What's for dinner Friday?

Nothing for me. I had a huge chili dog and chips around 1:30 and I'm not hungry at all.

What are you having for dinner tonight?

I probably won't be around tomorrow since our friends will be here, so if someone thinks about it, please post.

Tomorrow night we're having brown sugar meatloaf, tomato pie, broccoli and pound cake with strawberries and whipped cream.

Niki's downtown for the usual: fried snapper fingers, spinach and hominy.

Cook behind the cafeteria line says "mama is here and she wants her snapper fingers" :o)

Mighty surprise them some time and get something different. Nah!

I am curious what exactly are snapper fingers?

I have a thick ham steak I am going to glaze and bake, some sweet corn on the cob to go with it, and sliced cukes salad.

We had to go out on an errand and decided to have fish and chips at a take-out/drive-in, called Sonny's. While we were there the sky got black, and all of a sudden high winds and hail. We ate inside, looking out the window and it settled down and we came home. Were going to do our groceries but then changed our mind. If I need something, I'll send hubby out in the morning while I make my bread.

raven, they are fresh snapper filets cut into strips and deep fried. Very popular around here!

At Nikki's you get 4 large ones with their tartar sauce or cocktail sauce or both. Probably equal to one large filet if left whole.

And they are cooked up when you order, given a number in the cafeteria line and waitress brings them to you.

It's their most popular menu item.

I would love to have some of those. I love snapper. I have never seen those on a menu, if I ever do that will be my meal. I haven't had any good fish in a while. My husband got the Mediterranean Sea bass at Macaroni Grill last week end and I regret not getting it too.
Maybe I will have some this weekend.

I hadn't made my own spaghetti sauce in a coon's age (years), so I made it today. I just added a slice of bread and butter, and that was my meal. I have plenty of leftovers for fridge and freezer.

raven, another place that I go, is a Greek owned family restaurant.

Every Tues and Thursday they serve baked Greek snapper to die for. They give you two small filets with a butter/lemon sauce added when serving.

I'm a fish lover!

Those snapper fingers do sound tasty, Glenda. So does the spinach!
Harry'd eat fish every day if I cooked it. I haven't fried any for a long time, but may next week sometime.

Raven, I'm glad the floods didn't affect you--at least I don't think they did. You're dinner sounds good--and thank you for the great idea. I'm going to make cucumbers for dinner tomorrow. Skip the broccoli.

Shirley, did you have pasta with your sauce or just bread and butter? I haven't made my own for a long time either but the kind in a jar is so good, it seems a waste of time.

Jasdip, the same thing happened to us in Sam's today. We were about ready to leave and looked out to see it was pouring. So we just waited it out. It wasn't long. Never is in the summer. Got another rain when we got home, though.

Georgysmom, bacon is always a winner. We should be having them more often--summer doesn't last forever. Although some days it seems like it. :-)

Blfenton, that sure sounds good. Have you ever mashed your yams with coconut milk. It's delicious. Just add a little ginger and cinnamon (I put a dash of grated nutmeg in, too). Then you can stick them in the oven for a while--if you can wait that long!

Ntt_hou, I have to ask. What is a pizza sandwich?

I made deep fried yellow Lake Erie perch, french fries and crying cucumbers.

Crying cucumbers
Peel and slice cucumber(s)
Salt enough to make the cucumbers weep
Add a spoon full of Miricle Whip
Stir together and chill for at least an hour
this will let the flavors mingle and make the dressing thinner. You don't want it gloppy.
Sometimes I also add just a couple drops of lemon or lime juice to it to brighten the flavor a bit. Tonight, dad wanted onion added to it.

That was dinner.

Patti43, ... and you shall be answered. Here's the recipe for Pizza Sandwich.

1 Pizza of your choice.
Cut into equal slices, (you know where this is going to, right?)
Place one slide over another with topping sides facing each other.
Reheat in the oven at 350F degree for 10-15 minutes or until cheese melts and adhere both sides together.

Bread at the top and bottom with toppings as filling = Pizza Sandwich.

ROFL... Sorry, I couldn't help it. I know you meant well but it's Friday, I had too much giggling in me :] Truthfully, this is the only way I know how to make Pizza Sandwich.

LOL ntt_hou! I thought maybe you did something exotic with hoagie rolls and Italian sausage. I LOVE your recipe!!

Shirley, I use regular old pasta--usually the low-carb kind--forget the name. I think it has "dream" something in the brand name.
