Tonight's meal was breakfast...... ham, eggs, and toast with a glass of milk.

Got all the way up to 21 today. Hooray.

We didn't have the polar cold weather today, but still well below freezing. Starting Friday and for the next several days it's supposed to be much, warmer, and get rain. Yuck! I'd rather have the frigid temps.

We had rice, stir-fried cabbage, carrots and onions, and a chicken breast. Ice cream for dessert.

So much warmer today. Yesterday it only got to 9 deg. & today it hit 30. The little snow is still on the ground.

Decided to make homemade chicken pot pie, hubby loves this one. I make individual ones so he will have 3 meals. I had a chicken breast & mashed potatoes. Made a new recipe for a chocolate cake, very good nice & moist, butter cream frosting just topped it off.

Angela, my daughter just called and they were having chili, too. Good meal for a cold night (and you have a plus by not having to make it).

Jasdip, dinner sounds good as usual. Not sure about ice cream in this weather though unless it was over hot apple crisp. I've been hungry--just couldn't do anything about it. So happy that little by little I can eat actual food!

Mary, you've been busy in the kitchen. I'm crazy for pot pie and your DH is one lucky man! Enjoy that cake. I make one from Southern Living called "Perfect Chocolate Cake" and it just about is.

Tonight we're having hot dogs, potato salad, and baked beans.

I made meatball subs, really good, really messy.

Leftover Cuban Black Bean and Ham soup. I made a big pot yesterday because we had ham from a friends party this past weekend, and I bought black beans on sale thinking we might be getting low, instead I found we have about 10 cans of beans. I googled and found this recipe Cuban Black Bean and Ham Recipe but then got started and found I didn't have everything it called for. and I made it as follows:

Cuban Black Bean and Ham Soup

1 T Canola oil
3/4 c chopped yellow onion
2 tsp garlic, minced
1 cup pickle banana peppers chopped
2 c chopped cooked ham
3 15oz cans low sodium black beans (do not rinse or drain)
3 c chicken stock
1 6oz can tomato paste
1/2 tsp hot sauce (or more to taste)
1 Tbsp cumin
2 Tbsp lime juice

sour cream or plain yogurt (optional)

The soup was pretty good yesterday, and I think it was a little bit better today. However I think it needs a little something to make it better.

Pork ribs, pot roast and mashed taters, baked with a layer of cheese to rewarm them.

Looks like a good black bean soup recipe. Whenever I use canned beans of any kind, I rinse them and discard the liquid in the can. It's gross and the fresh water seems to freshen the flavor of the beans. If the recipe needs more liquid, you can always use chicken broth.

I personally prefer to use dried beans when possible but that takes more advance planning.

I made a big pot of beef stew and we had corncakes with it.

Raven, ooh! Nothing better than a messy meal. I like chili dogs for the same reason.

Bob, when my DS and BIL were visiting we were talking about black beans. Made her so hungry for them she went home and made some. We make ours a little different--with bacon. Got it from a good friend who was originally from Cuba. I'll post it on the "I'll Share My Recipe" thread. Do you serve it over rice? If so, white or yellow?

Terri, well that meal surely must've cleared out the frig. Nice to just heat and have a choice--sort of like a restaurant :-)

Snidely, I like to use dried beans, too. It's just remembering to get them out to soak. It's a lot more economical to use the dried, that's for sure.

Mammie, I keep seeing pictures of beautiful beef stew on Pinterest. Now that's what I call comfort food!

Thanks, Hellion, it's a long process and most things still taste off. It's so weird that stuff like cottage cheese taste normal but hamburger has an entirely different taste than anything I've ever eaten. (I ate it anyway!)
