What's for dinner, Monday?

We had never had pancetta, and I bought some on the weekend. Had some fresh tomatoes that needed to be used up, so I made a fresh pasta sauce using those, and garlic and red pepper flakes.

Pancetta is okay, but to me, it smelled quite porky while it was cooking, and I think ham with some fat would do the same thing. But what do I know, I'm not Italian! LOL

I have some smoked sausage links, look like brats, I am going to sautee with some Vidalia onions and serve them on buns. I have left over tomatoes and Vidalia onions salad from last night to go with it. And we have some watermelon for dessert.

Got tired of the current leftovers, so I had a Stouffer's Turkey and mashed potatoes entree. I'd made some vegetable soup so had a cup of that for my vegetable 'dish'.

We just finished watching the first episode of this season's Blacklist and thought I'd check back while setting up for Castle. Shirley, here's the recipe. Easy-peasy and delicious! Pam, you could have been here, as usual I made enough to feed at least 1 more person! Oven Ã¢ÂÂfriedÃ¢ÂÂ chicken Preparation time: 15 minutes Baking time: 20 to 25 minutes 1/3 cup dry unseasoned bread crumbs 2 teaspoons sesame seeds 1 1/2 tablespoons grated Parmesan cheese 1/4 cup fat-free mayonnaise (not salad dressing mayonnaise) 1/4 teaspoon salt 1/8 teaspoon garlic powder 2 dashes cayenne pepper 1/4 teaspoon poultry seasoning 4 (4 ounces each) boneless, skinless chicken breast halves Cooking spray Preheat oven to 425ÃÂ°F. Place bread crumbs, sesame seeds, and Parmesan cheese in a large zip-top bag and shake gently to combine. In a small bowl, whisk together mayonnaise, salt, garlic powder, cayenne pepper, and poultry seasoning. Using a pastry brush, coat both sides of each piece of chicken with the mayonnaise mixture. Place chicken, one piece at a time, into the bread crumb mixture in the zip-top bag, seal, and shake to coat chicken well. Transfer chicken to a foil-lined baking sheet coated with cooking spray. Spray chicken evenly with cooking spray. Bake for 20 to 25 minutes or until juices run clear and chicken is no longer pink in the center. Yield: 4 servings

Jim congratulations on your upcoming cruise! I love it that you had wine with bacon and eggs. Audrey, your dinner looks and sounds fabulous. We had baked potatoes last nite. Shirley, I've yet to make red beans and rice. What's throwing me off from making it, much as I'd like to, is that we only have kidney beans, as far as a red bean, and I know that isn't the kind to use. I made quinoa with toasted almonds and red currants the other day. We like quinoa. Kath, for some reason companies change their recipes. In the event of making things healthier, taste gets compromised. Less fat and salt is less flavour it seems. Prairie Rose, do you make the light fluffy dumplings? That's what my Nan made and that's all I've ever known. I've never attempted it; I should! Raven, that looks divine!! We love roasted vegetables! Erin, I hope you feel better. We had leftovers from Mother's Day. I was not too hungry so I just had a grilled chicken thigh and a piece of my black raspberry pie. Had leftovers for lunch too. The weather here today was fairly nice, great breeze a little sprinkle once in awhile and some sun was out too. Right now it is 71 outside. Sue in Central Indiana

I love sausage on a bun with onions Raven! Yum, now you made me hungry for them, even though we had sausages yesterday :D

Your meals always sound good and healthy, Shirley. Even when you have something convenient you always have a healthy side to go with it.

Cheeseburgers, oven potato wedges and potato salad. We're splurging on dessert tonight; something we seldom do. DH is having pecan praline ice cream; I'm having lemon sorbet. I thought when I bought the potato salad that DH was fixing sweet potato fries, not the regular potato wedges. It will be tasty I know; I just wasn't planning on two potato sides.

We've had a couple of days of eating out so it's time to eat lighter fare! It was our anniversary yesterday and we started the day with a great brunch at a nice restaurant, and ended with a bunch of friends for a cook out and some dancing on their back patio.

So tonight, we'll have a crunchy salad with some cold shrimp. Mixed greens and raw sugar snaps from the garden, carrots, cukes, zucchini, mushrooms, garbanzos, tomatoes....yum!

We had family visiting for the weekend. So for dinner yesterday, I made crockpot pulled-chicken barbequed, with mashed potatoes, and broccoli/cauliflower au gratin. They brought pie.

There was enough of all three dishes leftover for everyone to have lunch today, and enough chicken to grab a quick sandwich before they left for home.

Oh I forgot to tell you what we are having for dinner. We are having leftovers from a big lunch. We had hamburgers, hot dogs,potato salad, baked beans, deviled eggs & the most wonderful trifle I have ever eaten...

Rhizo, Happy Anniversary!

I made potato salad and 15# of ribs on the smoker. DIL brought beans and rice DS made his pretzel sticks, DD brought fruit salad and cool whip and soy milk to make chocolate pie with the pudding mixed DIL brought. I had the graham crust. I have leftovers! DH had to work this afternoon but worked hard before he went by getting the ribs ready and on the smoker and our big canopy put up so we had shade for the day.

Went to WalMart and Larry go me some nice fresh oysters...so I fried some up for my supper....Larry had pork chop since he wont eat seafood except shrimp. We had sides of slaw and potato salad

We ran to O'Charleys for a late night meal. My dd and I split a pasta dish with shrimp, so we had that and the dinner rolls that came with the meal. It was pretty good.
