Blue Cornbread

| I was out of the yellow cornmeal I usually use and remembered I had a bag of blue cornmeal I had bought in Arkansas a couple of months ago. I made it using the blue cornmeal. It certainly didn't look good, but when I ate it, it was the best cornbread I have ever eaten. Now, I am sorry I only bought one bag. Have any of you ever eaten blue cornbread? I think I am speaking probably to southern gals. |

| I never liked (the look of) YELLOW cornmeal, so there's no way I'd use blue!! :/ |

| Blue corn is a bit higher in protein and has a lower glycemic index for those who care or need to care about such things. It is also sweeter tasting. |

| This reminds me of the time years ago that I made cookies calling for rasberry jam. I had only blackberry, so used that. They turned out a definite shade of grey! My 6-year old, at the time, said, "They taste pretty good if you shut your eyes when you eat them." |

| I prefer the blue tortilla chips but have never tried blue cornbread but I probably would like it too. I have not see the blue cornmeal, but I was not looking for it now I will. |
