What's for Dinner ... Monday? 06-30-14

A friend of my wife gave her a bag of swiss chard from her garden. My response, great, what's swiss chard? Then upon seeing it, it looked like the mutant offspring of kale and rhubarb.

I looked up a couple of recipes (many of which called for bacon which I didn't have) and made the following:

I'm not sure that I loved it but it was pretty good.

Swiss chard

1 bundle of swiss chard
4 oz smoked sausage (cut in half and sliced thin)
1/2 small onion (sliced thin)
4 white mushrooms (sliced thin)
1 tsp crushed garlic
2 tsp lemon juice
2 tsp white wine vinegar
1 1/2 Tbsp butter
1 tsp olive oil

Remove stems from chard, cut stems into 1/2 inch pieces.
Roughly chop leaves.
Place butter, sausage, onion, and swiss chard stems in large pan on medium high heat. Cook for about 6 minutes until sausage is browned, and onion and chard stems are softened. Add garlic and mushrooms, cook for another 4 minutes.

Add chard leaves, olive oil, and vinegar, and cook until the leaves are are softened and wilted.

Serve.
