Someone mentioned Brother Thomas's Cookies on another post. I know I had that recipe a long time ago, but am unable to find it. Could someone please post it again??? Thanks!

Are you talking about Brother Tom's tea cookies?

Brother Tom was one of my dad's best friends and he was known for his tea cookies at our hometown church.

Country Bumpkin was asking for it cause they used to live next to eachother and she enjoyed his tea cookies.

I have the recipe if that is what you are looking for, in the family church recipe book.

So good the glaze isn't necessary. Source is Merle Alexander, copy editor for The Oregonian. * Exported from MasterCook * Autumn Cake Loaf Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 1/2 cups flour 1 teaspoon baking soda 1/2 teaspoon salt 1 teaspoon cinnamon 1/2 teaspoon nutmeg 1/4 teaspoon ginger 1/4 teaspoon cloves 1/2 cup butter 1 cup sugar 1 teaspoon vanilla 2 eggs 3/4 cup pumpkin 3/4 cup chocolate chips -- (I used the mini-chips) 1/2 cup pecans -- toasted, coarsely chopped GLAZE: 1/2 cup sifted powdered sugar 1/8 teaspoon nutmeg 1/8 tablespoon cinnamon Grease bottom of 9 x 5 x 3 inch loaf pan. Preheat oven to 350 degrees. Sift together flour, baking soda, salt and spices. Cream butter in large mixing bowl; gradually add sugar, beating until light and fluffy. Add vanilla. Blend in eggs; beat well. At low speed add dry ingredients alternately with pumpkin, beginning and ending with dry ingredients. Stir in chocolate morsels and 1/4 cup nuts. Spread in pan; sprinkle with remaining nuts. Bake at 350 degrees for 60-70 minutes or until cake springs back when lightly touched in center. Let cool 15 minutes; remove from pan and allow to cool completely. Drizzle with glaze. Let stand at least 6 hours before slicing. Glaze: Combine ingredients and blend with 1-2 tablespoons cream until it is of consistency of a glaze.

For party-music50: Here's white chili with my rendition: 1 can chicken broth 1Tbl olive oil 2 boneless chicken breast, chopped ****I buy rotissorie chicken and use breast only shredded. Works great! I like mine shredded vs chopped 1/4 cup or more chopped onion 1 4 oz can green chiles, chopped ***I puree mine with my hand blender WITH juice 1 19 oz can navy beans, undrained 1 tsp garlic powder 1/2 tsp cilantro ***I use instead 2 tsp chili powder 1/2 tsp oregano 1/8 tsp red pepper Saute chicken and onions 4-5 minutes in olive oil **If using rotissorie, saute onions only till translucent Stir in spices, broth, simmer about 15 minutes, then add beans and shredded chicken and simmer 5 more minutes, to get the flavors blended. We love it topped with fritos, shredded cheese, and a dollop of sour cream

This is an orange flavored flourless chocolate cake, for anyone looking for a variation. I have made it several times and it is yummy! Chocolate Cloud Cake 8 oz. (250 g.) bittersweet chocolate, chopped 1/2 cup (125 ml.) unsalted butter 3 eggs 1 cup (250 g.) granulated sugar 2 tbsp. (25 ml.) orange liqueur 1 1/2 tsp. (7 ml.) grated orange rind 3 egg whites TOPPING: 1 1/2 cups (375 ml.) whipping cream 2 tbsp. (25 ml.) powdered sugar 1/2 tsp. (2 ml.) vanilla Line bottom of ungreased 8-inch springform pan with waxed paper; set aside. In bowl over saucepan of hot (not boiling) water, melt chocolate with butter, stirring occasionally. Let cool slightly. In separate bowl, whisk whole eggs with half of the sugar just until turning pale and starting to thicken; whisk in chocolate mixture, liqueur and orange rind. In another bowl, beat egg whites until soft peaks form; gradually beat in remaining sugar, 2 tbsp. (25 ml.) at a time, until stiff shiny peaks form. Fold one-quarter into chocolate mixture; fold in remaining whites in two additions. Pour into prepared pan. Bake in center of 350 degree oven for 45 to 50 minutes or until top is puffed and starting to crack but center still looks wet. Let cool completely in pan on rack (center will fall, leaving higher sides). (Cake can be wrapped in plastic wrap and refrigerated for up to 2 days or over-wrapped in foil and frozen for up to 2 weeks.) Run knife around cake to loosen; carefully unmould onto cake plate. TOPPING: In bowl, whip cream with sugar and vanilla; mound in center of cake, swirling lightly. To serve, cut with wet hot knife. Makes 12 servings.

Back in those days, men in the church would call eachother "brother" as a gesture of closeness. At least that's what I always thoughts.

My dad was Brother Raymond.

bump, go look at the link I posted. shows them cutting the cakes with a canning lid.
Here's his recipe and it uses lemon flavoring

Brother Tom's tea cakes
1 egg
1 c sugar
1 stick margarine
1/2 tsp soda
1/2 tsp vanilla
1 tsp lemon flavoring
2 1/2 c plain flour

cream together the egg, sugar and margarine. add the soda, vanilla, and lemon flavoring, stir in the flour

roll out on a floured board and cut with a biscuit cutter

place on ungreased baking sheet

bake 325 for 10 minutes until lightly browned

makes about 5 dozen

***I copied it exactly from the l983 edition of the church recipe book

THE COINCIDENCE TO THIS IS THAT: BRO TOM and his wife were friends of my parents, and I grew up with their children. We all went to the same church.

Glenda, that looks like such a yummy recipe. But, how would it be affected if I use butter instead of margarine?

Just got the cookbook out and it was published in l983 and rechecked the recipe.

I don't know why using butter would make any difference except to make it even richer tasting????????

I always use Lake of Lakes in my baking.
