We are having chicken enchiladas, maybe some chile verde enchiladas, rice and pinto beans along with a green salad.

Just got home from friend's home for 4th of July lunch.

Her daughter owns a bbq restaurant and brought us all the fixings: country style ribs, bbq sauce on the side, pork'n beans, boiled corn, potato salad. Deliclious!

Afterwards we played Mexican Train. There were three of us.

We went for a really early dinner at Bonefish. I had my
Ahi tuna Tokyo style and brought half of it home. It was delicious and I'm looking forward to the other half.

A gorgeous day today.....a high of 22C (about 70F) I could take this all summer, very happily.

We were going to pick more strawberries this morning but the patch is closed till tomorrow, letting more strawberries grow :)

Hubby had his app't with the optometrist and he does have cataracts in both eyes. 2 different kinds of cataracts and one is a very fast-moving one. I'll say! He can't read the computer at all and the dr. discouraged him from driving. He mentioned that he wouldn't anyway, because he can't see sh8t! LOL

Dinner was leftovers, chicken, rice and eggplant.
I have to make room for any strawberries we might be getting over the weekend!

Went into the pool and got out just as it started lightening.
Went to our fav restaurant, where Bunny's hat is "famous" and had prime rib. Planning on going back into the pool in a bit, then we'll watch the fireworks from our front door.

We had storms last night and it's cooled way down here -- it's rather windy too. We just had a snack of deviled eggs and for dinner I'm planning grilled turkey sausage w/ peppers & onions, pan-fried potatoes, and 3-bean salad that I made this morning. We went out for dinner last night and the food was AWFUL, so I want some basic comfort food on a chilly evening. And I'd better get to it! :)

I'm having a huge and wonderful Cobb salad, pre-made, from our health food store, Sprouts. And their apple pie is THE BEST !

Thanks Party! He isn't worried at all, he knows how quick it is....usually 4 minutes and it's done. He just wants it done soon, so hopefully we'll hear in a few days.

It was a lovely day here; cooler and less humid than usual for summer. Tonight we are having figs with goat cheese, steak, baked potatoes and a nice bottle of red wine.

We had some friends over and Tony grilled pork chops, I made pico de gallo as an appetizer and baked beans, Sam made deviled eggs, my friend brought a chicken pasta salad,and strawberry & blueberry shortcake for dessert...so we had a feast!!! Our friends just left to go meet up with her DD...If we get hungry the fridge is running over!!!

Easy-Peasy tonight. Burger dogs!

What are burger dogs? They're the result of me thawing out lovely venison burgers (mixed 25% with lean ground chuck beef) and then learning I have only hot dog buns!

I rolled the burgers out into long, plump, hot-dog shapes and Wes is now grilling them along with some green poblano peppers. The mix is so lean they hold their shape perfectly. I made four meat loaves (one to eat; three to freeze) from the same meat earlier in the week.

I have sliced tomatoes, onions, pickles, jalapeños, and radishes to dress up the deer-dogs, and hot black beans and potato salad as sides. A little heavy on the carbs, but it will be yummy!

Jasdip: I wish your DH all the best. Since I've started reading the dinner thread, I realize there are so many foods I haven't tried. Eggplant is one of them. Do you freeze your berries or make jam?

Jeaninwa: I am envious of you tonight. I've only had prime rib once and loved it.

Party: Sorry your meal last night was bad. With what you have planned for tonight, it should take the bad taste away.

Deeby: I wish I had a health food store close by so I could do carryout. Your meal sounds great, especially the pie.

Kittiemom: Haven't tried figs (except in Newtons lol) Would take a bite with the cheese. Steak, something I love.

Caroline: I'm glad you like your deerburgers. Just could never take to deer myself. The way you describe them, they sound appetizing. Are the black beans spicy and/or made like baked beans?

Shirley, I do both with the berries. We've just been eating them. I do want to make freezer jam. That is the only jam I make, and it tastes so good and fresh. A lot less sugar in the one I use, only 1.5 cups for 4 cups berries.

Our day started early, breakfast from McDonald's, brought out by Cheryl and Kevin. I had a biscuit and gravy. Kevin and Norm worked on the chicken house. Then Norm pulled weeds. I pulled some weeds, Cheryl planted more flowers and she picked black raspberries. I started cooking in the afternoon for food to take to Amber and Mike's this evening.

We had hamburgers, hot dogs, chicken, oven cooked potatoes, onions and red peppers with butter on top, baked beans, green beans, corn on the cob, Rice Krispy Treats, white birthday cake for Randy, small chocolate cup cakes, a chocolate pie and a lemon pie and some chips. After eating we all went out and watched Alyssa's chickens and guineas. We came home and they left to go watch the fireworks at the park. It has been a very nice comfortable day.

My son & his wife are here visiting for the weekend and I made a beer can chicken on the grill. It was my first time to make one myself; my husband always used to make it. It came out good. I made salad and parsley potatoes to go with it.
Jasdip, I am glad you husband's vision problem isn't something more serious than cataracts.

We had a multi neighbor picnic potluck at my home, so there was lots of good food. But the one thing I hogged out on was the layered salad that someone brought. You know....chopped lettuce, bacon, peas, etc., sealed with mayo. Why do I love that so much? I don't even have a recipe. Anyway, I had about a gallon of that (just kidding) and a couple of chicken legs. Oh, an ice cream sandwich made with ginger cookies and lemon frozen yogurt.

Robert and I are going to sit outside with some limoncello and watch the neighborhood fireworks

After 5:30 breakfast, cooked the ribs for later, and a Rum Cake. The lakefront was packed early, happy smiles and a cool 79. Skip the parade today, and repeat.

Shirley, I halve the figs, stuff the center with goat cheese, then drizzle with honey. I add just a touch of red pepper flakes on top. We eat them quite often while they're in season.
