Really beautiful sunny day here today. Went to lunch with friends and had the Cajun chicken Alfredo pasta, plenty left for my dinner. Thursday is my prep day for my colonoscopy so I am trying to eat somewhat low residue a few nights before hand.

Joel's menu was just what I wanted: meat loaf, squash croquette, spinach casserole and a slice of their great cornbread

Getting cooooold here, supper was beef stew with green beans and a slice of a cream cheese carrot cake roll.

DH is making lasagna, and has the bread maker going!

Cold but very sunny today. Tomorrow is going to be frigid with temperatures feeling like -31C with the wind chill.

We love one pot pasta. It's on our regular rotation and everything is cooked in one pot.....tomatoes, onions, green beans, vegetable broth and the pasta put in raw. Easy-peasy

Raven: I like regular chicken alfredo, would love to try cajun style. I hope everything works out well with your test this time.

Glenda: Again, you had a very interesting meal. Is Joel's only a local place?

Monica: Your meal sounds comforting. Surely would like a piece of that cake roll ... one of my favorites.

Chili with 3 types of beans, zucchini and roasted corn, served with roasted brussels sprouts and salad. Can't wait!

Husband had spaghetti squash stuffed with a meat and tomato filling. He cooked up the last 2 because he got tired of me moaning every time I walked into the kitchen and saw them on the counter, taunting me. I hate spaghetti squash!

Chicken soup with lots of veggies....tasted sooo good.
