I just this minute emailed that to my daughter-in-law. Rice, for heaven's sake! I guess nothing's safe.

I saw that on the news the other night. I think it's good to be cautious, but I'm not overly concerned. They said that the arsenic occurs naturally in the soil - we just hear the word arsenic and get all excited. Doesn't matter where the rice is grown, the soil has arsenic in it. Mankind has eaten rice for a jillion years and now it's bad for us? Think of how we keep twisting and turning about eggs, coffee, and so on. The chinese eat rice every day and we are constantly told how their diet is superior to us westerners' diets. I'm not calling it a lie, I'm just saying I'm not going to change my rice eating habits based on this new finding.

""I think a prudent position for the next few months or years ... is that parents avoid rice or at least avoid any rice that comes from Texas, Louisiana or Missouri, and when in doubt go with barley or oatmeal," Dr. Philip Landrigan"

The article I read suggested only eating rice from California -- or IMPORTED from Asia! Now there's a twist.

According to Dr. Oz, the arsenic is in the soil. To override any potential danger, cook it the same way you would cook pasts. Normally, you cook 1 cup of rice in two cups of water. If you cook it like pasta by filling a pot with water and putting in only 1 or 2 cups of rice, then drain it in a colander, there's no problem. That gives the rice a chance to boil out anything harmful and pour it out. He also suggests rinsing the rice before cooking.

I believe the arsenic concern comes from the fertilizers that have built up in the soil after many years; the percentage is higher than naturally-occurring arsenic

The way I figure it, I'm soon going to be on a diet of bread and water - oh wait - bread is high in carbs and water - probably something wrong with it. I stopped having what I eat being governed by every study that was released spouting this or that, when a study was released saying that milk caused cancer in mice. Say what?! Eat sensibly, eat a variety of carbs, protein, fruits and vegetables (and dark chocolate) and everything in moderation.

It is suggested that rinsing the rice many times, allowing it to soak in water, then rinsing again will wash off most of the arsenic.
