Need Simple Chocolate Dessert

My daughter has been invited to her new boyfriends for dinner and she agreed to bring dessert, apparently it has to be something with chocolcate in it.

My daughter is no cook by any stretch, does anyone have a simple, but good chocolate recipe they would like to share.

Definitely make Glenda's Fudge Pie!!! I don't have the recipe with me at work but hopefully someone who has it will come on and post it. It is very simple and really, really good.

Red Fruit Pudding is a recipe from Gourmet that I've used in mini desserts so it should work as a filler of choc cups. 1/2 recipe makes approx 10 demitasse cups of pudding so it would fill a lot of cups! What better combination than choc & raspberries - & the red is perfect for Valentines Day. RED FRUIT PUDDING yield: Makes 8 to 12 servings active time: 25 min total time: 4 hr (includes chilling)NOTE: I let mine setup overnight because I didn't see any noticeable thickening in 30 minutes Ingredients 3 (12-ounces) packages unsweetened frozen raspberries, thawed 2 (1/4-ounces) packages unflavored gelatin 1 cup bottled pomegranate juice 2 cups bottled wild lingonberry sauce or lingonberries (from two 14-ounces jars) 1/2 cup sugar Accompaniment: lightly sweetened whipped cream Preparation PurÃ©e raspberries with their juices in a food processor, then force though a fine-mesh sieve into a bowl, discarding solids. Sprinkle gelatin over pomegranate juice in a medium saucepan and let stand 1 minute to soften. Cook over low heat, stirring, until gelatin has dissolved. Stir in lingonberry sauce and sugar. Cook, stirring, until sugar has dissolved and sauce has melted. Stir into berry purÃ©e. Quick-chill in an ice bath, stirring occasionally, until mixture begins to mound, about 30 minutes. Pour into dishes or glasses and chill until set, at least 3 hours. Puddings can be chilled up to 3 days.

The following are for bar types of cookies because I think they're easier and faster. CHOCOLATE MARBLE SQUARES 1 C + 2 T. flour Â½ t. baking soda Â½ t. salt Â½ C. (1 stick) soft butter 6 T. white sugar 6 T. firmly packed brown sugar Â½ t. vanilla Â¼ t. water 1 egg Â½ C. chopped nuts 1 6 oz pkg chocolate chips Combine the dry ingredients. Set aside. Combine butter, both sugars, vanilla, and water. Beat until creamy. Beat in egg. Add flour mixture and beat well. Stir in nuts. Spread in a greased 9 x 13 in. pan. Sprinkle with the chips and bake at 375 for 1 minute. Remove from oven and run a knife through the mixture to marbelize the dough. Some chips will melt; some wonÂt. Return to oven and bake for 12-15 minutes longer. (ItÂll get tannish and look a teensy bit darker along the edges. Cool in the pan and cut into squares. Makes 24 decent sized ones. TOFFEE BARS This recipe needs to be made several days before eating.) 1 C. butter, softened 1 C. sugar (white) 2 C. sifted flour 1 egg, separated 1 tsp. vanilla Â½ C. finely chopped walnuts (or other decorations if nuts are a problem). Preheat oven to 275. Cream butter and sugar. Beat in the flour, egg yolk, and vanilla. Beat well. Spread (youÂll need to use your hands) in the bottom of a well greased 15 Â½ x 101/2 jelly roll pan. (I think theyÂre called half sheets.) Brush the top with the egg white. Sprinkle and then pat in thefinely chopped nuts. (You can use any kind of sprinkle instead of nuts.) Bake at 275 degrees for 1 hour and 10 minutes. Immediately cut into about 50 bars and remove from the baking sheet. Cool on a rack and store tightly covered for 3 days before eating. RASPBERRY BARS This recipe is one I found on this forum (I'm so sorry--I can't find whose it was and used the Search function but it didn't help to find the original poster and recipe.) I changed the recipe by using a larger pan and also sprinkled it with nuts instead of pieces of dough. Below is what I did. RASPBERRY BARS 2 Â½ C. flour 1 C. sugar 1 C. chopped pecans or walnuts 1 C. butter, softened 1 egg 1 10 oz. jar raspberry preserves Grease a jelly roll pan and preheat the oven to 350 degrees. Combine all of the ingredients except the preserves. Beat until itÂs combined well and press the mixture into the jelly roll pan. Spread the raspberry preserves to about 1/3 inch from the edges. Bake for 30-50 minutes or till the edges are light tan color. Cool completely and cut into bars. Mazel Tov!

This is, hands down my favorite dessert ever. It's an old Pillsbury bake-off winner that my mom has been making for close to 30 years. A couple of changes-I never, ever use raw eggs. Too risky. Instead I pick up some egg beaters. Also if I'm in a hurry I just use a container of cool whip instead of whipping cream. I describe this to people as a frozen peanut butter mousse with a peanut butter crust and chocolate swirls. MARBLE - OUS PEANUT BUTTER DESSERT 1/2 c. firmly packed brown sugar 1/2 c. peanut butter (I use crunchy & it is great!) 1/4 c. butter, softened 1 c. flour 1 c. (6 oz. pkg.) chocolate chips FILLING: 1 pkg. (8 oz.) cream cheese, softened 1/2 c. sugar 1/4 c. peanut butter 1 tsp. vanilla 2 eggs 1 c. (1/2 pt.) whipping cream, whipped & sweetened In small mixer bowl, cream brown sugar, peanut butter and butter until light and fluffy. Add flour; blend until crumbly. Sprinkle into ungreased 13 x 9 inch baking dish. Bake at 350 degrees for 10-15 minutes until golden brown. Set aside half of crumb mixture (about 1 cup) for topping. Lightly press remaining crumb mixture over bottom of pan. Prepare filling. Pour over crumb mixture in pan. Melt chocolate chips; drizzle over filling. Gently cut through to marble. Sprinkle with reserved crumbs; press in slightly. Freeze at least 2 hours or until serving. Remove from freezer 10 minutes before serving. Filling: In small mixture bowl, combine cream cheese, sugar, peanut butter and vanilla; beat at medium speed until smooth and creamy. Add eggs, one at a time, beating well after each. By hand, fold in whipping cream. Tip: If desired, you may substitute 2 cups (4 1/2 ounce carton) frozen whipped topping.

Here is the fudge pie recipie I use

I use 1/4 cup of cocoa instead of 3 Tbsp.

I would bring vanilla ice cream to go with it.

With this she will be impressive!

From the Sweet Potato QueenÂs Big-Ass Cookbook (and Financial Planner)
By Jill Conner Browne

Preheat oven to 350
Lightly grease 9X13 pan

In a large bowl mix
2 c. Sugar
Â¼ tsp. salt
2 c. Flour

In a sauce pan melt
Â½ c. butter
Â½ c. shortening
3 Tbsp. HersheyÂs Cocoa
Add
1 c. Coca-Cola

Pour into sugar/ flour mixture and stir well

Add
Â½ c. buttermilk
1 tsp. baking soda
2 eggs
1 Ârunning overÂ tsp. vanilla

Add and stir (donÂt use a mixer for this part)
4 c. miniature marshmallows

Pour into prepared pan and bake in center of over for 45 minutes.
Be careful not to scorch the marshmallows.

You MUST ice the cake when it is hot. So have the icing ready when you take the cake out of the oven

Icing
In a sauce pan melt
1 stick butter
6 Tbsp. Coca-Cola
Â¼ tsp. salt
3 Tbsp. HersheyÂs Cocoa

Lower heat to very low and stir in
1 box powdered sugar

Do this quickly
Add
1 Ârunning overÂ tsp. vanilla

Pour over hot cake.

You want to eat this when it is still hot (at least warm)
Serve with Vanilla Ice Cream

Notes:
I used HersheyÂs Special Dark Cocoa
This can be mixed by hand (spoon of course) or in a mixer until the marshmallows are added.

Fudge pie
1 stick butter
1 cup sugar
1/4 c flour
1/4 cup cocoa
2 eggs beaten
1 tsp vanilla
Melt butter
Combine rest of ingredients
stir butter and ingredients
pour into pie shell
bake 325
40 minutes

Do not test with toothpick as it is super moist

This one I made recently and it is outstanding

Simple Lava Cake

Prep: 15 minutes

Cook: 15 minutes

Yield: 4 servings

Ingredients
4 ounces semisweet baking chocolate or 3/4 cup semisweet chocolate morsels (I used Ghirardelli for both)

1/2 cup butter (1 stick)

1 teaspoon vanilla extract

1 cup confectioners sugar

2 eggs

1 egg yolk

6 tablespoons all-purpose flour

Preparation
1. Preheat oven to 425F. Lightly grease 4 (8-ounce) ramekins (custard cups or souffle dishes). Place on a baking sheet.

2. Microwave chocolate and butter in a large microwaveable bowl on High 30 seconds or until butter is melted. Whisk until chocolate is completely melted. Whisk in vanilla and confectioners sugar until well blended. Whisk in eggs and yolk. Stir in flour and pour batter evenly into prepared custard cups.

2. Bake 13 minutes or until sides are firm but centers are soft. Let stand 10 minutes. Carefully loosen edges with a knife. Invert cakes onto serving plates and sift powdered sugar over the top. Serve immediately.

***It filled 4 custard cups exactly. I DID NOT remove from the cups. Served in the cup.

Bakes in exactly 13 minutes.

Well, my daughter made the "fudge pie" today and has taken it to her new boyfriends for their dessert.

It was really easy to make and she also bought some vanilla icecream to go along with it.

Will let you know what the boyfriend thought of it.
