I am making a sausage jambalaya, mostly for my husband, I am not eating much yet. I have yogurt.

Gadgets, we are having baked mac and cheese as well, except I have smokies and a kale salad to go with it. And for dessert, banana nut loaf and ice cream.

Baked chicken breasts marinated in honey mustard dressinng, green beans and sweet potato fries. Leftover homemade apple crisp with a scoop of vanilla ice cream.

DH is on a business trip. I fixed a salad, steamed asparagus and baked fish for me.

I too love my microwave for re-heating leftovers, and warming the cat food :-)

I heated some ham and scalloped potatoes. I roasted a pile of veggies to go with the ham originally, but we ate them all. The carrots were awful, though. They didn't roast up nice and tender at all. The brussels sprouts, parsnip and onions were beautiful.

OUT today as I stayed home, yesterday.

:Since Lloyd's is close to WalMart and I was headed there after lunch, I had their half a hamburger steak with grilled onions, butter peas and a tossed salad.

They have certain items you can order half a serving of meat, as their meat portions are large and hamburger steak is one of them :o) They are famous for their hamburger steaks with gravy and onions.

I had a crummy meal out, but the company was good. It was a roast beef club wrap. They forgot the Mayo! It was Five dollar night.

I was too tired for supper so I just had a glass of tomato juice. The rest had beef with carrots and potatoes I had cooked in the crock pot. I am still pureeing all of Norm's foods. Therapy started again today. Tomorrow is a doctor's appointment for him.

I was watching Rachel Ray the other day and she cooked up some cauliflower florets, set aside and then made a sauce with saute'd onions and garlic, white wine, half and half, fresh sage, gorgonzola and parmesan cheese, tossed some Pappardelle pasta in with the cauliflower and sauce. Looked wonderful so that's what I made tonight. Don't usually watch Rachel Ray, don't usually try her recipes. This was okay. Wouldn't make again.

Marilyn, I'm sorry you're that tired. I was finding myself skipping meals through Fall and into the holidays while going back and forth helping Mom. I'm paying attention to calories and nutrition again now, I hope you can do the same soon. It's still flu season, we need some reserves just in case...

We're having the pork roast I didn't cook yesterday. Mashed potatoes and gravy, fresh green beans from Trader Joe's.

I was planning the roast last night and was overruled for dinner again, a friend came with razor clams, he and DH breaded them and cooked them too. I try to be flexible in this kitchen and some weeks I'm better at it than others, but wasn't quite feeling like a fried dinner last night :)

Raven: I'll be glad when you say you're all better. I've never had jambalaya before. I'll bet yours is good.

Rose: Your mac/cheese meal and all the things that went with it sounds like a meal I'd like.

Monica: Your marinated chicken smells good all the way over here in Ohio. Offers of dessert would not be turned down here.

Kittiemom: Do you like not having to consider what foods someone else would want? You can eat what you want, when you want it.

Jasdip: I almost put my soup for lunch in a mug to heat in the microwave instead of in a pan. Creatures of habit. I could eat your meal at least twice a month.

Glenda: Lloyd's hamburger steak sound like a good choice. Good ones are hard to find.

Pam: Too bad your meal was bad. The good company, were their meals bad too?

Sue: So glad to have you post. A glass of tomato juice would be good for you. Take care of yourself as well as Norm.

Thanks for the well wishes. I have had a severe respiratory tract infection for over 2 weeks, been on some super powerful antibiotics to try to kick it. That led to a serious imbalance in my gut bacteria. Which can lead to C diff infection, we thought I was just on the verge but I think we have started to get it back in balance. Definitely not out of the woods yet but I think I can see path.
We think it happened when I was in the surgery center for my colonoscopy. That all went well but a few days later I was slammed.

It is extra difficult to treat these kinds of infections with a very compromised immune system.

By the way I never heard the term razor clams are they somehow a different kind of clam??? Inquiring minds want to know lol

Razor clams are one of many Pac NW species. They're big compared to what people picture of scallop-size animals, though the geoduck is MUCH bigger.

Raven, have you tried drinking a few ounces of a fruit kefir? Trader Joe's has a wonderful pomegranate, most stores will carry raspberry, blueberry. I find the plain a little too 'sour creamish'. I have to watch the 'good bacteria' when having dental work like now (two more appointments looming), am required to take the big dose of antibiotic before having teeth cleaned or any work done after joint replacement....and it doesn't agree with me. I have better results with Kefir (about 6-8 ounces daily) than yogurt for some reason in keeping up a population of digestive bacteria ;)

Razor are our local plentiful clam. We have to go farther to Hoods Canal for the little steamers or manila clams, we can be at the beach in 20 minutes to dig razor clams and go often. Breaded and fried, or ground for fritters. Chopped for chowder or clam sauce for spaghetti (which is not my favorite, I'm not crazy about a red seafood sauced pasta but DH grew up with it and likes it). My SIL has a weekend house on the beach so we can clean them there, not bring shells (and the inedible parts of the clam ;)) home with us. The mess stays at the beach, makes me happy.

Those clams are huge, I have heard of the geoduck, never seen anything like that before. Around here we get the small ones, but I love them.

Yes I love kefir, I am out of it so need to get more and more yogurt too.
It's definitely helping.

Shirley, yes, meals are definitely easier when DH is traveling. I miss him, but I can eat when I get hungry, not because DH is starving.

I'm with you on the microwave. I didn't realize how much we use ours for reheating leftovers and making a cup of water for tea until it died a couple of years ago. It was the middle of the week and we couldn't make it to the store before Sat. Wow, did I miss it those few days!
