Had a longer than usual morning, as I went to pool for water aerobics and it started raining, and came home.

Got out earlier for lunch, so ventured down by the farmer's market and had a so so veal cutlet and pinto beans.

No dinner yet, it's 2:30 here. DH was home early and is mowing the lawn, trying to beat the rain that is predicted to begin. Not sure what he will do about the former elderly neighbor whose lawn he takes care of too, if he'll have time (energy) to drive down and do hers or not. She really isn't very demanding, appreciates whatever time he can give her.

Leftover pork sirloin roast and gravy from last night, some of the potatoes. I may just do something simple with it, like hot pork sandwiches on toast, make a salad.

The little rough looking spots in the yard I'd been eyeing from the window - but had not been out to inspect yet - just what I thought. Raccoons digging last night.

Fried chicken cutlets, couscous with pine nuts, green beans with almonds.

Ellen, I was thinking of making chicken cutlets tomorrow or Thursday. Your meal sounds delicious.

We had leftover roast beef along with the carrots and onions from yesterday's chicken dinner. We also finished the corn casserole.

Jasdip, how do you make the corn casserole? Your roast beef sounds tasty. I haven't made a roast beef in years.
I love a good roast beef sandwich with a horseradish mayo or Russian dressing.

Glenda: I need to try veal one day. Is the food at the market usually better than what you had today?

A beautiful day here today. Unfortunately I couldn't take advantage of it because I had an appointment with the Cardiologistâ¦..missed playing golf. Sigh.

We went out to dinner tonight. Chinese. DH had a beef dish. I've been trying to stay away from anything with legs so I had a shrimp dish with snow peas, asparagus and red bell pepperâ¦.delish!

It's Near East. Couscous and toasted pine nuts. Takes all of five minutes.

I blackened some boneless pork chops, sauted a variety of vegetables, yellow and green squash, red and green bell pepper, purple onions, mushrooms, with balsamic vinegar and olive oil. Had a half avocado and fresh farm store tomatoes. It was wonderful.

Georgysmom: Sorry you missed golf. I think I would have liked your shrimp dish. I hope all was well with your dr appt.

Ravencajun: What a huge variety of vegetables! Topped off with the pork chops. That truly is wonderful.

Some of these sound pretty good. I haven't decided whether I'm going to have anything or not. Maybe some leftover mac n cheese.

I do have a cornbread casserole recipe that I often bring to potlucks that is quite good, and really easy.

Cornbread Casserole

1 stick butter
1 can creamed corn
1 can whole kernel corn (drained)
1 cup sour cream
2 eggs
1 box Jiffy corn muffin mix

melt butter in 9x13 baking dish.
add all other ingredients and mix
bake at 375 deg F for 45 to 55 minutes

bob_cville, a friend used to make something similar to your cornbread casserole, but she called it Onion Shortbread (I think).... it had essentially the same list of ingredients you have, but she also added sauteed onions and lots of shredded cheese, and then baked it fairly thin so it could be cut to serve as an appetizer. I loved that stuff!!!

Grilled Burgers and Dogs...tossed some fries in the fryer...leftover coleslaw.

If you want to take that recipe in a different direction, add a small can of diced green chiles. Or, a small can of chiles that you dice yourself.

This is the Corn Casserole that I make. I cut the recipe in half for the 2 of us and there are still leftovers, the full recipe makes a 9x13 size.

Corn Casserole (Jude, a member of KT, who hasn't posted in a while)

1/4 cup sugar
3 tbsp flour
2 tsp baking powder
2 tsp salt
6 eggs
2 cups cream or half and half
1/2 cup butter, melted (use butter, not margarine)
6 cups frozen corn, thawed (it must be thawed)

Combine dry ingredients. Beat eggs with a fork in a large bowl. Stir in cream and melted butter. Gradually add dry ingredients, stirring until smooth. Stir in corn.

Pour into lightly greased 9x13" baking dish and bake at 350 oven 45 minutes or so until deep golden brown and the mixture is set. Let stand 5 minutes before serving.

Georgysmom, shrimp have legs.....lots of them. (Smile, just teasing; I know what you mean.)

Some wonderful sounding meals last night. And I'm a big fan of leftovers, too.

We had breakfast for dinner, buckwheat buttermilk pancakes with pecans and fresh fruit with a yogurt, honey, and orange zest sauce.
