What's for dinner on Monday?

Howdy, all y'all! (Ha! I never really say that, but love it!)

I'm marinating some pretty bone-in pork chops in some ginger dressing, and will grill it over coals with an apricot sauce.

Will make some slaw and put a few skewers of mushrooms on the grill for sides.

Meatloaf, mac and cheese, spinach. Comfort food. Dark and dreary here today.

Sounds like a great recipe, Bob. Chard is a staple of our summer diet and have been growing it for many years. It takes the place of the cool season greens that fade out in the southern heat and humidity. Robert grilled the best steak last night, a thick T-bone that we shared. I made a mushroom sauce to go over brown rice, and.........swiss chard! Just sauteed it with a little olive oil, chopped garlic, and a sprinkle of lemon juice and red pepper flakes.

I made gazpacho using tomatoes, bell peppers, jalapeno peppers and cucumbers from our garden. Followed by a dish of diced potatoes, yellow squash, and smoked sausage slowly cooked in frying pan. Dessert is a slice of blackberry made from blackberries picked in the yard.

We had the neighbors over last night for a BBQ and I have left over ribs, boiled baby red potatoes, and roasted corn on the cob. And the best watermelon I have had in a long time, grown on the farm and bought right from the field. I love those kinds of leftovers.

Glenda, that's a lot of food, but with all 12 bringing a dish it doesn't take long to fill up a buffet. I'm surprised there were no desserts! Raven, everything sounds delicious. We ended up having sliced avocados last night because the mangoes weren't quite ready. Way to go, Jasdip. You're making space in the frig for more of your good cooking! Shirley, I looked for green beans in the grocery today and they were awful looking. I wanted green beans and red potatoes so bad!! Yep, I think we all love our leftovers and most of the time I think they taste better on day 2 (or 3).

I have quite a few things cooked up and in the fridge, so I just picked some of those for my meal. I even put them on a paper plate, so I had very few dishes.

It was stormy here in my part of Ohio a while ago, but now it's back to looking very nice. Unfortunately, the humidity is climbing.

I am about to place an order online at Panera Bread and hubs will stop on the way home from work to pick it up. Tonight we're each having a Strawberry Poppyseed Salad with Chicken. Yum. Such a good Summer meal.

didn't want to pan fry our top sirloin (was supposed to be yesterdays dinner) so baked at 350 til it was just done enough for us...I know it's not the thing to do with steak, but it cut like butter...added some mashed taters, cut and baked a Vidalia onion with the meat and had dh's fave green beans...so dh? happy belated fathers day, lol...

Lots of comfort food tonight! Yum. I have to admit that I've never baked a steak, but why the heck not? Glad it turned out so good.

One of these days I'm going to start a meat loaf thread. I've never made a good one, lol.

I love lazagna, but it's a winter meal for me. I'll be more than ready for it when cooler weather gets here. I love it!

Shirley, I've had those kinds of suppers lots of times. A little of this and that. I'm a total lover of leftovers. Sometimes, I'll 'repurpose' them, but not often.

Raven, won't be long before the local corn starts showing up here. My tomatoes are showing lots of promise! Can't wait.

Those salads sound good, Lindsey, I wish there were some good options for take out on Robert's way home. Plenty of restaurants....just not real healthy.

Hot and humid here today and Cheryl and I worked out in our garden. Supper tonight for me was a leftover grilled pork chop, canned green beans from last year's garden, a baked sweet potato, and some radishes from our garden.

Potato chip crusted chicken, garlic parm mashed taters, gravy and roasted broccoli..

All the strawberries you can eat...and I only picked half the bed of them earlier..

We had Shrimp Alfredo with Linguini (sp) salad, & garlic bread. It was super fantastic because I didn't have to make it. Molly fixed dinner because her beloved was coming over.

We just got in from vacation at 1am this morning and neither of us has wanted to make the grocery store trip today. We used what was in the freezer - fish sticks and sweet potato fries. DH found some spinach and made creamed spinach too. Nothing fancy, but after more than a week of restaurant food, I was ready for something cooked at home.

Terri - did you see that recipe on The Chew? (Breaded with salt and vinegar potato chips) I have it saved "to try" with fish.
