What's for Dinner ... Tuesday?

It looks like it's going to open up and rain anytime now. At least it held off till after I went grocery shopping.

I didn't want to cook and it feels so humid, so I will be having lettuce wraps with chicken/egg salad and sliced tomatoes in them. Also will have slices of cantalope. I opened a bottle of cold mango Sparkling Ice. Everything will be light, refreshing and cold.

What sorts of things will you be having (or did you have) for your main meal today?

I have been gone all day with the girls shopping. My supper was a sandwich spread sandwich, cottage cheese and a yellow tomato from our garden plus iced tea to drink.

I made a great roast beef with potatoes, onions, mushrooms, and I roasted carrots separately. It made a wonderful thick brown gravy to go over rice. It was wonderful. Had the neighbors over for dinner and a visit. I had picked up some home grown tomatoes at the farmers market and sliced up some of those too.

I had a great lunch after golf today. Grilled romaine hearts with salmon and a Caesar dressing drizzled lightly over all. The salmon was cooked to perfection. I'm often not pleased with salmon. Sometimes it tastes too strong but this was delicious. I made four qt.s of gazpacho today (I didn't play golf because it was too hot, but was committed to the luncheon) so I will probably have a little of that tonight. DH can help himself. For Father's Day I made all his favorites. Grilled flank steak, potato salad, cole slaw and three bean salad with garbanzo beans thrown in as an extra, and chocolate chip cookies. Lots of leftovers in the fridge.

Grilled some salmon on a cedar plank, always so good. Made a salad with greens and marinated veggies from the garden, a little rice pilaf. Awfully hot here today, even though the patio and back porch are shaded after about ten, you could feel the heat radiating from the concrete. Glad that the salmon didn't take very long!

Leftovers here, too. I'm going to make chicken fajitas with the chicken from last night, plus grilled green, yellow sweet peppers, and onions, avocado, chopped lettuce and tomatoes and sour cream, all on a flour tortilla. I'll mix up a little fresh salsa, too, I guess. Raven, I hope that your power comes back on SOON!

I'm making a fave that has no name. It's just cooked chunks of potatoes, steamed dry in the pan, dumped in a bowl and drenched with butter, green onions and sea salt. And as always, A GREAT BIG ENORMOUS ICY COLD COKE !

The recent hot spell made 40,000 people extremely happy. Not a complaint from anyone. (Fixer used the word "hot"??) Now back down to humid 80's. The goofy tornado siren just went off? Started Happy Hour. Fixed 1/2 of supper while on the phone making a CT appointment and pre-registration. Ready to fry up a Pork Steak and smother it with gravy from the drippings. Sweet Corn, Stewed Tomatoes and Applesauce. Still chomping on that soccer ball size Muskmelon. Strawberries & Ice Cream. Hope to stay awake for a snack later.

A beautiful day here today. I played 18 holes of golf, stayed to help celebrate a friends hole-in-one and had a small Greek salad. For dinner, I made orichette with cherry tomatoes, fresh basil, some lemon juice, chopped onion, garlic, Parmesan cheese, white wine S&P and some red pepper flakes. It was good.

I found a couple cans of gravy in the cupboard, so I am going to make chicken and gravy over mashed potatoes with a big green salad to start.

We had lettuce wraps, too. I had made some quinoi salad yesterday, plus some mango salsa and baked tilapia. Rolled up in a big leaf of romaine, it was pretty darned tasty. I had three!

I've handed DH something to grill while I kept working in the yard the last several days, today I thought something different.

I chunked into big bite pieces then browned several boneless chicken thighs, seasoned those and added lightly browned mushrooms and onions. A couple of bay leaves, some roasted garlic, Costco organic chicken broth and put all on to pressure cook. It's now turned to the slow cook function until we're ready to eat (electric pressure/multi cooker) and I'll decide how to serve. DH will vote for over rice while I'd prefer dumplings, I may let him win tonght ;)

Cloudy here today and about 67F....

Glenda: Okra is one dish I've never tried, but like the sounds of all the rest of your meal.

Sue: Yours was a cold meal also. What all do you put in your sandwich spread?

Deeby: I love your enthusiastic descriptions of your drinks. Gosh, those potatoes sound good too.

Jim: Fresh salad from the garden, topped w/shrimp... excellent.

Old Fixer: My mouth is watering at your pork and gravy. You then add all the vegetables and fruit. How do you find room for the dessert?

Georgysmom: I had to look up orichette. Pics online look very appetizing. Wouldn't mind a taste of it.

Alice: Sounds like a plan to me. I love mashed potatoes.

Rhizo: I never thought of putting something like you did into a lettuce wrap. Something else for me to try.

Morz: That dish sounds very good. I'd have to toss a coin as I couldn't choose.
