What's for Dinner, Monday evening?

Back in the spring, Raven posted a recipe from her Diabetes site. "oven-fried chicken" breaded with mayonnaise and bread crumbs. She hadn't tried it, but thought it sounded good.

Raven it's delicious!! We had that, leftover scalloped potatoes (we love them re-heated!), sauteed leeks out of the garden with asparagus. I've recently discovered baked acorn squash so we split 1/2. Dinner was delicious.

We had lemon garlic pasta. I made it several months ago and we loved it. Next time I wanted to make it, I could not find the recipe. Found it again today!!

Mary, I had to look up what Pasta Fagiola was. It sure sounds healthy! Shirley, the weather was sunny all day here as well. Just loved being outside in it. Wendy's chili is a meal in itself and one of the most popular choices on their menu. You made 2 stops for your dinner! Hellion sliders with your healthy sides sure sounds good. Lots of good choices. I'd have the chocolate cake AND ice cream. Sue, I had oatmeal last nite! We're supposed to get more snow and cold temps again starting tomorrow nite. Susie, did you see Gadgets at McD's?? ;-) Kittiemom, I would love to have a barbecue. What kind of sandwiches did you do?

Glenda, that's a lot of food, but with all 12 bringing a dish it doesn't take long to fill up a buffet. I'm surprised there were no desserts! Raven, everything sounds delicious. We ended up having sliced avocados last night because the mangoes weren't quite ready. Way to go, Jasdip. You're making space in the frig for more of your good cooking! Shirley, I looked for green beans in the grocery today and they were awful looking. I wanted green beans and red potatoes so bad!! Yep, I think we all love our leftovers and most of the time I think they taste better on day 2 (or 3).

jasdip, again it was my BF that made the spanish rice. We're both cooks and go with what's available or sounds good.... but I asked him to write down what he did. I love his spanish rice! Jim's Spanish Rice :) 1 cup Basmati rice 1 14/15 ounce can diced tomatoes 1 can water 1 clove garlic, minced (optional) 2 tbsp finely diced onion 1/2 - 3/4 diced green bell pepper 2 beef bouillon cubes (or one large for two cups) 1 pat butter 1 tbsp olive oil (maybe a little more) 1 tbsp dark chili powder 1 tbsp hot salsa or picante Brown rice over medium heat in the oil and butter. Once slightly brown, add onion, garlic, and green pepper and continue sauteing for 5 minutes or so, then mix in half the chili powder. Add the tomatoes, then fill the can with water and add that plus the bouillon cube(s), the salsa and rest of the chili powder. Bring back to a boil, stirring in the bouillon cube(s) until dissolved. Reduce heat and simmer covered, stirring once or twice, until rice is done. (Note: he may have used more onion and chili powder :) The been burritos are heated refried beans (canned or make your own) w/ chopped onions & shredded cheddar cheese on warmed flour (or GF) tortillas with additional optional onions, cheese, sliced black olives, sliced pickled jalapenos, sour cream (or yogurt :), salsa, shredded lettuce, etc. We use our pico de gallo over shredded lettuce, like a salad. I make mine with chopped tomatoes, Portugal long hot peppers, cucumber, cilantro, lime juice, and salt. Some also like onion in it. Matti: Your meal tonight sounds like it would fit right in with your Weight Watchers program. How are you doing with it? Jasdip: You've had a busy few days. I like a good beef stew. I've never thought of mashing the two different potatoes together. But I will give it a try. Stacey: All those vegetables would be a real treat. I really like greek yogurt. Terri: I vote with you.........meatloaf. Georgysmom: Can you believe I've never gotten a roasted chicken from the store!! I'd probably want to sit down and eat half of it. Shirley, who is headed off to bed to watch tv, then go to sleep. I'm not a night owl by any stretch of the imagination.

My meal was leftovers....mac n cheese covered with homemade spaghetti sauce I pulled out of the freezer.

I made a special dinner of broiled, crab-topped swordfish steaks, rice pilaf, and steamed asparagus with a local pinot grigio wine and chocolate mousse for dessert.

Navy bean and ham soup, hot sage/cornmeal biscuits and a glass of wine!!

We just finished watching the first episode of this season's Blacklist and thought I'd check back while setting up for Castle.

Shirley, here's the recipe. Easy-peasy and delicious! Pam, you could have been here, as usual I made enough to feed at least 1 more person!

Oven Ã¢ÂÂfriedÃ¢ÂÂ chicken

Preparation time: 15 minutes
Baking time: 20 to 25 minutes

1/3 cup dry unseasoned bread crumbs
2 teaspoons sesame seeds
1 1/2 tablespoons grated Parmesan cheese
1/4 cup fat-free mayonnaise (not salad dressing mayonnaise)
1/4 teaspoon salt
1/8 teaspoon garlic powder
2 dashes cayenne pepper
1/4 teaspoon poultry seasoning
4 (4 ounces each) boneless, skinless chicken breast halves
Cooking spray

Preheat oven to 425ÃÂ°F. Place bread crumbs, sesame seeds, and Parmesan cheese in a large zip-top bag and shake gently to combine.

In a small bowl, whisk together mayonnaise, salt, garlic powder, cayenne pepper, and poultry seasoning. Using a pastry brush, coat both sides of each piece of chicken with the mayonnaise mixture. Place chicken, one piece at a time, into the bread crumb mixture in the zip-top bag, seal, and shake to coat chicken well. Transfer chicken to a foil-lined baking sheet coated with cooking spray. Spray chicken evenly with cooking spray.

Bake for 20 to 25 minutes or until juices run clear and chicken is no longer pink in the center.

Yield: 4 servings
