I have two eye of rounds (Sol style) in the oven.

Au gratin taters I think..and broccoli roasted..

Yep sounds pretty good.

I had fresh chicken stock so I added lots of fresh vegetables and some chicken breast meat to make a chicken and vegetables soup. Great for this wet gloomy day, a bit chilly today too.

I roasted a small turkey yesterday and we wanted to have baked sweet potatoes. I've never baked sweet potatoes, I usually boil them along with white and mash them together. So I pricked the sweet potatoes, stuck them in the oven and later when I checked there was caramel pooled and stuck to my (thankfully) aluminum oven liner on the bottom of the stove. I cleaned it up then set the potatoes in a baking dish in the oven. When we were ready to eat there was caramel around the potatoes, but there was still lots of meat left in the potatoes and they were delicious. I can only assume that they don't need to be pricked before baking!

Raven, simple meal, I like it! Kittie, that is nice that he cooked. Well I made huge buns, they spread for some reason, so made huge patties..cooked them on the Foreman, after some onion slices and bacon..then loaded up with tomato and lettuce..so that was it..no sides...just mondo burgers. Oh product alert..Kraft slices, White Cheddar Habanero Cheese..really quite tasty not hot at all..just spicy..never noticed them before..and I buy a lot of sliced cheeses..so I'm not sure if it's new or Safeway just started carrying it. But I highly recommend..for a little flavor punch.

Oh, we just watched the rest of Season 1 of Last Tango in Halifax, so I haven't come back to comment on anyone's dinners. I've got tears in my eyes. We love that show. But wow is Jillian one screwed-up woman. Raven, I buy the large old-fashioned ham with a bone that's wrapped in netting. Boil it for about 4 hours and put potatoes and green beans in with it. Lots of ham leftover for future meals. Hubby is looking forward to ham and french toast or pancakes. Neither of us like ham soup, split pea and ham and other similar soups. I'm hoping to make a quiche as well, and hubby said he would try it.

I've lurked a long time and have just begun to post a bit. I admire the way you are dealing with your health challenges. I'm a breast cancer patient and can certainly empathize. I'm lucky that my husband is healthy, but not always helpful. Dinner for us is one gorgeous, homegrown beefsteak tomato on BLT's with tomato and roasted red pepper bisque.

I've thawed a couple of boneless chicken breasts (I'll save a little of one for a soup for my lunch ala Raven) and plenty of fresh veggies for a stir fry. Robert will be my sous chef.....there will be lots of chopping and dicing and my hands are so sore from yesterday's pruning. He's using my mandolin, so let us pray.

Let's see....green pepper, onion, garlic, fresh ginger, broccoli, carrots, Chinese cabbage, shiitake mushrooms, sugar snap peas. I'll season the brown rice with a little sesame oil.....so fragrant.

Superior Grill with two friends from chuch.

I had their beef quesadella.

One gal had a puffy taco. Gonna try that next time I go. Looked cute and really good.

Hubby's Birthday dinner request. Pasties. What I call "dry pies". Steak, potatoes and onions cut into uniform size chunks. Folded into a pie crust, and baked. No sauce, no gravy. He pours ketchup all over the top and is transported back to 10 years old. *shudders*
And, his mother's "Peek-A-Berry-Boo" cookies. Oatmeal cookies, make a thumb print in the center and fill with raspberry preserves. Another throwback from his childhood.
He's one happy, and full, hubby!

Boiled a bone-in ham with potatoes and green beans. We love it, true comfort food. And so easy! Just simmer on the stove for a few hours and dinner is ready.
