up from a long nap--or rather Harry woke me up. I sure wish I could sleep that good at night. I feel great!

Tonight we're having cubed steak with bread and gravy and lima beams. The bread and gravy is a throw-back from my childhood and now Harry likes it, too.

What are you having for dinner at your house?

Graveside service for friend at 1:00, and I was pushed to meet friends that were riding with me.

Gobbled down a ham on wheat sandwich and after the funeral peanut butter crackers.

Veggies tomorrow for sure.

Pam, I love quiche and have leftover ham in the freezer. I should make one with ham, and onions, peppers and mushrooms. Hubby won't eat any hot cooked eggs, so it's me and my quiche. The last time I made hamburger rolls I posted a pic :) Cheri I love pot roast. I tend to make mashed potatoes on the side, instead of in the slow cooker. We like them that way better. Alice your dinner sounds great! We eat a fair bit of rice, just love it. Ellendi would you share your quinoa recipe on the Share your Recipe Thread???? We enjoy quinoa. That's the pits you had so much trouble finding the sriracha. Old Fixer, IS there such a thing as too much garlic? LOL Party, I was going to bake some sweet potatoes yesterday, but they are really small, so I mashed them along with white potatoes. We like them mixed. Matti, I've heard that In n Out burgers are good. Enjoy! Rhizo, we just had some homemade apple sauce that I took out of the freezer with a warm oatmeal-carrot muffin! We just finished watching the first episode of this season's Blacklist and thought I'd check back while setting up for Castle. Shirley, here's the recipe. Easy-peasy and delicious! Pam, you could have been here, as usual I made enough to feed at least 1 more person! Oven Ã¢ÂÂfriedÃ¢ÂÂ chicken Preparation time: 15 minutes Baking time: 20 to 25 minutes 1/3 cup dry unseasoned bread crumbs 2 teaspoons sesame seeds 1 1/2 tablespoons grated Parmesan cheese 1/4 cup fat-free mayonnaise (not salad dressing mayonnaise) 1/4 teaspoon salt 1/8 teaspoon garlic powder 2 dashes cayenne pepper 1/4 teaspoon poultry seasoning 4 (4 ounces each) boneless, skinless chicken breast halves Cooking spray Preheat oven to 425ÃÂ°F. Place bread crumbs, sesame seeds, and Parmesan cheese in a large zip-top bag and shake gently to combine. In a small bowl, whisk together mayonnaise, salt, garlic powder, cayenne pepper, and poultry seasoning. Using a pastry brush, coat both sides of each piece of chicken with the mayonnaise mixture. Place chicken, one piece at a time, into the bread crumb mixture in the zip-top bag, seal, and shake to coat chicken well. Transfer chicken to a foil-lined baking sheet coated with cooking spray. Spray chicken evenly with cooking spray. Bake for 20 to 25 minutes or until juices run clear and chicken is no longer pink in the center. Yield: 4 servings

Prairie Rose, do you barbecue all winter long, or was it because the weather was nicer today? Morz I love a well-done roast, and the slow cooker makes it easy. I also love cranberries in my salad. Have you tried them with roasted brussels sprouts? That's a favourite with us. Monica I made sweet potato fries last week and we loved them. The last time I tried baking them, they oozed out over my oven. I didn't realize they cooked so much faster than white potatoes. Rhizo, I love reading your dinner threads. You are so darn healthy! BLF, isn't it nice when a recipe from a fellow member turns into a keeper? Shirley, I wasn't sure if today classified as a "holiday" today (Family Day) so I made sure I roasted my vegetables before 5 pm to at least get the mid-rate hydro rate. I hate the smart meters. Moni, I add cheddar cheese to my broccoli soup. Probably negates any positive benefits of the broccoli, but it sure tastes good.

Jim congratulations on your upcoming cruise! I love it that you had wine with bacon and eggs. Audrey, your dinner looks and sounds fabulous. We had baked potatoes last nite. Shirley, I've yet to make red beans and rice. What's throwing me off from making it, much as I'd like to, is that we only have kidney beans, as far as a red bean, and I know that isn't the kind to use. I made quinoa with toasted almonds and red currants the other day. We like quinoa. Kath, for some reason companies change their recipes. In the event of making things healthier, taste gets compromised. Less fat and salt is less flavour it seems. Prairie Rose, do you make the light fluffy dumplings? That's what my Nan made and that's all I've ever known. I've never attempted it; I should! Raven, that looks divine!! We love roasted vegetables! Erin, I hope you feel better. That's dedication, coming onto a dinner thread when you're not feeling that great. Betsy, that's nice comfort food. Gyr_Falcon, that's a great sounding meal! Glad to see you here.

Today was my big grocery shopping day. Way too tired to actually cook or clean up after that. So I had a chicken pot pie. I get them at Aldi's and they're made with all white meat, big chunks, and the pie is about 50% larger than the regular ones.

Glenda, it was a hard day for you. So sorry! BTW, I love those peanut butter crackers with a cold coke. Naughty, but nice.

Raven, I think it would be even better tonight, at least I always seem to like things better the second day. Maybe because I just had to warm :-)

Shirley, why is it grocery shopping is so tiring? Maybe it's the crowds (at least at our Publix) or maybe because of the bill at the checkout!! We should try Aldi's. It just isn't as convenient as our other stores. Harry and I could probably share one that big. Enjoy!

Well, I have tons of leftover curry but Lauren went to the dentist this afternoon and had no cavities, so I offered her a treat. She picked Mexican food! So, we split a shrimp fajita meal. There was so much leftover that we had to bring about half of it home.
