Need a good Mac/Cheese w/Broccoli recipe

Went online for Rachel Ray's but reviews said it could be bland and sauce doesn't thicken. Anyone tried hers? Have another mac/cheese/broccoli recipe you like? I want to bake it for the family TG dinner.

I know you wanted a baked dish, but why not try this?

Macaroni and Cheese Salad (Marilyn Sue)

1 (7 1/4 oz.) pkg. macaroni and cheese
10 oz. pkg. frozen peas
1 half cup pickle relish
3/4 c. mayonnaise or Miracle Whip
1/2 c. sliced celery
1/2 c. chopped onion
1/2 tsp. salt
6 hard-cooked eggs, chopped (less may be used)
Prepare mix according to directions on package. Add frozen peas. Stir and add rest of ingredients. Chopped green pepper may be added, if desired. Chill before serving.

I have made this and it is delicious. No reason why you could'nt add some chopped eaw broccoli to it. Might be a welcome change from all the hot food.

In fact I am taking a cold dish to TD dinner at my DGS's. It is a salad made with frozen peas, and other good stuff.

Good idea sue. I'll copy that recipe and keep it in mind. In fact I have two boxes of Kraft Mac/Cheese in the cupboard.

BB, Sounds interesting. Is it like a hamburger helper thing? I'm trying to imagine where this would be in the store. I'm always on board for Mac & Cheese. This is one of my favorites: Patti LaBelle's Over the Rainbow Mac-n-cheese Ingredients: 1 tablespoon vegetable oil 1 pound elbow macaroni 1/2 cup butter PLUS 1 tablespoon 1/2 cup shredded Muenster cheese 1/2 cup shredded mild Cheddar cheese 1/2 cup shredded sharp cheddar cheese 1/2 cup shredded Monterey Jack cheese 2 cups half & half 1 cup Velveeta, cut into small cubes 2 large eggs, lightly beaten 1/4 teaspoon PenseyÂs 4S salt 1/8 teaspoon black pepper, freshly ground Topping: 3 tablespoons butter 1 cup panko bread crumbs Directions: 1. Preheat oven to 350. 2. Lightly butter a deep 2 1/2 quart casserole. 3. Cook pasta, add the oil then the elbow macaroni and cook until macaroni is just tender (about 7 minutes). Drain well and return to the pot. 4. In a small saucepan, melt the first measure of butter (1/2 cup butter PLUS 1 tablespoon. Stir into the macaroni. 5. We use Manchego, Gruyere and a bit of Asiago 21st-Century Mac 'n' Cheese Excerpted from The Splendid Table'sÂ® How to Eat Supper: Recipes, Stories and Opinions from Public Radio's Award-Winning Food Show by Lynne Rossetto Kasper and Sally Swift Serves 4, and doubles easily 8 to 10 minutes prep time; 30 minutes oven time You could assemble the dish a day ahead to bake when you walk in the door Never underestimate the healing power of macaroni and cheese at the end of a day from hell. Make this as rich as you'd like by selecting milk, half-and-half, or heavy cream. 3 quarts salted water in a 4-quart pot 1/2 pound (2 cups) imported elbow macaroni or penne pasta 1 large egg 1 cup milk, half-and-half, or heavy cream 1 small garlic clove 3/4 medium onion, coarse chopped 1 generous cup (5 ounces) shredded good-quality extra-sharp cheddar cheese 5 ounces cream cheese, crumbled 2/3 cup (3 ounces) shredded GruyÃ¨re, Appenzeller, or Manchego cheese Generous 1/8 teaspoon red pepper flakes Generous 1/8 teaspoon salt Generous 1/8 teaspoon fresh-ground black pepper Generous 1/4 teaspoon sweet paprika, Hungarian or Spanish 3 tablespoons unsalted butter 12 saltines, coarse crumbled 1. So many good recipes here! If we make it again I'll try them. I didn't have a chance to check in before making it this morning. I started at 6:15 and at 8:15 after showering (oven turned off after baking at 350, not broiling, and burner for cider turned off) I was running to pour the cider in the 5 gal Igloo and get the pans in the cooler. But we made it - drove up to Springfield and found they'd pushed start to 11AM instead of 10. So it sat longer than expected but was still warm and the cider was so hot we had to add cold cider in. I did have a little problem with the sauce - I made a double batch (for 2 lbs of pasta) at a time, poured it in with about 1 lb diced ham (decided that was enough) and yes 1/2 package of peas. Then put the pan (which still had cheese sauce in it) back on burner to add more cheese sauce (I had almost 1C from last night) and more cheese, I didn't think I needed more roux. Burner was off but sauce burnt to bottom so I only poured a little over the 2nd pan before I realized, put 2nd lb of pasta in with just lots of shredded cheese, melted a stick of butter and some milk in the MW and poured over, mixed in, stuck in oven, mixed some more then topped with more cheese. Guess which one they went for first? But they said it was all good, they were going back for the ham & pea version even before the plain was gone. I think teenagers will eat anything (of course DD wouldn't touch it). I think we ate 3/4 of it (so 3 lbs of pasta) and there were 23 kids and 4 adults counting the bus driver (who said she didn't like peas but liked this and took the leftovers home). Next time I'm not going to get so involved making the sauce - I'll melt butter, milk and cheese together and if it's not thick enough I'll add roux but I'd definitely add more cheese, less milk and flour than CI calls for (I used less than 3 quarts b/c I wasted some in the burnt sauce, so 1/2 gal was probably enough for 4 lbs of pasta, but I used 3 sticks of butter, 2 in the roux and 1 in the last pan). The cayenne wasn't noticeable and I did heavily salt the water, and put about 1 tsp of salt in the first cheese sauce but none in the 2nd pan (butter/milk) and I don't think they missed it. I forgot to bring salt and pepper but I've got some plastic shakers I'll throw in the box with cups and flatware so we have it with us.

Thanks for the recipes and suggestions! Linda- I'm not familiar with Kaukana Club cheese spread, is it a regional thing? Ginger- Don't have a mixer w/ dough hook, but will wing it with food processor up to adding the RKs, do that by hand so they don't get pulverized. Good thing I built up muscles turning over garden beds all summer. We have lots of great local cheddars here. I may try G's recipe using smoked or garlic-herb. OddÂ I checked the email reply box when posting, so far have only received Ginger's. An obvious newbie to this forum, I carefully copied other posts format in subject line, but my caps disappeared and the word recipe was automatically inserted. Maybe I need to edit subject between Preview and Submit? (as in this reply) Thanks again!

Looked at Rachel Ray's and the picture just didn't look good.

This one sounds delicious! I have never had mac and cheese with broccoli.

Macaroni and Cheese with Broccoli
This macaroni and cheese is enhanced, both nutritionally and flavor-wise, with fresh or frozen broccoli. The Gruyere cheese is great, but eel free to replace it with Swiss cheese or use more Cheddar cheese.

Prep Time: 20 minutes
Cook Time: 30 minutes
Total Time: 50 minutes

Ingredients:
8 ounces elbow macaroni
1 cup broccoli florets fresh or frozen
4 tablespoons butter
2 tablespoons flour
2 cups milk, low fat is fine
1 cup shredded sharp Cheddar cheese, divided
1/2 cup shredded Gruyere cheese
1/4 cup grated Parmesan cheese
1/2 teaspoon salt
1/4 teaspoon cayenne pepper
1/4 cup whole-wheat bread crumbs
Instructions:

In a medium saucepan, cook macaroni according to package directions, until slightly firm. Drain well.

Cook the broccoli following package directions, on the stovetop or in the microwave.

Preheat oven to 375 F. Grease a 2-quart baking dish.

In a medium saucepan, melt butter. Add flour, stirring for about 1 minute, until smooth and bubbly. Gradually whisk in milk, stirring constantly until thickened, about 3 minutes, remove from heat.
Reserve 1/2 cup cheddar cheese and stir remaining cheddar, Gruyere, Parmesan, salt, and cayenne into sauce until cheeses melt. Add macaroni and broccoli to sauce. Pour into prepared baking dish.
Bake 15 minutes. Sprinkle top with reserved cheddar and bread crumbs. Bake 10 to 15 minutes longer, until lightly browned and bubbly.

Serves 4 to 6

Putting together your casserole recipe right now, glenda. I'll wait and bake it tomorrow morning before heading out to brother's. The Gruyere smells great. I was worried 1/2 cup wouldn't be enough but I think the flavor will be strong enough, esp. along with the cheddar and parmesan.

Tasted it and the Cayenne pepper sure is coming thru! I've never cooked with Cayenne as I'm not a big fan of hot,spicey foods, and I knew Cayenne was a hot pepper. I think my brother's clan will be ok with it as they like foods with some zip. We'll see what they say tomorrow. Maybe next time I'll use a little less than 1/4tsp. for myself.

I didn't put the bread crumbs on top yet, going to wait and bake it 15min. first tomorrow and then top. You think that will be ok or maybe not necessary to wait.

1/4 tsp doesn't sound like too much. Maybe by the time it's cooked it won't be as strong.

I'd definitely wait to put the bread crumbs on top.

Why don't you mix the bread crumbs with the cheese before adding?

Nope, the 1/4 tsp. wasn't too much, everyone liked the casserole! and yes, I mixed cheese with the bread crumbs when I put it into the oven for the final baking. Thanks! will be making this recipe again.
