I'll try again to share my recipe - November 7

I tried this a.m. but was able to preview, but not submit. The title was there, but nothing in it. So I'll try one more time.

This is the appetizer I'm making tonight for my neighbors party. It's by Michael Smith.

Nacho Chips with Bacon Jalapenos and Cheddar

A recipe is merely words on paper; a guideline, a starting point from which to improvise. It cannot pretend to replace the practiced hand and telling glance of a watchful cook. For that reason feel free to stir your own ideas into this dish. When you cook it once, it becomes yours, so personalize it a bit. Add more of an ingredient you like or less of something you don't like. Try substituting one ingredient for another. Remember words have no flavour, you have to add your own!

Ingredients:

• 6 slices bacon, roughly chopped
• 2 x onions, finely diced
• 1 x jalapeno pepper, seeds removed and minced
• 2 cups grated cheddar cheese
• 1 bag restaurant style tortilla chips

1. Preheat oven to 400°F.

2. Heat a skillet over medium-high heat and add bacon.

3. Let brown and then add onions and jalapeno and cook
until they have softened and are beginning to caramelize.

4. Cool slightly and then pour into a bowl and add grated cheese.

5. Toss to combine.

6. Spread the tortilla chips in a single layer on a large baking sheet and top each one generously with a spoonful of the cheese mixture.

7. Bake for 10 minutes or so until chips are golden and cheese is melted and bubbling.

The first thing I did was copy that quote about a recipe just being words. It's so appropriate. I recall one time a former GF, who was a veteran cook, wanted a simple recipe for lasagna. I had just tried out the version where you don't boil the noodles and I sent it to her. She got all bent out of shape because the recipe included spinach and she doesn't eat spinach! I laughed so hard. I told her I didn't use it in there and you don't have to. It was just instructions on how to make it! Although she was a good cook for so many things, he sure had her blind spots!

BTW, this recipe sounds like it'd make some great quesadillas too! There, now that's my new recipe! :)

Made this numerous times. Gonna make again for Monday's potluck luncheon.

Sausage and grits casserole

8-10 servings

2 cups water
1/2 teaspoon salt
1/2 cup quick-cooking grits
4 cups grated cheddar cheese
4 eggs, beaten
1 cup milk
1/2 teaspoon dried thyme
1/4 teaspoon garlic powder
2 pounds Jimmy Dean sausage,
cooked, drained and crumbled

Bring water and salt to boil. Stir in grits. Return to boil, reduce heat, then cook for 4 minutes.

In large bowl combine grits and cheese and stir until cheese is melted. Stir in cold milk, thyme and garlic powder. Mix well. Stir in eggs, mixing well. Stir in sausage. Pour into 13 x 9-inch pan. Cover and refrigerate overnight.

Remove from refrigerator and let stand for 15 minutes. Bake at 350 degrees F for 50-55 minutes.
