Broccoli casserole

I am having sauteed onions and green peppers, baked sweet potato and a ham slice.

We had lunch at Sirloin Stockade today so supper for me was just a bologna sandwich with Miracle Whip and lettuce on bread. Milk to drink.

We are having salmon burgers, french fries, and a salad for dinner.

Salmon, asparagus and some kind of pasta.

Grilled portobello mushroom burgers. I'll marinate them first in a balsamic vinaigrette (plus herbs), then pile on provolone, sliced vidalia onions, spinach. Might make some sweet potato wedges and grill those, too.

It's been so lovely these past few days....a little cool before the hot weather comes.

Scrambled eggs and toast. My meals are pathetic.

Curried lentil soup and rosemary flatbread...both from scratch! Dessert, if we decide we want it, strawberries/cream on angel food cake.

Sue: When you have a big lunch, a bologna sandwich is just the right supper. I like thick sliced Eckrich.

Orchid: Are your salmon burgers similar to what I call salmon cakes? I love them. I like your side dishes too.

Kris: Your meal sounds good as well as good for you. I had salmon last night.

Rhizo: Someday I have to have a taste of a portabello mushroom. You make them sound so good. And I really like vidalia onions.

Dedtired: Hush now. I like scrambled eggs and toast. I heard Pat Sajak say he sometimes has that for his supper.

Marigene: Haven't tasted curried, but I like lentil soup. And homemade bread as well........ And the dessert sounds both light and decadent.

Gadgets, I got this recipe from a friend I worked with years ago at sleep away camp. I visited her at her college and she cooked this casserole for dinner. It's really more of a crustless quiche.
Steam broccoli, mix with a raw onion, three eggs. Melt 6 tbs butter, whisk two tbs flour and 3/4 to one cup grated Jarlesburge cheese or gruyere .salt to taste. Mix cheese mixture and put in a casserole dish. Sprinkle with bread crumbs. Bake 330 for thirty minutes.
Most people would probably use this as a side dish!

No, they are not what we call salmon patties, we got these at Sam's Club and they say Salmon Burgers on the box...

ellendi, it sounds like a nice dish, but salt to taste? What are you tasting, it's uncooked?

I'd think that with all the cheese and butter (most don't use unsalted) there would be plenty of salt in it already, but there would be no way to tell until after it's cooked. A little pepper might be nice with all that egg too.

Actually I throw caution to the wind and taste it when it's all mixed together. Sometimes I just need a quick sprinkle of salt. I use pink Himalayan salt.
The original recipe called for four eggs. Also you would put cream or milk in a quiche, so although certainly not low calorie it is lower than alternatives .

I made a new shrimp creation and it was incredible. I wrote everything down I need to type it up then I will post it. I called it kickin shrimp fettuccine.
It has a wonderful kick to it. Definitely a keeper for regular rotation.

I had leftover "Jamaican Jambalaya" and I just finished writing up a more-or-less as made version of the recipe.

Jamaican Jambalaya

1 lb Small Raw Shrimp (peeled)
1/2 lb Smoked Sausage (sliced)
1/2 lb Fresh Pork Sausage (sliced)
1 Tbsp Lime Juice
2 Medium Sweet Onions (chopped)
1 Ripe (black) Plantain (quartered lengthwise, slice 1/4 thick)
1 Red Bell Pepper (chopped 3/4" pieces)
1 Large Sweet Potato (quartered lengthwise, slice 1/4 thick)
1 15oz can Diced Tomatoes (drained, reserve juice)
1 tsp Crushed Garlic
2 tsp Jamaican Curry Powder
1/2 tsp Cayenne Pepper
1/8 tsp Black Pepper
3 Tbsp Oil
1 Tbsp Dende Oil (red palm oil)
1 Tbsp Parsley
1 15oz can Coconut Milk
1 1/2 cups white rice

Separate the coconut cream from the coconut water. Use the coconut water in place of some of the water to cook the rice.
Peel shrimp and place in bowl and cover with lime juice and black pepper.

Add 1 Tbsp oil to large pan, cook sweet potato over medium heat until lightly browned and softened, remove from pan and set aside.

Next add another Tbsp oil and cook plantain until it is lightly browned, remove from pan and set aside.

Next add third Tbsp oil and cook smoked sausage, sausage, onion and bell pepper over medium heat until onion is softened and translucent. Add curry powder, cayenne pepper, and garlic cook for another minute or so.

Next add the sweet potato, plantain, dende oil, coconut cream, and parsley, stir well, reduce heat to simmer and cook about 10 minutes. Add shrimp (and the lime juice) stir until shrimp becomes opaque.

Add rice, mix well, serve.

Tonight was turkey and cheese sands 2 hot dogs for Kellan and french Fries..
Not much to move over from the fridge..

I actually put todays groceries in the "new house". :)

Subway veggie delight and it was tasteless. I'm done with Subway.

We had a 90th birthday party late this afternoon about an hour away so got there early and stopped at a cute little Cafe and had the best Fishwich. Very good!

The Salmon Burgers were really good. I will buy them again.

Shirley that is the only brand of bologna I buy and yes, mine was the thick sliced. Sometimes I get the same brand but garlic at the deli and thick sliced.
