Peanut Butter Banana Bread

I wanted to use up the last of the Peter Pan Peanut Butter because it is too liquidy for my younger grandson who makes a mess eating it. I had almost enough ripe banana to make banana bread for our older grandson, and decided to put the last 2 Tablespoons of peanut butter into the recipe, and I cut back on the butter. Tastes great.

Hope he likes it. I cannot convince him to eat banana bread with peanut butter on it, so I plan to keep mum about the change I made to the recipe and see if he detects it.

You say you can't convince him to eat banana bread with peanut butter on it. Why does it matter, aren't there enough other things he likes to eat?

It would be great to mix in after you open the jar. Generally you cannot use oil in canning, so I think jam with peanut butter in it might be susceptible to botulism. It will be very dense....that's a lot of wet stuff for very little flour. I am always suspicious of self rising flour....I would use all purpose flour and 2 teaspoons of baking powder adn 1 tsp of baking soda.. And vanilla!! Always vanilla...I put vanilla in waffles and pancakes and in the dough for cinnamon rolls and the eggs for French toast....always vanilla! The fact that is says wrap and store for easier slicing gives you some clue that it's a very moist and fragile bread. Linda C

When I worked I would make this and freeze thick slices in individual baggies. The mornings I had a hard time getting up I would grab a bag and eat it on the way to work. I loved it and have been thinking about making it to take with me the days I go shopping because I don't stop for lunch when I'm by myself.

Snidely, he is a fussy eater like his parents and grandparents were. He likes banana bread for breakfast, and with his tiny appetite, making it a better source of protein with some peanut butter would make for a better start for the day.

Sounds like he doesn't drink milk, that would present a problem.

No, he drinks milk sometimes. But that is not sufficient in and of itself.

Not drinking milk happens to only be a problem if you are a calf. It is not the miracle food people used to make it out to be.

Most pediatricians encourage milk and other dairy products for young children. Especially for fussy eaters. There aren't any miracle foods as far as I'm concerned but avoiding empty calories is always a good thing. Dairy products supply a wide range of important nutrients.

It's got to be more nutritious than banana bread.
