Got off work at 4:00 (my 8 hour day!) and picked up Jimmy Johns. I got a ham & cheese sandwich with alfalfa sprouts.

You just wouldn't believe the sunset tonight; the most brilliant orange imaginable splashed with bright purple, red, and yellow.

We're going to have the rest of the chicken from last night, mixed grains and rice, roasted Brussels sprouts.

I went to see a friend in physical rehab and she asked me to bring her a turkey sub from Jersey Mike's so picked one up for myself. Mine was an Italian sub and was pretty good. Satine

Ate in our dining room tonight.

Regular meal was chicken and dumplings. Although I like the dumplings, I don't care for the chicken. So- I opted for one of the alternatives-a little steak, baked potato, cucumber-tomato salad, corn on the cob and lemon crunch pie.

Kathsgrdn: I'm glad you don't have to cook after working hard all day. I like hot ham/cheese.

Rhizo: I'd have loved to see that sunset. Your meal sounds good, esp the grains/rice.

Satine: Once in a while I get in the mood for a sub. I like the roast beef. Good for you for taking food to your friend.

Seniorgal: Gosh, I'd like to be a guest at your dining room sometime. Sounds very good.

I am trying to incorporate more vegetable in our meals. Tonight was chicken kabobs with mushrooms, onions, pineapple, and red and yellow peppers. Side dish was roasted fresh green beans and fresh tomatoes tossed in a little bit of olive oil with some garlic and a about a tablespoon of parmesan cheese. Very good and I'm stuffed.
I am waiting for husband to come up and ask me what else he can eat. He just doesn't seem to get full if there aren't bread, potatoes, rice, or pasta on the plate.

I had a little won ton soup. Been pretty sick so not much of an appetite.

Suggest he try drinking 16 oz or more of water 15 minutes before the meal. He'll be full without the starches.

Angelaid, within a couple of days, if he avoids all empty, white starches, he'll lose his appetite for them. But don't forget the healthy, complex starches that are very nutrient dense.

Brown rice, quinoa, sweet potatoes, kidney beans, pinto beans (and their relatives), garbanzos, and nuts are a few examples of highly nutritious, fiber rich foods that stick to your ribs. In small quantities, they are a very healthful and satisfying addition to an enjoyable meal. Oh, and delicious, too, which is important.

No one can stay on a dietary program if they feel deprived or hungry day after day.

Mixed grains and rice are a common addition to our meals. I purchase them all ready to toss in a pot with chopped onions, celery, carrots, and broth of some kind. This is not a seasoned mix, which are often excessively salty; I add all the seasonings and spices.

I had some leftover from our meal last night; for my lunch today, I'll add an egg and cook up a little crispy patty to serve with a crunchy salad of spring greens, cukes, tomatoes, garbanzos, sweet red pepper, and cold quinoa.

Attached is an example of just one brand of the grains that are available. There are plenty of healthy options....just be sure to buy those without all of the chemical flavorings and sodium.

ANYway, drinking all of that water is great....we all should do that. But water will do exactly zero to sustain a satiated feeling after dinner.
