What's for Dinner ... Friday?

We had a mixed bag of weather today. I ran some errands during the time the sun was shining.

My evening meal will be a stuffed pepper along with a slice of bread and glass of milk.

So what are you having tonight?

Hi Shirley!
I made a tuna casserole, using whole wheat pasta. I made a roux of flour and butter and several dashes of hot sauce for some kick.

Since I had a bigger late lunch, fried chicken, gravy on bread and a big mixed salad, I was not hungry this evening. So just finished up a big mug of hot black tea. That will tide me over till breakfast. It is going to be 8 above by morning and more snow to fall.

Busy day today (really, about the last 10 or so days) and we're doing our easy fall back dinner. DH is outside roasting potatoes and will do a quick steak on the grill, I'm going to just steam some asparagus and rinse some blueberries for some antioxidants... I think I'll do a nicer dinner at some point this weekend, I somehow have a sale ham in each of two refrigerators, use by dates on both first week in June. One I'll freeze, the other I'll cook. We'll probably be having ham with au gratin potatoes, ham and bean soup, ham and eggs - all next week ;)

Hi Shirley, we are at a bar getting set up to play. Before we left I marinated a couple of chicken breast in olive oil lemon juice, dijon and garlic and herbs and put them on the little gril. We had quinoa salad and fresh rolls. We're in for hot humid temperatures this week end.

Its confusing because it goes against what has been the accepted common knowledge since perhaps the early 1800's. The farmers growing them and calling them yams, are wrong. The grocers selling them and calling them yams, are wrong. The companies canning them and labeling them as yams, are wrong. The people who first introduced them to the United States called them yams, perhaps to distinguish them from the different variety of sweet potatoes that were already on the market, they were wrong too. Even some sites on the web that try to explain the difference with helpful images like this one: http://www.frugallivingnw.com/wp-content/uploads/2013/11/yams-sweet-potatoes-is-there-a-difference-2.jpg are wrong. (hint they are all sweet potatoes, despite their labels) So it is not at all surprising that what I learned at a young age from my mother and grandmother, and which was continually re-enforced every Thanksgiving or every time I visited a grocery store, is wrong. I have never eaten a true yam in my life, and seeing some of the pictures of what a true yam look like, I probably never will. Does it harm me in any way if other people choose to call some varieties of sweet potatoes "yams", no. It merely bothers the pedantic part of me a little when someone asserts something to be a fact, when they are in fact wrong.

Just made some Caesar salad dressing and topped the salad with blackened salmon for DH. I was too tired to eat myself. Maybe in a little bit. Returned home from a golfing trip with the ladies….3 days of golf and late nights. Took one day off except for Mexican train last night and played golf today. Looking forward to a quiet weekend.

Half order of fried chicken, two pieces, leg and thigh, tossed salad and butter peas. Excellent!
Just got my pre-cruise haircut, gotta change the bedsheets, and stay warm.

Creamed pork chops, baked potato and corn or green beans. DH will decide tonight.
I'm really in the mood for a Reuben , gotta get some pumpernickel or rye bread.

Hey.... I'm heading for the kitchen right now to make a batch of stuffed peppers. I hope they turn out good.... trying a new idea, fingers crossed.

Jasdip: Never thought of 'spicing up' a tuna casserole, but I almost always use whole wheat noodles. Don't know why I don't make that casserole more often.

Sue: Your lunch sounds terrific. But your weather doesn't. Maybe the tea will help warm you up.

Glenda: Chicken is popular today. You and Sue must have called each other. I try to get 2 legs when I eat a meal like that.

Cheryl: Can you explain creamed porkchops? Sounds interesting and I'm always looking for new ideas. I like Reubens too.

Nanny: Come back and tell me what your new idea was and how they turned out.

Pizza..thank you Papa Murphy's...lol...long week..

But I just put in two big boneless skinless chicken breast..to "roast" for salad topping and/or chicken salad.

Satine: Popcorn wouldn't be enough to fill me up. I'd be hunting around in the refrigerator and cupboards for some more food. lol

No, not a meal..just since the oven was on...

Well they are two pretty good size breasts..so indeed I could do both..and think I shall.
I have this yummy Asian Cobb salad pinned or another Chinese Chicken Salad..I love Asian flavors of sesame, tamari, ginger..so I lean heavily towards anything with those flavors.

Oh pizzas...
Pepperoni for the boys...the other was for my hubby..Meat Lovers Pan...Papa Murphy's new pan pizza is quite tasty..

Nothing here tonight. Think hubby microwaved some frozen burritos.
Tuna Casserole is one of his favorites. I use canned tuna in oil. Drain the oil in the skillet with a little butter to make the roux. I think the tuna oil gives the sauce a liitle more depth. Also add crushed red pepper flakes. Will try Tapitio hot sauce next time. He could eat that stuff with a spoon!
