Played catchup with friend for lunch at Ashley Mac's.

We both had the spinach feta tart, blt spinach salad and her famous sour cream biscuit/muffin.

Spring is in the air! Short-lived according to the news.

We did groceries, and part of the food gathering was to go to our new favourite Mennonite farm. We loaded up on onions (10lb) 5 lb carrots and parsnips, a very large cabbage, 5 lb apples (I've been wanting to make another apple pie!), 4 beautiful tomatoes that "smell' like tomatoes.....they're grown in the ground, but covered with a huge greenhouse enclosure. Oh a dozen eggs, and gave me the last Spanish onion he had; I never buy Spanish onions.

There's lots of cooking going to be happening this weekend!

So we treated ourselves to some Chinese food to bring home. Haven't had that in a long time, and 2 dinners is enough for 2 meals each.

Today I went grocery shopping with Terri and Cheryl. We had lunch from Steak and Shake, so this evening I ate fairly light, a bowl of raisin bran and a banana. Sunny and very breezy here today too, in central Indiana.

Left overs. Homemade Tacitos smothered in cheese & red sauce, topped with lettuce and sour cream. Pecan, walnut & raisin bars for dessert....also left over.

Chicken schnitzel, red cabbage and creamed spinach.

Glenda: I'd like to try that lunch sometime. Remember Patti and I are going to spend a week there, going to lunch with you.

Jasdip: It would be great going to a Mennonite farm for some good vegetables at this time of year. Your house will smell so good this weekend from all that cooking.

Sue: I like raisin bran, and it would make a nice light supper. What was your big meal today?

Phyllis: Boy, would I like to join you for your evening meal!!

Nicole: Leave off the sour cream and I'll join you at your table. Dessert sounds terrific.

Ellen: Could I have just a small portion of each? I had to look up the chicken and it really looks good.

Phyllis, did you see on the Comfort food thread that Mom and Ioved Nan's chicken and dumplings. Like you, she made the light, fluffy kind!
Oh I envy you. I've never attempted chicken and dumplings.

I had a big pot of fresh chicken stock so decided to throw in some fresh vegetables and shredded chicken and a handful of egg noodles for some good homemade soup.

We had hamburger patties with pimento cheese and steamed veggies.

Weed's Pork Tenderloin (medallions) with Dijon Cream Sauce and roasted cauliflower. Was just "meh". I put too much parm on the cauliflower and it was overly-salty, and tried to rush the cream sauce. I just wanted to get it over with, get my comfies on and relax after this week! (Why do men think they have to eat every. single. day. anyway? LOL)

DH went to Bismarck so I am by myself. I had some walleye from work that was freezer burned. Yesterday I put the frozen fish in milk. Tonight I fried it with seasoned flour. It was soooooooooooo good. You could not even tell it was freezer burned. My boss was going to throw it out if I didn't want it. I told her not too. I thought I can throw it out if I can't save it, but it worked for me.

Ravencajun: Nothing compares to a big bowl of chicken soup. So comforting.

Kittiemom: I haven't had pimento cheese for ages. Sounds very good on a hamburger patty.

Angelaid: Thank you so much for my bedtime laugh. I'd like the recipe for your cream sauce.

Terri: Did you save me a couple of chicken tenders? I'd like a mustard dipping sauce if they have it. I don't have an Albertsons to go to.

This evening the hunt club had an end-of-the-season potluck, where anyone who had fallen off their horse during one of the hunts this season had to bring a bottle of wine to share. So given that as a theme I made a giant crockpot of Coq Au Vin, using 5 lbs of chicken thighs, carrots celery, onions, mushrooms, and an entire bottle of malbec.

I partially followed a recipe a friend gave me, and partially followed a recipe from food.com and I threw in some steps from a gumbo I made a few weeks back. It was delicious! Someone else had brought some french bread and they went together really well. I also had caesar salad, chicken satay, peanut noodles, vegetarian lasagna, and something called duck poppers (a piece of duck meat, and a slice of jalapeno, wrapped with a piece of bacon.) There was waaay too much food there, I don't think I tried even one third of the dishes, and only one of the desserts.

ALMOST made dumplings, but left it as chicken soup.
