Do you have a favorite brand of chicken stock?

You cannot beat home-made chicken stock from the chicken bones, but it's hard to have enough on hand. I was wondering what brands you cooks here like the best.

I wonder if boxed tastes better than canned.

Oven roasted! :) Haw. Depends your climate and plans for use. Mine are for pets/eggs/eye candy, so I have all kinds. Breeds and types I wouldn't be without are: bantams in general (fun, clever and friendly, and banties are ALL about high drama so they are loads of entertainment), Belgian d'uccles (sweet and friendly little jewels), Cochins (cuddley and make great mamas), Americaunas (calm, sweet and friendly, beautiful and lay pastel eggs), Silkies (great moms, cuddley and sweet), Polish (funny and beautiful), Jersey Giants (sweet and calm) and New Hampshire (talkative and curious, friendly). I've always loved beets and I like borscht a lot. I do like cabbage in mine, and I use beef bones or beef stock as the base. I usually start with home canned beef broth so that negates the need to let the broth simmer then sit so the fat can be skimmed. Borscht Recipe You need: ◦8 cups beef broth ◦1 pound slice of meaty bone-in beef shank ◦1 large onion, peeled, quartered ◦4 large beets, peeled, chopped ◦4 carrots, peeled, chopped ◦1 large russet potato, peeled, cut into 1/2-inch cubes ◦2 cups thinly sliced cabbage ◦3 Tbsp red wine vinegar ◦1 cup sour cream ◦Salt and pepper to taste Preparation: Bring 4 cups of the beef broth, the beef shank, and onion to boil in large pot. Reduce heat, cover, and simmer until meat is tender, about 1 hour 30 minutes. Transfer meat to work surface; trim fat, sinew and bone and discard. Chop meat; cover and chill. Cool broth slightly. Chill in pot until cold, at least 4 hours and up to 1 day. Spoon fat from top of chilled broth and discard. Add remaining 4 cups broth, beets, carrots, and potato; bring to boil. Reduce heat, cover, and simmer until vegetables are tender, about 30 minutes. Stir in meat and cabbage; cook until cabbage is tender, about 15 minutes. Season to taste with salt and pepper. Stir in vinegar. Ladle soup into bowls. Top with sour cream. Serves 6. Annie

Becky Lompoc, CA * Exported from MasterCook * Company Chicken-Artichoke Bake Recipe By : Serving Size : 6 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1/4 cup butter 6 skinned and boned chicken breast halves 1 cup chopped onion 1 clove minced garlic 3 tablespoons flour 1/4 teaspoon salt 1 1/4 cups chablis 1 cup chicken broth 3 ounces cream cheese 14 ounces artichoke hearts -- drained 1 pound sliced mushroom Melt butter in a large skillet over medium heat. Add chicken, and cook 5 minutes on each side or until browned. Remove chicken from skillet, reserving pan drippings; place chicken in a 2-quart casserole. Set aside. Saute onion and garlic in reserved pan drippings until tender. Add flour and salt, stirring until smooth. Cook 1 minute, stirring constantly. Gradually add wine and broth; cook over medium heat, stirring constantly, until mixture is thickened and bubbly. Add cream cheese, stirring until cheese melts. Remove from heat; set aside. Along with heated seats and mirrors, my Audi has a heated steering wheel option that I love. Both the seats and steering wheel heat almost instantaneously. Although it's not as cold here in the PNW as some places, I love having a warm steering wheel most days/mornings of the year. I also wanted a back up camera, as I'm always delivering and picking up my grandson from school and those little ones can be hard to see walking behind the car. One feature I hate about this car, though, is they placed the bright headlight indicator on the lower left side of the instrument panel and, even though I'm not particularly short, I cannot see it without raising myself up to peer over the steering wheel. Not the wheel, but the center spoke/bar of the wheel; it hides the indicator. My good fried with a newer Volvo SUV says the same is true in her car...she can't see the indicator without lifting herself up to see over the wheel spoke. It also has the radio controls on the center console, so if you bump it or set your purse on the digital station settings, it whacks everything up and you lose all your presets. It's obvious that men engineer all these vehicles as the features are often not female user friendly.

Safeway's O Organics or Costco's Organic....I make my own, but do supplement with those boxed varieties.

I use Trader Joe's Low Sodium. Truly low sodium. The others are way too high. There is one brand at Safeway that's similar, really low, not just "reduced sodium", but I can't recall the name of it.

I've been buying Costco's chicken stock to have on hand when I haven't made my own. It's OK-ish, I don't find a lot of depth to the flavor but use it & make sure I have some here all the time.

Not quite a year ago, Cooks Illustrated (aka America's Test Kitchen) ran taste comparisons of the 10 brands that a market research company said were the best selling on the market.

The winner was plain old Swansons (made by the Campbell Soup company), the regular formula. Second place went to Better Than Bouillon, though they cautioned of the need to add more water than the label directs so it wouldn't be salty and to be careful if reducing it. Personally I've tried and didn't like the flavor of the ones branded as Costco Organic, Trader Joe's and Safeway O.

Just out of laziness as much as anything else (because most stores carry it), I've been using Swanson for a long while and find its taste acceptable. I usually mix half regular, half low sodium, and you do have to be careful to add no more salt to what you use it for. It rarely needs any more.

Swanson's Stock in the tall boxes.

I mostly use homemade, but it is nice to be able to open a box and add it to somethings.

After seeing Glenda's recommendation (I believe it was her) for "Better Then Bouillon" I tried it and love love love it.... It really is delicious. I will never buy canned broth again, you would never need to. What I really like is that you can mix it to taste, I like a little more then the directions call for.

If I don't have homemade to use, I keep some Kirkland (Costco) on hand. Always have the Better than Bouillon on hand too. Never know when you need to add a little something....

Better than Bouillon. You can mix it stronger or weaker as needed, and even dilute it with something other than water

The one that's on sale. Usually it's Swanson. Publix has it BOGO quite often.

I like the better than bouillon also. Sometimes just had a teaspoon, no water to a sauce or soup.

I remember recommending BTB quite a while ago. I always have it on hand and use it often. Even less than a tsp. when simmering veggies really adds to the flavor.

Besides the chicken base, I've used beef, fish, and veggie. I'll bet that the lobster base is great.

Just curious, for anyone who uses Penzey's spices, has anyone tried their soup bases?

I used to use Wolfgang Pucks broth but is no longer available...so I use swansons or college inn and progresso broth all come in a carton. i

I have tried the Penzey's and was not impressed at all. The beef version simply would not dissolve at all so I called them and they did replace it. They admitted that they had a number of calls about it.

For canned, I like College Inn and for the mix it yourself I buy Minor or the GFS brand, the one kept in the coolers. Those Knorr little tubs are nice too.
