Nikki's downtown is a southern style food cafeteria that I have been going to for years. The two servers know every time what I want, and I don't have to say a word. They just plate it up as I go down the line :o) Fried snapper fingers, hominy, spinach! Sooooooo good. Only place in town that serves hominy.

DH and I went to a financial planning meeting we were invited to by our banker. It was in a local restaurant. Appetizers: platter of chicken satay, boiled shrimp and tuna tartar with tomatoes on flatbread. Salad: I had the house salad, mixed greens, goat cheese, cranberries and a cooked pear.( DH had the caesar.) Entree: Filet Mignon Dessert was an assortment but i just took the vanilla ice cream. Patti, yes you thaw the hash browns. the recipe calls for putting them in a towel and squeezing all the excess moisture out, but I just put them on a cookie sheet and bake them in a low oven till dry but not browned, You then toss them with some melted butter and press them into a pie plate forming the crust. Bake the crust until golden brown and then fill. I think it was a Paula Dean recipe. If you would like it, let me know tomorrow and I shall post it. I made it for my golfing buddies when we went on an over night golf trip in July. I was in charge of a luncheon for one of our tournaments and the co-chairs of the tournament requested it for the luncheon. I had to tactfully approach our chef and ask him if he would make it and handed him the recipe. He was kind enough to do it. It's great for anyone who is gluten intolerant.

Same as yesterday -- Various snacks, cheeses, hors d'oeuvres, mini sandwiches, chocolate-dipped fruits, and brownies at a Christmas party. Yesterday was a retirement party for the head of the University Library where I work, today was a shindig put on by a large realty firm at which friends of ours work.
