LOL Black Forest Preserves 6 1/2 cups granulated sugar 1/3 cup sifted unsweetened cocoa powder 3 cups firmly packed coarsely chopped pitted sweet black cherries 1/2 cup lemon juice 2 pouches liquid pectin (each 3 oz) 4 TBLS. amaretto liqueur or 1/2 teaspoon/2 ml almond extract 1. Prepare canner, jars and lids. 2. In a small bowl, combine sugar and cocoa powder. Stir well and set aside. 3. In a large, deep stainless steel saucepan, combine sherries and lemon juice. Stir in reserved cocoa mixture. 4. Over high heat, stirring constantly, bring to a full rolling boil that cannot be stirred down. 5. Stir in pectin. Boil hard, stirring constantly, for 1 minute. 6. Stir in amaretto liqueur. 7. Remove from heat and skim off foam. 8. Leave 1/4 inch headspace in jars. 9. Process 10 minutes in BWB. Makes about seven 8 ounce jars. And, no I didn't go pick cherries. You'll be hard pressed to find a part of the bovine that I haven't eaten, LOL, although I think maybe not the "pizzle". Then again, maybe, I don't know what all went into Grandma's beef stock and she seldom wasted a morsel. I really don't care for tendon, though, it has that gelatinous texture and leaves a film in my mouth that I don't like. So does Cap'n Crunch, go figure. I wonder if there is beef tendon in that? Although I have to admit that I seldom have the nerve to disagree with Anthony Bourdain, LOL. My Aunt Yoshika used to make stock from the fish heads and I thought that was weird when I was a kid, now I know that it's absolutely normal. I wish I had paid more attention to her cooking, she could have taught me many things, I think. I am glad you enjoy the tendons, though. I believe if an animal gives its life for our sustenance, we should use every part of it and waste nothing. To do otherwise would be disrespectful. Other cultures are much better at it than we are, whether for financial reasons or otherwise, but the end result is that others use parts like the cheeks, the tendons, etc., that we don't. Heck, I remember when we couldn't give away "ox-tail", it was the farmer's cut. Now it's amazing what they want for the stuff. Annie

My adorable and inspiring Great Pumpkin Cookbook from Ruth Arrived yesterday with the mail forwarded from AZ. It's a winner even if it took the scenic route and arrived after the contest ended.. I love Pumpkin in almost any fashion (NO Pumpkin Spice Lattes for me) and have a good supply of nice winter squash.
