Have you a favorite?

My favorite is rye and whenever I have a sandwich, not often, I always ask for rye bread.

Though I do rate 7-grain whole wheat bread right up there with rye . Enjoy the nuttiness in that bread.

I'm talking about favorite sandwich bread, not the healthy aspect of eating bread.

So what's your sandwich bread of choice?

1. Add 1/8 t. ascorbic acid per loaf to the dough (anytime there is whole wheat flour or wheat germ in a bread recipe). 2. Make sure the dough is well-hydrated. 3. Are you using the correct size loaf pan for the amount of dough? How much flour is in your recipe and what size pan are you using? 4. Did you test the bread for doneness with an instant read thermometer? This is the only accurate way to determine doneness. Somewhere between 195-205 degrees F. 5. Make sure the loaf is completely cool before slicing. Slicing into a warm loaf of bread will destroy the crumb. 6. Should you let it rise longer? Not if that means it rises past "double". Bread doesn't rise to a clock, but rather according to the ambient temperature, moisture in the air and the dough, and strength of the yeast. It's "double" when it reaches double and you need to judge that by looking at the dough. It should rise faster at your high altitude than down here on the flat-lands, and it may actually be beneficial to reduce the amount of yeast. 7. Chilling (retarding) dough enhances flavor, but it also reduces ovenspring and loaf volume. It also opens the texture slightly, and that's not necessarily what is wanted for sandwich bread which is typically considered a close-grained crumb. An open texture is better used for toasting, which is great for holding butter and jelly. If you'd really like to make a true sandwich loaf, a Pullman (Pain de Mie) Pan will get that crustless square loaf. These pans have a lid which prevents the dough from rising over the edge of the pan for that characteristic square loaf. This also compacts the crumb so it can be sliced into thin slices and will hold spreads (butter, mayo, etc.) on the top and not get soggy. It is substantial enough it won't fall apart when held in your hand. A more open texture bread will tend to fall apart. A sandwich bread will also have a fairly high amount of milk and butter in the recipe, and both will help tenderize the crumb - even though it's a close-grained crumb. Some potato water, potato flour, or mashed potato flakes can also aid that perfect sandwich bread texture. -Grainlady

For what it's worth, I've had really good luck with the American Loaf recipes from Cook's Illustrated, French-Style Country Bread recipe from King Arthurs Flour, and Alton Brown's Basic Bread recipe. I've used all those recipes with either no salt altogether or reducing the salt content by at least 50%. The American Loaf recipes have a bit of sweetener, so the salt flavor is not missed. The Country Bread & Alton Brown's bread use a sponge or pre-ferment that adds a tang that compensates for the missing salt flavor.

This has become a favorite with us Honey (whole) wheat bread - single loaf/breadmaker 3 cups of all purpose flour (about 13 oz by weight, 4.25 oz/cup flour, 120 - 125 gm) or (2 cups all purpose flour and 1 cups whole wheat flour) 1 pkg. active dry yeast (I use ~1 T) 4 tsp vital wheat gluten (optional) 2 Tbs instant potato flakes (optional) ¾ tsp. salt ½ cup milk ¼ cup orange juice ¼ cup water ¼ cup honey 2 T butter 1 egg lightly beaten Combine dry ingredients in breadmaker. Microwave 1 minute: milk, orange juice, water, honey, and butter until warm. Add warmed liquid and lightly beaten egg to flour mixture. Run breadmaker on “dough only” cycle (about 90 minutes), remove and Shape and place dough, into greased 9x5” bread pans or shape as rolls, etc. Cover and let rise in warm place until the dough fills the corners of the pans and is double in bulk, 60 - 80 minutes. Bake in preheated 375 degree oven for 15 minutes, then at 350 degrees for 20-25 minutes, until bread is golden brown. If it starts to get too dark, tent with foil. Brush the bread with butter when it's still hot from the oven for a softer crust. Remove from pan and cool on wire rack. Lay bread on its side and cover with a dishtowel. I get my homemade bread to last and stay fresh for about 5 days. 1. I use 2 TBSP instant potato flakes in each loaf regardless of type. 2. I use vital wheat gluten powder 4 teaspoons in each loaf I make 3. I let all bread cool completely on a cooling rack 4. I put a clean white paper towel (or 2) into a large 2 gallon zip bag and keep bread in a cool place.

I need some help with a recipe.. I've lost a notebook of my bread machine for some really good white sandwich bread that is made as dough in the breadmaker, then tucked and proofed a second time before baking off. As well as a muffaletta bread and and a few pickling recipes.. And after a few years of buying bread due to folks that were living in the house and have moved out.. I can start making homemade breads again. Anywho. I need a good old regular white and a not-dense wheat sandwich bread recipe that I can make in my bread machine as dough and turn out into a baking loaf pan for final proofing and baking off.

My favorite sandwich bread depends on the sandwich. If it's a BLT, I like it on sour rye. Grilled ham and cheese on sourdough. Grilled cheese on rye. Egg salad on rye. Roast beef on 7-grain or 12-grain whole wheat. There's not one bread that I like for sandwiches more than the others. But breakfast toast has got to be sourdough!

If I'm at home, it's always the sprouted grain Ezekial bread. I hate squishy bread. Unless the sandwich is a BLT and then the bread must be Pepperidge Farm thin sliced white bread, lightly toasted.

I don't eat a lot of sandwiches out. I don't like most bread.

I am with you Glenda, I get rye bread if I get a sandwich out. My DH does not like it so buying it for home use is a waste. We are having sandwiches tonight,I bought fresh 'Sqaw' bread that is our fav;)

I am not a big bread eater but will eat whole grain bread if I am out for a sandwich.

Now I'm using Oatnut bread....before I was using Italian bread, my husband likes the seeded rye.

For corned beef or pastrami, it has to be rye. For BLT, tuna, turkey, roast beef, or ham, it has to be white bread. I know white bread is not as healthy, but considering that a loaf of white bread would last me at least 6 months, I don't worry about it.

I'm like Lindsey. It depends on the sandwich. Egg salad- pumpernickel - turkey must be on rye - BLT must be on plain white, same with grilled cheese, etc.

I seldom eat sandwiches but when I do I want it as a grilled panini on ciabatta.

Definitely depends on the contents of the sandwich! Now if we're talking a bread basket at a restaurant, I want that 1 pumpernickel that's in there, and I'll fight for it ;)

Maiers premium italian wheat or white. It is a thick soft slice of yummy-ness.

But....if I have ANY choice of bread...it will be a salt & garlic bagel club sandwich (rare treat for me)

Deviled ham must be on sourdough wheat bread
Egg salad, tuna salad, or a fried egg sandwich must be on soft, white, bread.
BLT's must be on a whole grain bread (not toasted, for me)
Patty melt must be on rye.

Mine also depends on the innards of the sandwich. I have not bought any kind of bread in many months now so I don't have any in the house. But my husband only wants Rye and he prefers Cobblestone Jewish Rye.
If I am having something that I want nice soft fresh white bread for I love Evangeline Maid bread from Louisiana. Wish I could get it here.
I love a fresh French loaf or po-boy bun.
I like California Sour dough also for sandwiches.
For a grainy bread I like wheat berry honey nut grainy bread.
I do not like a really hard dry bread.

I had a couple of bites of corn bread today that came with my lunch and it sure was good. I cut off a bite for me and gave the rest to my friend to add to her dinner doggie bag.

Bread is one of my weaknesses so I just can not have it around me at all. The bread basket stays empty these days!

I prefer any Italian sliced bread made in a store bakery. The texture is amazing and so is the flavor. My second favorite is dark Rye.

I can't remember the maker right now, but it's an Ancient Grains Bread. Arnold's has a variety, but this kind seems to be more a local DC brand, and is carried in Giant stores.
