They are very good and so easy. I made them last year and we really enjoyed them. Christy was off last week and by the time I would have made candy, my shoulders were all used up, so none this year. I did make some of mine with coconut. I just kneaded the coconut into them. Worked great. Even made a few for me with what you'd consider double coconut and still worked fine. Oh, and I did make one big one. When I was a kid we always got one big one that we'd slice. That was fun to recreate that memory. Some of last years batch.

I already posted, but really, the age or address of one's children makes no difference--at least not to me! Mine is 32 and has been out of the house for 6 years. It's just not Easter for me without Easter Eggs. As to colors--I used some of the paste (for the unusual colors like lavener and peach) and some of the regular food coloring for the pink, yellow and blue. You don't need expensive egg dying kits--they're just regular food coloring like you buy to tint frosting, etc, but they cost many, many times more. To keep fingers cleaner? Use your slotted spoon for dipping. Keep a glass of water handy to dip the spoon when changing colors. I put my cups of colors on an old jelly roll pan lined with several layers of paper towels. That saves drips of dye on my counter or table, and you can put the dyed eggs right on the paper towels to dry. If by any chance an egg or two crack during the cooking process? I dye them yellow--that way you don't notice an odd shade running through your egg salad. Guess these tips are a little late for this year, but maybe they'll help for next.

Your grandmother might not have sieved the yolks over the dish but instead just mixed them into the sauce: EGGS A LA GOLDENROD 6 hard-cooked eggs 2 cups thin white sauce 8 slices toast Salt & pepper Paprika Separate the yolks from teh whites of the eggs; chop the whites very fine & add to the white sauce with the salt pepper, paprika. Arrange 6 slices of toast on a platter & pour over the the white sauce mixture. Press the egg yolks through a sieve & scatter over the top. Cut the 2 extra slices of toast into small triangles or points, arrange on the platter & garnish w/parsley.~~ She also may have chopped the eggs finer for this: CREAMED EGGS 6 hard-cooked eggs 2 TBL flat 1/2 onion 6 slices hot buttered toast 2 TBL flour 2 cups milk 1 tsp salt 1/4 tsp pepper Remove the shells from the eggs & cut each egg into 6 pieces. Heat the fat in a frying pan & cook the chopped onoin with it for a few minutes until yellow, but not brown. Remove the onion, make a sauce of the fat, flour, milk & seasonings. When it thickens, add the eggs & when they are well heated turn the mixture out on to the buttered toast & serve at once.~~ Both of these are from a 1944 cookbook.

I've read it is not good for cheesecake but I don't make cheesecake anyway. I have seen recipes for cheesecake using it in Cooking Light magazine, but I dunno if the recipes are any good. Probably not good in danish and the like either. I use it mostly to spread on bagels and toast and english muffins, in which case it tastes just fine. I top it with a dab of homeade jam, yum. Great with lox, since that has a strong taste so I don't miss the extra taste for that application. Fine with those dream eggs, because they were flavored with the herbs anyway, and the neufatchel just added a wonderful creamy texture, even with 1/3 less fat. Since cream cheese is almost pure fat, 1/3 less doesn't make it a diet food by any means, but I like it just as well if not better than cream cheese for what I use it for, so that's what I buy for the calorie savings. But, my little grandson (a month away from 3 yrs. old) and I did get started on Nate's carrot cake cookies, but since we didn't finish making the dough until an hour before his bed time, and the dough has to chill at least an hour, it'll be tomorrow before we bake them and do the cream cheese part. It doesn't matter. Both DGS and I had a great time mixing up the batter. He got to taste the flour, the sugar, the butter, and all the other ingredients as they went into the mix.
