What's for Dinner ... Friday?

I went to see my sister at the Home today. Goofed when I read activities. I didn't realize they were having a Mom's day luncheon instead of an afternoon tea party. Walked in just as they were finishing lunch. Looked good but I'd already eaten. I still managed to eat half of a chicken salad on croissant.

My meal tonight will be mostly leftovers: salmon patty and homemade mac/cheese from the freezer. A bowl of great northern beans from the refrigerator. Then I layered plain greek yogurt with canned peach pie filling.....in a wine glass. Looks awfully pretty.

So how did your day go and what was/will be your main meal menu?

I have been gone all day with Cheryl, off buying mulch and groceries for her. I did buy a cherry tree to plant. Quick supper for me, a double cheese burger, strawberry pie and root beer from McDonald's.

Dreary rainy day, so I went to Waffle House.
Had scrambled cheese eggs, sausage patty, grits, cinnamon raisin bread

I had an enjoyable husband-less evening last night. He went night fishing with a buddy; left around five and returned after eleven. I collected some garden veggies and made a quick stir fry with some thawed frozen shrimp, garlic, and ginger. Plus a nice glass of wine, long gab sessions with family and friends, Orange is the New Black binging, and I was a happy camper for a few hours, lol. He sent me text videos of the water, of fish they caught (and released), of bats swooshing around the boat lights, of the sunset, and even of their hilarious banter. So I had a great evening!

We shared some blue crab nachos for lunch which were very good. For dinner we are going to use the remaining grilled shrimp from last night add some homemade Pico made with Vidalia onions and fresh tomatoes and lime juice a little shredded lettuce and wrap it up in a flour tortilla. I have cantaloupe and fresh cherries for desert. The wind is gusting very strong here at the beach today, I was wondering if we were going to blow away! Other than that beautiful day here today. They served home made fresh cooked potato chips with our lunch, they were fried dark and seasoned with Fajita seasoning... Omg mmm... I could eat a sinful amount of those.

Just made some Caesar salad dressing and topped the salad with blackened salmon for DH. I was too tired to eat myself. Maybe in a little bit. Returned home from a golfing trip with the ladies….3 days of golf and late nights. Took one day off except for Mexican train last night and played golf today. Looking forward to a quiet weekend.

It's ridiculously hot here over 100. Hubby is going to throw a couple of nice bone in ribeyes on the grill, leave the heat outside. I will do some baby red potatoes in the microwave instead of the oven. Sliced tomatoes. I am not hungry at all, had a slice of pizza for late lunch. I had carotid artery scans done today and the vampires had to have some of my blood too. Whew too hot to be out doing anything! Another baby died in a car I saw on the news, at a Waffle house restaurant, I just don't get that one. A man came running out to the car when he saw the ambulance pull up. I guess he just needed some waffles. Crazy stuff.

It is pouring down rain here and very dark and dreary has been all day. A perfect day for a nice long nap which is what me and my little dog did this afternoon. Had to let the vampires take my blood this morning.

Tonight it is beef Stroganoff.

DS and his friend have been visiting so I've been cooking. Tonight we had Linguine with shrimp and clam sauce, antipasto salad and garlic bread. I'm tired because I also played 18 holes of golf.

Sue: Your supper may have been quick but it sounds great.

Glenda: Your "breakfast" must have been delicious.

Raven: I hate the vampires!! I can't eat sour cream so I've never had stroganoff. I'll bet it's good.

Georgysmom: I'll bet DS and friend love your cooking. I would like to have a big helping of tonight's fare.

Homemade pizza, with sausage, green peppers, onion, mushrooms, black olives and lots of cheese.

Not sure what the Mr will scrounge up for himself for dinner tonight. But I've got a nice big pot of tomato sauce on for some dinners next week and a big beautiful bone in ham in the refrigerator to bake up tomorrow or Sunday. I'm pretty set for the next week when I get those two dishes done.

Sidnee: I'll pick off the olives, but everything else makes my mouth water.

Angelaid: I can smell the sauce all the way over to my house. I like "cooking for the future".

Jasdip: Ahhhh, leftovers....a beautiful word. One of my sisters rarely eats leftovers. Of course, I don't understand that at all. lol

We lit the grill and grilled some burgers in between rain drops. I sauteed some mushroom and onions and added some sliced swiss.

Well, that didn't last long. Huge pot of spaghetti sauce is almost gone on the first night. I swear, that man could eat tomato sauce five days a week!
He was allergic to tomatoes as a child. He's sure made up for it as an adult! He eats about two a day, either just sliced or in salads or sandwiches.
