Potluck Help

I've got a workday lunch potluck to attend. I signed up for a main dish. Now, I need some ideas. I'd like the main dish to be room temperature, if possible. Or have a cold (meat?) component mixed/added in just before serving.

I live over an hour away from work. I only have my personal mini fridge which is full. I do not want to lug any plug-in appliance like a crock-pot. Can you help me?
