Avocados

I bought a bag of avocados at Costco today. I decided to made salad dressing out of one of them. It wasn't until I cut it in half I realized how UNripe it was. The dressing still tastes fine, although it's gritty and I think next time I'll use less lemon juice.

I've tried eating straight avocado before. It's the texture of it that I have a problem with. I have seen on Pinterest how you can wrap it in bacon and bake it. Or you can hollow it out a bit and bake it in the oven with an egg in it. I have made guacamole and eaten it on a fajita (minus the wrap) and in scrambled eggs.

How do you eat them? I have four left, but won't even try to eat them until they're a little riper. I didn't check under the nubby thingie to see the colour which I know you should do.
