Lunched wih friend at The Pita Hut and both our lunches were delicious.

She had an awesome looking Greek salad and I had Cilantro Lime Chicken Rollup which was fantastic with fresh hummus and their pita chips.

In fact enjoyed it so much, made reservations for 15 for upcoming monthly luncheon there, this coming Monday.

I am planning to make angel hair pasta with clam sauce.

I am hoping that we can grill steaks out and I have fresh from the farm cucumbers and tomatoes and Vidalia onions I will make a salad with and some grilled yellow squash.

Hot and extremely humid here the past few days.

Whole grain pita pocket lined with refried beans, shredded cheddar cheese, lettuces, radishes, leftover green beans and my favorite Paul Newman olive oil and vinegar dressing drizzled inside.

It's such a beautiful day here, sunny and 70's with a nice breeze. Just mowed a couple acres and did some gardening so tonight it quick and easy. Burgers on the grill with potatoes and onions in foil packs. Easy peasy.

Today was a glorious day, we got much-needed rain this morning, and the rest of the day was sunny and windy, with the rain blowing the humidity away.

We had our big meal at lunch as we're both working this evening.

I made chicken fajitas, and rice with some mixed veggies cooked in it.

Today was a great day as my portable induction burner arrived! I can't wait to boil a pot of water for pasta tomorrow! LOL

I had unstuffed cabbage with a slice of homemade bread from the freezer.

It doesn't know if it wants to rain here in Ohio or for the sun to shine today.

Dinner was delicious. My daughter brought us her pasta shells and home made unbaked peanut butter cookies.

Just decided on simple Tacos to go with the Tequilla.

We went out for our supper tonight and had grilled salmon, mashed potatoes with gravy, and fried okra. Nice hot bread and of course, coffee for me, ice tea for hubby.

We are having whiting fish rolled in panko crumbs, boiled red potatoes with lemon dill sauce and fresh roasted Asparagus. I can't wait...

Hot dogs and green salad. Haven't had hot dogs for a long time and they sounded good.

We finally had a warm sunny day here in Pa.

Baked Talipia with a butter/lemon sauce, baked yam fries and steamed fresh spinach. Vanilla ice cream cones for dessert.

My wife went to yoga class with a friend. They talked about me meeting up with them after the class and going out to dinner, but I suggested that I would make dinner instead.

I made yellow basmati rice, curried spinach with cheese (Saag Paneer), curried lentils (Dal), a veggie curry with potatoes, chick peas, edamame, peas and mushrooms, a mango chutney/cucumber yogurt, and faux naan (broiled buttered pita bread)

It was delicious, but it wasn't until we had sat down to eat that I made the Yoga -- Indian food connection.

My kind son-in-law brought turkey meatloaf which was very good, homemade mashed potatoes, steamed green beans, and salad using lettuce from his garden

had a mini surprise 40th bday party for ds1....subs outside when he finally got home...his mil made strawberries over angelfood cake...

We 'did' Costco this afternoon so had the roasted chicken and a salad.... and I tried an unbuttered slice of Dave's (Red Label) POWER Seed bread. quite yummy. (and WHY are the chickens so greasy?)

Costco chickens are brined (soaked in salty water or injected with same before cooking, i don't know which process they use) . That's why the end result is consistently "juicy".

The liquid at the bottom of the container is more water than fat but it does seem to mix together and get gelatinous when cooled.

The product's convenience and price are tempting but we stopped buying them when they had their episodes in our area of bacterial contamination and periodic undercooking in the stores. That's a bad combination for chicken.

ellendi, I'm not Monica, but I made tialapia last Saturday. A bit of panko bread crumbs with lemon zest mixed in, broiled, and then finished with some dill butter (seriously, I had some dill that was wilting so I chopped it up and mixed it with softened butter then put it in the freezer), melted and drizzled on top. It was surprisingly easy and good.

Basically same as rob said above, I pour a combo of melted butter and fresh lemon juice on the talipia, sprinkle with a little tumeric and parsley, and top with a sprinkle of Panko crumbs for some crunch.
