What's for dinner Monday?

We had to be at VA this morning so Harry could "donate" blood for his Coumadin testing. By the time we got home it was almost noon. Feels like a wasted day.

Tonight we're having a new dish--coconut curry chicken over rice. We'll have peas and fresh sliced peaches, too. I'm hungry since all I've eaten today was a spoonful of PB.

Please let us know how you liked your dinner. Your recipe is one I'd like to try.

We had boiled new potatoes and sausages with onions and cabbage.

Paw Paw Patch and it was so full you had difficulty finding a parking place.

Country fried steak, fried green tomatoes, blackeye peas, Mexican cornbread.

Glenda, I think tomorrow's tuna will be the winner. Is there such a thing as too much mayo? ;-) Oh Shirley, I hope that ice storm passes you by. Enough is enough. Your dinner sounds yummy. Ruthie, halibut is one of my favorite cold water fishes. Cod is another. A salad along side would be plenty for me. Mimi boo, what time do you want us to be there for dinner. You know, just a "few" of us from the KT!! Raven, you're doing well sticking with the low carb diet. Good for you. Harry loved that diet!! Gosh, Phyllis that soup sounds delicious. Does it have cheese in it? Mary, I don't know how you can plan and cook to separate meals most nights, but I sure admire you for it. Both sound good tonight. Jasdip, we had a holiday today also--President's Day. What was yours? Looks like someone besides me caught the cooking/baking bug! Love shepherd's pie and was just thinking about it this afternoon.

Wow, your dinners all sound so good! I love the chicken in the slow cooker, steak, pasta sauce. Stir-fries are always good, and anything can be used in it. So versatile. Baked salmon and asparagus sounds delicious! I've got asparagus in the frig, that I'll either cook with orzo, or maybe roast it. We love it roasted. The last time we did that I made Angela's roasted asparagus breaded with breadcrumbs and parmesan. Thank you SO much for the best wishes guys. I just read them to him and he's touched. I know things will be good and he'll have a good recovery. This is a top-notch hospital AND it's all done by robot. Not laproscopy but a robot, not a human hand. He think that's very cool. LOL The time wearing the catheter and the recovery time is greatly reduced by choosing this method. And he's home the following morning, vs spending 3 days in the hospital with the traditional surgery.

Jim congratulations on your upcoming cruise! I love it that you had wine with bacon and eggs. Audrey, your dinner looks and sounds fabulous. We had baked potatoes last nite. Shirley, I've yet to make red beans and rice. What's throwing me off from making it, much as I'd like to, is that we only have kidney beans, as far as a red bean, and I know that isn't the kind to use. I made quinoa with toasted almonds and red currants the other day. We like quinoa. Kath, for some reason companies change their recipes. In the event of making things healthier, taste gets compromised. Less fat and salt is less flavour it seems. Prairie Rose, do you make the light fluffy dumplings? That's what my Nan made and that's all I've ever known. I've never attempted it; I should! Raven, that looks divine!! We love roasted vegetables! Erin, I hope you feel better. That's dedication, coming onto a dinner thread when you're not feeling that great. Betsy, that's nice comfort food. Gyr_Falcon, that's a great sounding meal! Glad to see you here.

The weather here today was similar to yours, jasdip. We decided to go to the famous local seasonal 'dive' which opened for the season yesterday... a family business since 1938, I think. It's just a little shack with minimal cooking facilities (bbq sandwiches, hamburgs, hotdogs, fries) where you stand outdoors in line to order. They also have an ice cream side, but it's not open yet. You can do take-out or eat outdoors on picnic tables. It's near a busy intersection so always noisy, but the food is good and super cheap, so it's always busy. Totally tacky and totally fun. You'll see everything from tattooed grandmas on motorcycles to vice presidents in suits all standing in that line together, and today the lines were the longest I've ever seen! I chose a pork sandwich w/ bbq sauce, dill pickles, hot relish on the side (they make their own and it's really good) and fries. Totally happy here. :O)

Glenda, thanks for sharing your mother's recipe. They're very similar. Wonder why I don't remember ever having sour cream growing up? What a lunch you had!! It sounds wonderful. BTW, have they installed your new windows yet?

Georgysmom, thanks for posting your chicken Moran recipe on the "I'll share" thread. I will make it for sure. all the recipes today sound really good.

I don't have any idea! I have my stove covered up with big pots of boiling peanuts so I could not cook anything right now if I wanted to.
Maybe grilled ham and cheese sandwiches I can do those on the griddler.

One of the big pots boiled over and made a huge mess but since it is a glass top it wasn't too hard to clean it up that is one good thing with the glass tops about the only good thing.

My hubby had some doctor appts today so he came on home early which just threw me totally off my regular schedule.

I spent a good portion of my day yesterday making tomato sauce. I started out with my large stockpot and about 10 quarts of tomato pureed with onion, garlic, basil, and a touch of salt and ended up with just a little less that 5 quarts of sauce. This has been a really good year for my vegetable garden.

Anyway, tonight DH is making spaghetti, of course.

And from the looks of it, I will be making more sauce this coming weekend.

I had some 15 beans, a potato, and a boiled egg. Good and filling.

My son was coming over to mow after work. Guess what? We weren't expecting any rain, but it came up with a short-lived thunderstorm, giving me just enough rain so he can't mow. Same thing happened last Friday. I'm going to have to freeze what I cooked for him.

The taco salad I was going to make last night. And yes, I opened the Doritos last night and ate a bunch. Luckily I had bought a bag of generic tortilla chips for the salad because I knew I'd eat the Doritos - just like georgysmom said I would!
