Share your favorite summer recipes!

For me, it's all about the BBQ or other grilling. Do you have a favorite for those summertime cookouts?

APPLE MAPLE BOURBON SAUCE

1 tablespoon veggie oil (I use canola)

1 medium onion, chopped

1 clove fresh garlic, minced ( not the jarred stuff)

2 apples, cored, peeled, and diced

1 tablespoon grated fresh ginger (not the jarred stuff)

1/2 cup maple syrup (the real stuff)

1/2 cup apple cider vinegar

1/2 cup cup bourbon

1 cup chili sauce

1 teaspoon salt

1/2 teaspoon black pepper

1/2 teaspoon cinnamon

1/4 teaspoon cayenne

Heat the oil in a saucepan, add the onions, garlic, and apple and cook until onions are golden and apples are soft. Add the remaining ingredients and simmer gently for thirty minutes.

Transfer to a blender (I've used a stick blender) to puree. Makes three cups, store in the fridge up two weeks. Use this sauce to baste chicken or pork on the grill, or to sauce up pulled pork or chicken, or even as a slaw dressing. Heck....it's good enough to eat with a spoon.
