Do you have a Really Good Chili Recipe?

I am hosting a lunch for MS at work next month. On our regular lunch day we usually all chip in and have a Bar B Q or send out for something.

Because I am collecting for MS I am going to provide lunch and everyone can make a donation to MS.

I am thinking a huge Crock Pot full of Chili with some great breads and a salad would be good and easy to take to work. I have to feed up to 10 people.

Do you have a Really Good Chili Recipe you'd like to share?

Or if you have any other good ideas for what I can take please let me know.

Have an excellent one for white chili if you want!

I always get rave reviews from this one:

2 cups pinto beans (soak overnight)
6 cups water
Cook beans in salted water one hour. Drain and transfer beans to crock pot.
1 onion
3 cloves garlic
dash of cinnamon
dash of cocoa
small can of whole kernel corn
1 1/4 tsp salt
tomato paste
2 tsp chili powder
1/4 tsp cumin
1 tsp oregano
3 tablespoons oil
1 large can whole tomatoes
Saute onion and garlic. Add tomatoes and paste. Mash tomatoes. Add spices to crock pot. Thin with bean stock as needed. Cook overnight or for several hours until beans are soft.

Here's the recipe I make for Borscht. The Dh hates beets so I don't get to make it very often. This recipe is adapted from Mennonite Foods & Folkways from South Russia, by Norma Jost Voth. Serves 8-12. Ingredients 1 1/2 lbs boneless beef chuck or stew beef, cut into bite size chunks (I actually find that what grocery store label stew beef is very chewy (rubbery). I like to use a little better cut of meat.) 1/2 cup flour 3 quarts (12 cups) beef broth 3 medium - large beets, cooked, peeled, and diced or shredded 1 tablespoon vinegar 1/2 cup tomato paste 1 tablespoon sugar 4 tablespoons butter 2 large carrots, peeled and shredded or diced 1 onion, chopped 3 medium potatoes, cooked and cubed 1/2 small cabbage, sliced thin or shredded 2 garlic cloves, minced 1 bay leaf 1 tablespoon chopped parsley Dill weed to taste Black Pepper to taste Sour cream Dredge the beef in the flour. Melt butter in a stock pot (Dutch oven) and add beef; brown all sides of beef. In the stock pot add beets, salt, vinegar, tomato paste and sugar; stir. Add carrots and onion and sautÃÂ© until onions are translucent. Add beef broth, and all remaining ingredients except sour cream and simmer for 20 minutes. The borscht should be pleasantly tart but not sour. If sour, add another tablespoon of sugar and / or carrots until desired flavor is reached. Stir and let rest for 15 minutes (heat off). Place in individual bowls and top each with a dollop of sour cream.

Mix in a bowl: 1 lb ground meatloaf mix (beef,pork & veal ground meat) 1/4 cup of grated Romano cheese 1 tbsp minced garlic or 1 tsp garlic salt Form into 1" meatballs Cut 1 lb sweet italian sausage into 3" long links In a 4qt saucepan: Over high heat Pour about 1/4" of olive oil (doesn't have to be EVOO(first press), regular Olive oil will do. Brown the meatballs and sausage in the pot until they are firm. Turn heat down to medium....and add: 1 large can tomato puree and stir with a spoon until the pot is glazed (all little pieces of browned meat that may have stuck to the bottom are mixed into the tomato sauce). Add and stir in: 3 cans of water (use the tomato puree can) 1 small can of tomato paste When the sauce is hot, toss in a pinch of baking soda, and stir in. This is my favorite recipe but it calls for filet mignon so I save this one for when we may have guests (we sponsor local college students who often come for dinner, or if dh is having a couple friends over for a football game, etc). A friend of mine gave me the recipe - she found it online and made it for a chili cookoff and everyone raved about it. It apparently originated at Gallagher's Steak House in NYC. Please note that this is obviously for a large group. I either halve the recipe when I make it or I freeze half of it. I also don't think I use nearly that much butter, nor do I add any at the end like it calls for. Gallagher's Guinness & Filet Mignon Chili Gallagher's Guinness Stout & Filet Mignon Chili CDKitchen http://www.cdkitchen.com Serves/Makes: 15 | Ready In: 30-60 minutes Ingredients: 1 cup salted butter 1 pound filet mignon, cut in 1/4-inch dice 5 pounds ground sirloin 2 cups onion, cut in 1/4-inch dice 1 chile pepper, seeds and veins removed, cut in 1/8-inch dice 1/2 cup Guinness stout 1/4 cup flour 2 cups crushed tomatoes 1/4 cup tomato paste 4 cups beef stock 1 cup black beans, cooked or canned (rinsed and drained) 1 cup kidney beans, cooked or canned (rinsed and drained) 1/2 cup chili powder 1 teaspoon ground cumin 1 tablespoon kosher salt 2 teaspoons ground white pepper 2 tablespoons dark brown sugar 2 cups shredded cheddar cheese ***Garnish*** sour cream diced red onions diced bell pepper shredded cheddar cheese diced tomatoes chopped fresh cilantro Directions: Heat a large saucepan or Dutch oven over medium high heat. I use the Carol Shelby chili package. It makes really really good chili. You could triple it and put in a crockpot to keep hot.

I quit making chili from scratch when I started making Bear Creek Darn Good Chili. It's the bomb.

My family loves my chili and I have to make a big pot so I can share it with everyone.

1 large onion
1 or 2 or 3 cloves of garlic LOL
bay leaf
2 large cans whole tomatoes
2 cans of red kidney beans - rinsed
1-2 pounds ground beef -lean or medium
1 red or green bell pepper diced
1 container of fresh mushrooms
chili powder
Frank's Hot Sauce

I start out by browning the meat and draining off the fat.

Saute onions, garlic, bell pepper until soft in pot you are going to cook the chili in.
Add browned/drained meat
Add the cans of tomatoes - break up tomatoes with a fork
Add the beans
Add bayleaf
Salt and pepper

Add the chili powder - I tend to use 1/2 the bottle because I like the taste but you can use less - whatever your taste

Simmer with lid off for about 30 minutes.

Add sliced mushrooms and some hot sauce if you find you need it spicier or hotter

Simmer for another 30 minutes with lid off until you get the required thickness. I like thick chili so tend to cook it longer.

Start out with less chili powder and taste it a few times as the chili simmers to see if you would like a more chili taste. I always add more. You can also dice up a jalapeno chili if you would like more heat or use red chili flakes.

My chili ends up being a dark red brick colour.

Ladle into bowl and top with shredded cheddar cheese and a dollop of sour cream and a crusty roll on the side.

I make a meatless chili too by using zuchini instead of meat. You can even add zuchini to the meat chili for more body.

No More "Chili" Nights

1 1/2 lbs lean ground beef
1 sm onion, chopped
2 cans (15 1/2 oz) red kidney beans, drained
1 can (29 oz) tomato sauce
1 can (14 1/2 oz) diced tomatoes (green pepper, celery, and onion blend), undrained
1 can (14 1/2 oz) diced tomatoes (sweet onion blend), undrained
1 can water (use 14 1/2 oz can to measure)
1 can (10 oz) diced tomatoes and green chilies, undrained
1/2 green bell pepper, cored, seeded and chopped, plus additional for garnish if you want
3 tablespoons chili powder
2 tablespoons sugar
2 teaspoons salt
1 teaspoon minced garlic or 2 cloves fresh garlic
1 teaspoon Worcestershire sauce
1 teaspoon black pepper
1 teaspoon cumin
Shredded cheese (optional)
Crackers (optional)

1. Brown ground beef and onion 6-8 minutes in large skillet over medium-high heat, stirring to break up meat. Drain and discard excess fat. Transfer meat mixture to Crock Pot.

2. Add remaining ingredients. Stir well to combine. Cover, cook on LOW 8-10 hours. Garnish with cheese and bell pepper, and serve with crackers, if desired.

Just some side notes that I do when making: I omit one of the cans of diced tomatoes (whichever I don't have) and add one can of Diced Tomatoes Zesty Chili Style. I don't have any cumin so I have never added that. Keep meaning to buy it. I don't garnish with cheese or green pepper either. This is a great/tasty recipe. Let me know if you try it and what you think.

BLACK BEAN CHILI

1 lb ground beef
1 chopped onion
1-2 cloves garlic

brown that all together

add
large can tomato sauce
1 cup water w/ 1 buillion cube disolved
2-3 tablespoons tomato paste
1 heaping Tbs. chili powder
1 heaping Tbs. cumin
1/4 tsp. pepper
1 can drained, rinsed black beans
1/8 tsp. ceyenne pepper (optional)

I put that in the crock pot to keep it warm and let all thicken up, cuz chili's even better after it sits awhile. I serve it w/toppings of chopped onion, shredded cheddar cheese and sour cream. It comes out thick, but not chunky, and we prefer the black beans cuz they're smaller.
