What's for Dinner Thursday, Jan 2nd?

No idea yet, only 3 pm here..

I just got back a short bit ago from a hair cut..ended up with a bit more than I planned knocked off..but I like it..left with a footlong pony tail..maybe have a 4" one now..lol..

Went into work today for about 40 min..to be ready for Monday Morning..
Washed dishes...made ham and cheese omelets for "brunch"..

So dinner....is in the future..just not sure what..

Sauerkraut and sausage, baked beans and mashed potatoes. Was sooo good!

Wonderful lunch with grandson, Parke Jr, today! My treat, of course!

Little Donkey restaurant. I love that place.
PJR had their smoked chicken quesadellia with black beans
I had their catfish fingers taco, and a tamale.with grilled corn on the cob

Everything is made in their restaurant, fresh!

Dessert: An order of Churro's with dark chocolate sauce for dipping.

I thought I would check in before leaving for the weekend. Yesterday was a day from hell. I am asking you again for prayers and support for my family. What I am going to tell you is almost impossible to believe. It concerns two of my nephews. One is ninth grade, the other away at college, finishing up his senior year. Last week my brother and his wife received a call from the ninth grader's school, saying that he had suffered an "episode" and recommended taking him to the doctor. To make a long story short, he had gotten extremely stressed out at school (he is always on the honors list) and just cracked. They described it as a manic episode. He is seeing several doctors and has gotten better, went back to school yesterday. When talking to my mother yesterday morning, she said she had started receiving some very bizarre emails from our other nephew, who is away at college. She didn't want to bother my brother, because of everything they had been going through with the younger son. I asked her to forward them to me, and gosh almighty, they were more than bizarre, really out of it, almost suicidal. So I told her I was going to track down my brother and/or his wife at their work and let them know. To make a long story short, this nephew has also suffered some sort of manic breakdown - they tested him and did not find drugs or alcohol in his system and will be committing him to a mental hospital for evaluation. My brother is with him, as my sister-in-law had to stay home with the other son. I was hesitant to post this on a forum, but I believe in prayer and that it can help heal, and my poor brother and his family need it in the worst way. They are just stunned and in shock. They are the last family you would think something like this would happen to. Very stable environment, very supportive of their children. Thank you for letting me share.

Glenda, I always get my "Reuben" without the sauerkraut, since I'm not that fond of it. Chili sounds worth the trip back tomorrow. Nita, that sounds like good news/bad news. Bad news, no soup tonight. Good news, no cooking tomorrow!! Enjoy! YogaLady, how funny! We call it "Hunting and Foraging" when it's grocery day. And like you, I don't want to cook so I usually get a sub from the Publix deli. Our Publix is so darned busy--wish they'd build a new one down the road a bit. Enjoy your nice weather. Shirley, we're having chicken and wild rice soup one day this week. I made a list of menus for 7 days (which will actually last for at least 11 days with leftovers). I'm crazy for wild rice! Hope your snow melts--but it doesn't look like that's going to happen for a few days. Hope you don't have to go out in it. Azzalea, that really is a fun dinner. Harry loves it (and we don't need to tell them it's easy peasy! ;-) Pam, you poor little thing. Steak again--sigh! LOL! Sounds yum to me. Those mushrooms sound to die for. Do you put them over the steak? Phyllis, please tell me your fresh fish wasn't walleye, 'cause if it was, I'm going to cry out of envy. What a wonderful meal. Don't know what else you could ask for! Raven, I'm waiting for the sockeye from the West Coast to be in the stores again. I think it will be a few months, though. I love any salmon though, including canned. Are you warm over there in TX? Just need to know about how long this cold front is going to stick around here. What your weather is today, ours will be in about 3 or 4. Georgysmom, it sounds like you had another fun day. It was thoughtful of you to marinade a steak for your DH. It sounds like he can pretty well manage to fend for himself, though.

Azzalea, only two more weeks--and I bet you'll be so happy to have everything finalized. I feel for you, because we bought a house in the country that had to be completely finished. It took us two years of just about every weekend working our fannies off. Your stir fry sounds good. I have some veggies in the freezer marked "stir fry" so that'll probably be on our table sometime soon. Georgysmom, that sounds really good for a crappy day :-) We could use a little of that rain if you want to pass it on. Sue, did you eat any of your radishes yet? I just love them, but only out of someone's garden. Those grocery store things just don't taste right to me. Do you ever plant white ones? We used to put butter on them and sprinkle with salt. Yum! Shirley, good news for your knees. Can you do just about everything you were able to before you needed the surgery--like bending, stooping, etc? Hope you enjoyed your pancakes--that's the best thing about reading what everyone is having--to give me ideas of what to fix for dinner :-) Half the time I wish I was eating at someone else's house!!

i decided that the posted menu would easily make 2 meals if you weren't having guests, so that's how i broke it out (sort of). i had intended to start with the mulled wine and was ticked to find out there wasn't more than 2 cups of red wine in the house (and that's part of what i mean by that's "sort of" how things got broken out for the menu...) emily--if that's the only appetizer dish you keep around, we both think the boursin-stuffed mushrooms are a really good one to have--thank you! i used boursin with pepper in a couple of very large button mushrooms. and dances' roasted sprouts were a nice surprise--ted tried one (he wasn't smiling as he cut into it...) and even ate a 2nd one. when he said he thought he'd like them roasted a little bit more, that was a real victory--thanx, dances! then had to choose between cabbage and bacon or potatoes and bacon and/or dessert and that was tough. but the idea of a dish of creamy potatoes won out and i'm so glad they did. nancy--they were WONDERFUL! very hard not to scoop out a couple of extra servings for myself... i had made cindy's lamb chops before and knew that i'd be very happy with them but thanx for suggesting that sauce on pork. ted had a couple of meaty pork chops and ate every bit of them! i knew there wouldn't be room on top of that meal for dessert but thanx to you guys, i have almost an entirely new menu to try out--thanx very much! and sorry gardenlad, but i wasn't sure where it was that you thought pics should be placed so i've tacked them on this thread. if you think they should have been placed elsewhere, just let me know. Today it was raining then turned to light snow. Very cold here, they say overnight it will be 12 deg.

Decided to make a pot of Southwest chili for hubby. I had a chicken salad sandwich. For dessert it was sour cream coffee cake. Good day for cooking.

Baked some chicken breasts yesterday, so I used that in a Knorr's Broccoli alfredo. Smells so good.

Frigid temps today. The high was -16F (3F), going down to -24C (-11F) overnight.

Today I boiled ham, potatoes and green beans. Mmmmm smelled good all afternoon and tasted even better! Something so simple can taste so good.

We've had little to no appetite for several days and have been sort of subsisting on packaged and canned stuff. But today I made a pot of lentil soup, packed with lots of other vegetables. It sure did taste good, lol!

I love soup, I could eat it all the time..chowders and stews too...husband and boys not so...
Gosh it would be so easy to live off them, and cheaper too..

Jas, simple things often are the best.

I couldn't take beans today, so no leftovers of yesterday for me..lol

Glenda, how nice..to have lunch with PJR..I love mexican flavors myself..

So it's over an hour later...and still no game plan for our dinner...

But I'm hungry..so better come up with something...before I get grumpy..lol

We had meatloaf, mashed potatoes, & turnip greens(leftover) and cornbread(leftover)

I made a big one, so DH can have sandwiches off of it for this weekend when I won't be home...

Rhizo, I'm saving my ham stock to make soup. I don't like split pea soup at all.
I've got red and green lentils, and I'm thinking of using red lentils because they cook softer, and some potatoes and carrots and onions for a potato soup. What do you think?

Okay..finally came to me..

Asian Turkey Meatballs, fried rice and steamed jasmine rice..

I think I'm steam some cauliflower too.

Laura, I think meatloaf will be Sundays dinner. Thanks for the "thought".

We picked up a take & bake Greek pizza from Whole Foods last night to try. DH was off today & fixed it for dinner since I had a long day. It's very tasty!
