It wasn't a meringue-style cookie?

My grandma gave me a recipe she called $10,000 cookies. You mashed them flat with a glass dipped in sugar. They were white, not hard, not soft...

These were soft and baked like a mound of mashed potatoes. Not brown after baking. The top was not crisp. The whole cookie was soft. I've been through my recipe box a dozen times. The cookbook a few times. My mother's cook book twice. I bet it was one of those so simple I either didn't write it down or the recipe has gotten lost over the years.

My DH loves a sour cream soft cookie, but it is not snowy white, just almost white. I have often added almond extract to the recipe to make it richer. Let me know if this sounds close, and I will post it for you.

I remember a cookie that was actually made with mashed potatoes. The person who made them proclaimed that "you won't be able to tell!"

Bwahahaha! Once it got into my mouth, it just got bigger and bigger, lol. The texture and taste was pure potato with sugar and spices.

Lemon ricotta cookies maybe?

Known as Russian or Mexican tea or Italian wedding cakes.
Form the dough into balls on cookie sheet, and sprinkle with confectioner's sugar.

Lofthouse Cookies? I copied this from the cooking forum a long time ago but never made them. I'm sorry I do not know who or where the recipe came from.

The only problems I had was that the recipe said to roll the dough into balls. My dough was more like a stiff cupcake batter. I was able to drop it onto the cookie sheets, but it was a very soft and sticky dough. I will try it again, but will add more Jiffy mix to the dough and see if it holds its shape better without affecting the taste.

Found my other recipe. My mistake, it's made with Jiffy Mix not Bisquick.
2 cups Jiffy Mix
2/3 cups sugar
1/3 cup milk
5 Tbsp.soft shortening
1 egg
1 tsp. vanilla
1 tsp. almond extract
Roll into 1 1/2 inch balls and press slightly flat with a sugar covered glass.
Bake at 350 degress for 8-10 minutes.
Then just like the above cookies, I use icing made with powdered sugar, butter, a little milk and 1 tsp. of almond extract.

Jiffy mix is the Jiffy equivalent of Bisquik. Look for it where you find Bisquik.

I am happy to help. Usually I make these using lemon extract instead of the vanilla extract. The original recipe calls for vanilla only. I would add 1/4 to 1/2 teaspoon almond extract with the vanilla and see if this is what you remember.

Sour Cream Cookies

The Home Economics Teachers Favorite Recipes

1 1/2 c sugar
3/4 c shortening (I use Crisco)
2 eggs, slightly beaten
1 c sour cream
1/2 tsp baking soda
3 1/2 c flour
2 tsp baking powder
1/2 tsp salt
1/2 tsp vanilla (or 1 Tbsp lemon) extract

Cream the sugar and shortening together. Add eggs. Add soda to sour cream, then add to the egg mixture. Combine the flour, baking powder and salt together and sift. Add gradually to the egg mixture. Add vanilla extract. Drop from teaspoons onto greased cookie sheets. Bake at 375 degrees for 10 - 12 minutes until the bottom edge of the cookie barely starts to color. Makes 3 dozen. I often sprinkle the cookies with colored sugar sprinkles or plain sugar or cinnamon sugar.

Oh, thanks for letting me know. Glad I could help you. I have baked these cookies for my husband since we were newlyweds. I was a high school teacher and the home ec department sold these cookbooks (Favorite Recipes of Home Economics Teachers) as a fund raiser. With my sweet tooth, I definitely had to buy the one for desserts. I have been planning to bake these for my grandsons on their next visit. The 7 year old loves Rice Crispie Treats and Chocolate Chip Cookies, and he enjoyed Spritz too. Time to try something else. (The 4 year old doesn't care for most sweets, but he does love him some chocolate!)

I'm going to use lemon next time. I might have been able to use a drop more almond but you know what happens when you use a drop too much.

There are times when I would rather I had no memory at all instead of a 3 word memory. I don't even know what made me think of them. I haven't baked cookies from scratch for 30 years, I bet. The past 4 years I've been buying the frozen cookies in a bag. Bake a pan full. Eat them. If I bake two pans full, I eat two pans. Jeans are tight. Can't keep doing that. I thought I was going to bake when I retired. I did. After 2 months I had to quit doing it.

lov-mkitchen and sheilajoyce , I am so happy! For nearly 30 years I have been looking for that cookie recipe. Like sheilaoyce I bought that cook book "Favorite Recipes of Home Economics Teachers" when I was in high school in the late '50's. The much used book somehow got lost in a move. That cookie recipe was a family favorite.

In a recent post, Glenda mentioned something about cookbooks of the 50's while she was teaching Home Ec. I was about to contact her about the recipe, but didn't want to bother her now as I know she is busy getting ready for a cruise the end of the week.

There was another recipe for a soft sugar cookie that I lost in that move. I am thinking that it was in the same book, but may not have been. No sour cream, but It called for the eggs to be separated and the whites to be beaten to stiff peaks and folded into the batter. It was dropped and spread slightly with the back of a spoon onto the sheet and sprinkled with cinnamon sugar. It was a good substitute for the sour cream one.

Gazania, I will check for you. Our family's beloved chocolate birthday cake came from this cookbook too. Let me know of any others you are looking for.

Well, I have looked at the drop cookie recipes for any that separate the eggs, and I find none. Sorry.

But I am so happy that the sour cream cookie recipe was a long lost one that you were looking for as well. Strange how we can often have the answer to the questions asked by people we have never met and who are from other parts of the country. And in this case, from an obscure cookbook.

sheliajoyce, another recipe that I miss, and I believe it was in that same book, is one called Mile High Strawberry Pie. It was simple, just beaten egg whites, sweetened frozen strawberries some sugar and at that time, Dream Whip , I think that is about all. It was served frozen. I have found several versions of it on the Internet over the years.
