Ohhh, that lemon cake sounds delicious.

It's a beautiful day here in Ohio too. Highs mid to upper 50s, breezy but not overly so, sun shining. Now ask me on Wed what it's like..........temps will go from highs of 60 to highs in low 20s daytime and 9 for the low.

Just all of a sudden I wanted pork, sauerkraut and mashed potatoes so that's what I had tonight. It hit the spot.

Amber and I went to the chiropractor today, Alyssa went in with her Mommy. We had lunch today at Long John Silvers. I had fish and coleslaw and iced tea. No supper for me tonight.

I have lasagna in the oven which will go along with a green salad, as well as garlic bread. The lasagna is a frozen one from Safeway and it is the Safeway brand. I read somewhere that that is the best frozen lasagna so am trying it today. I make a mean lasagna, but it takes more energy than I have to expend nowadays.

We haven't had lasagna in years, so looking forward to it.

Sue, Long John Silvers closed here in Canada many years ago. I loved their fish and chips and hush-puppies!!! Do they still make hush puppies? Oh, now I want some! Can I make them from scratch I wonder.

Mediterranean pasta

I have left over chicken, sausage and shrimp gumbo from last night, it was so good then and gumbo is usually better the second day so it should be fantastic. So glad we have enough for another meal.

Cajun rice and shrimp, fried cabbage, and for dessert I had strawberries over Pixiestix's hot milk cake. Great weather here today....sunshine, no fierce winds, and MELTING snow!

Ellendi, what is Mediterranean pasta, please. Do you have a recipe you can post. Sounds like something we would love.

Yes Jasdip you can make them from scratch. I just looked for a recipe on cooks.com when I wanted to make them. Tonight we had hot turkey sandwiches and DH had dressing with his.

It's fast and easy.

2 cloves garlic, minced
1/ 3 c olive oil
2 med tomatoes. chopped
1/2 c sliced black olives
1/2 tsp oregano
1/4 tsp salt
1/4 tsp black pepper
4oz feta, cut in cubes (I use more)

Sauté garlic in oil until lightly browned. Add tomatoes, olives, salt and pepper.
Heat to boiling and then simmer uncovered about five minutes.
Mix with the pasta(I use angel hair) and feta cheese.

Oh, yes the meal came with hush puppies. I am not a big fan of them, but ate the two that came with my meal. I like Captain D's better and I can get their bread sticks instead of the hush puppies. I had coleslaw today and I liked it.

Walnutcreek a good lasagna is good to have, whether homemade or frozen. Very time consuming to be sure.
As a sidenote, a knock came on our door at dinner, and it was our friend and neighbour who likes giving us some of her soups and dinners. They are always much too salty for out taste.

Tonite's donation was a lasagna made with mozzarella, ricotta and cheddar, no cook noodles, spinach, and mushrooms. No comment. :)

Phyllis I love the sound of your dinner!! We never eat shrimp, I never think of buying it till I see a good recipe, then I want to buy it. I wonder if it's the price that deters me?

Bengardening, one of hubby's favourites with leftover chicken or turkey is hot sandwiches.

We had Mexican Soup. Just trying to clear out the freezer.

We are having stuffed bell peppers, roasted zucchini and salad for dinner...we haven't had stuffed peppers in a long long time.

Mish mash..
I made veggie fried rice and sliced up some of the chicken fried steak into fingers for hubby.
I also made a quick chicken orzo soup for the boys.

I was starving after work out, so ate a nuked hotdog while I was cooking, and some fried rice when it was done.

If it's the safeway select in the black packaging..it's me..that is a very good "frozen" lasagna. It's my 16 yr olds fav food...next to burgers.

I fixed a big salad with all kinds of green stuff plus grapes, manderines, hard boiled eggs, sunflower seeds, toasted almonds. I whipped up a quickie wasabi mustard vinaigrette. Sometimes, a salad is the only thing that will do!

But, I know that some of the meals mentioned tonight are going to be on our table soon.

I love Mediterranean pasta....just think Greek instead of Italian. I always add canned artichokes to mine, along with the other usual ingredients. Wonderful with chicken or shrimp. You can use canned chopped tomatoes, too.

GM, you mention Mexican soup fairly often. Have you ever posted your recipe?

Terri, we had vegetable fried rice last week. Love it. Chicken fingers sounds like a great side, to me!

Rhizo, you always serve just healthy meals. I was thinking that Mediterranean and Greek pasta could be similar.
I have some marinated artichokes in the frig that I'll be finishing this week.

Trader Joe's Butter Chicken with Basmati Rice (frozen). Man, was it spicy. It made me sweat. I am surprised my stomach is not aching form the spice. Won't be buying that one again. The whole house stinks, too.

Laid down "for a few minutes" when I got home from work and woke up at 9 p.m.! Had a couple bites of sauerkraut, cold out of the jar, and a bowl of steamed cauliflower with butter.

No I don't use ground beef in my stuffed peppers. I cook up a box or two of Rice a Roni Spanish Rice and stuff the peppers with that. I parboil my pepper until they are soft, so all I have to do is stuff them & put cheese on top & pop them in the oven until the cheese melts.

Dedtired I didn't realize that there were different "heats" with Butter Chicken. I've made it in my slow cooker, and it's nice, creamy and mild. MIne calls for yogurt which would temper the heat.

Angela, that's a first for me......you're the only person I know who would eat cold sauerkraut out of the jar!
