Dinner Monday Nite?

Warm and humid today, another day of the same tomorrow then temps should cool off again.

We had stir-fries and rice for dinner. Nice and light.

A total repeat of last night: fresh green beans, ham and potatoes. A small piece of a peanut butter pie....it's all gone now.

It was beautiful today, but very steamy.

Yum, everything looks good. Elery wants Gina's chickpeas and Ann T's lamb plus a bowl of her chili, but I want anything that SharonCB had (especially that shrimp), some of marigene's cookies, AM's falafel, kathleen's pears and dixie's chicken salad. Oh heck, I'll take some of everything! We did eat this week, in between canning. One night we had chili dogs with homemade chili and some hot/spicy Asian type coleslaw. The dressing is made with Siracha chili sauce and it was so hot Ashley said she thought "her face was going to burn off". LOL Elery loved it, so it was all his: We picked blueberries, so I made a blueberry crisp: I baked some sesame/whole wheat bread with pecans, so we had my homegrown eggs on toast with kohlrabi hashbrowns one night: We had a frittata one night with the leftover kohlrabi and fresh basil and last night we had grilled cod, collard greens, some string beans and new red potatoes with butter, parsley and chives. All the vegetables came from my garden as well as the parsley and chives: OK, I can't think of anything else. The Monkey Princess and Bruvver went to the beach with us one day and we had ham and cheese sandwiches and cookies, and the Princess is spending tomorrow night with me so who knows what we'll have! ISO Tried and True Baked Ziti

Here are two T&T recipes. Both have meat but you could leave it out. Found this one several years ago on Allrecipes. Don't recall who the original submitter was. Baked Ziti 1 pound dry ziti pasta 1 onion, chopped 1 pound lean ground beef 2 (26 ounce) jars spaghetti sauce 8 ounces provolone cheese, grated 1 cup sour cream 6 ounces mozzarella cheese, shredded 2 tablespoons grated Parmesan cheese Bring a large pot of lightly salted water to a boil. Add ziti pasta, and cook until al dente, about 8 minutes; drain. In a large skillet, brown onion and ground beef over medium heat. Add spaghetti sauce, and simmer 15 minutes. Preheat the oven to 350 degrees F (175 degrees C). Butter a 9x13 inch baking dish. Layer as follows: 1/2 of the ziti, Provolone cheese, sour cream, 1/2 sauce mixture, remaining ziti, mozzarella cheese and remaining sauce mixture. Top with grated Parmesan cheese. Bake for 30 minutes in the preheated oven, or until cheeses are melted. And another T&T. You could sub ziti for the spaghetti. Three-Cheese Baked Spaghetti Yield: 6 servings Pasta Ingredients: 8 ounces spaghetti 2 tablespoons butter 1/2 teaspoon salt 1 1/2 teaspoons dried parsley 1 cup cottage cheese 1/4 cup grated Parmesan cheese 6 ounces (1 1/2 cups) shredded mozzarella cheese* Sauce Ingredients: 8 ounces ground beef 1 clove garlic, minced 1/2 onion, chopped 1/4 teaspoon ground black pepper 3 cups spaghetti sauce 1/2 tablespoon sugar 1 teaspoon Italian seasoning 2 ounces (1/2 cup) shredded mozzarella cheese, optional Instructions: 1. Cook spaghetti according to package directions (al dente). Drain and return to pan (remove from heat though!). Add butter and stir until butter is melted. Add remaining pasta ingredients, stirring to combine. Spread pasta-cheese mixture in the bottom of a greased 8-inch square baking dish. 2. Brown ground beef with the garlic and onion. Drain grease and return to pan. Add pepper, spaghetti sauce, sugar, and Italian seasoning. Stir well and then pour over the pasta, spreading evenly. Sprinkle cheese on top if desired. 3. Bake uncovered at 350 degrees for 35 minutes or until top cheese is browned and spaghetti is bubbly. I fixed a big salad with all kinds of green stuff plus grapes, manderines, hard boiled eggs, sunflower seeds, toasted almonds. I whipped up a quickie wasabi mustard vinaigrette. Sometimes, a salad is the only thing that will do! But, I know that some of the meals mentioned tonight are going to be on our table soon. I love Mediterranean pasta....just think Greek instead of Italian. I always add canned artichokes to mine, along with the other usual ingredients. Wonderful with chicken or shrimp. You can use canned chopped tomatoes, too.

Jasdip mine is probably from the 60's I think. My sister bought it at a thrift store, but it didn't have a power cord with it. If you remember a couple of months ago I asked if anyone on here could tell me where to get one. The company was out of business. When I was in Michigan I always looked in the thrift stores to see if I could find one. One day I found one for a dollar and I thought even if it doesn't work I am only out of a dollar. When I came home I tried it and it works. We really like to use it.

It was cloudy and cool here all day today. this morning when Georgy and I went for a walk, it as very humid. I came home soaked. DH and I went to Ruby Tuesday's for lunch today. After eating a salad from the salad bar, I wasn't all that hungry so brought home 2/3 of my dinner which consisted of three shrimp, a small lobster tail, a piece of tilapia and a baked potato. I'm planning on a bowl of cereal for dinner.

It was much cooler here today than usual and it POURED rain all day.

We're having a salad with grilled buffalo chicken strips and blue cheese dressing.

Ellendi, that salad sounds fantastic!

Everyone's meals sound delicious, but all the veggies really sound great to me right now.

I ate out with friends today. We shared a tri tip sandwich and a quesadilla.

Left over pork loin, sauteed cabbage and brown rice.

Much warmer today than the past week. It actually got up to 80, even though is was 59 at sunrise. Warmer still tomorrow.

I helped serve food at a funeral today and brought home some of the cole slaw, which was a meal in itself. It consisted of cabbbage, carrots, finely chopped broccoli, mandarin oranges and grapes. That along with a bowl of soup was my dinner tonight..

AM 57 turned into a fabulous sunny 90. Should be better tomorrow with 94. Refreshing Happy Hour at the sand box after work, even stayed late. Simple Corn n' salad, strawberries n' cake, watermelon, and candy bar.

Grilled burgers on freshly baked pretzel rolls and french fries.
After our walk we had:
Dessert for him was leftover naner puddin. The homemade vanilla wafers turned to sawdust. He loves it. Blech.
I had a wedge of flourless chocolate torte served with a scoop of vanilla ice cream, salted caramel and whipped cream.

Did not feel like cooking dinner, so we did Chinese take out. I did however find time to make dessert which is a fresh peach cobbler.

We had friends over for grilled chicken with a peach/ginger glaze, grilled summer squash and onions, rice and mixed grains pilaf, a cold watermelon and canteloup salad with mint and basil, and some other goodies.

I made a lemon poundcake to serve with lemon frozen yogurt, and a chocolate mousse, shortbread cookies.

Way too muggy to eat outside, even with the fan going.
