Alexa, at the risk of being accused of anti Occam's Razor law, let's take a little time to chew the fat. First, the pictures might be a little misleading. I take food pictures using only the auto setting on my camera to save time. Depending on if the light is from the window (day) or from the CFL (night) or if the shot is wide-angle or close-up and the predominant color of the food item, the camera's built-in software takes charge and determines the red/white/blue balance for each picture. The colors on the first two are closer to the real thing. Rack of lamb, very expensive. If you take away the fat, and the bones, and shrinkage, it probably comes to $60.00 a pound here in NYC. Meat, bones and fat have different thermal conductivities, adding to it, the small size and the shape of a rack of lamb, it makes it very difficult to cook it perfectly unless you prefer the whole thing well-done. It is challenging to find a way to maximize perfection to every tiny morsel of this wondrous victual. At the temperature I set at 135F, it is too low to render the fat. Since I don�t eat the fat, it does not bother me just to scrape the fat off while I eat. But if I were to serve others who are not followers of the Paleolithic diet, I probably BBQ the fat a little longer and that will make the issue go away. No, you cannot make Schmaltz using a sous vide cooker. I think it needs to be emphasized that sous vide is merely a particular way of cooking with a special appliance. There is really no recipes for sous vide, no more than recipes for microwave, or cast iron frying pan, etc. It is unfortunate that the French word "sous vide" gives this concept a lot of unjustified mystique; the fact that top chefs and upscale restaurant use it makes it appearing un-approachable. It makes it seem like practitioners of this way of cooking belong to some religious cult. The truth is this: sous vide is just a water oven that can keep constant temperatures. If I were to name this appliance, I would call it "Cookware For Making Perfect Meats For Dummies" If you show a 10-year-old kid how to set the temperature, the kid can cook the meat sous vide just like a top chef. A sous vide cooker simply will not allow you to overcook or undercook, it makes no difference if your piece of meat is frozen on one half and the other half at room-temperature, thick on one end and thin on the other end. No doubt, sous vide is going to go thru similar fade as the microwave oven did. First microwave oven was scosting like $5,000 and there were many myths and fears surrounding these bizarre new electronic "radar ranges." By the seventies, more and more people were finding the benefits of microwave cooking to outweigh the supposedly risks, and none of them were dying of radiation poisoning, going blind, becoming sterile, or impotent. I guess women sure do believe what they hear for anyone to believe her husband has to go two hours away to purchase her present. Then there was nothing else to believe throughout his whole story the entire day, the second of which was that he couldn't find you the gift that was 120 miles away, whatever it was supposed to be. Obviously he had nothing in mind, so why did it take such a lengthy trip? He might happen on something that no other clothing store, jewelry store, or appliance department could possibly sell? yeah right. You believed it from the start, which shows the pile of snow and denial his elaborate lies have you under. And just for the record, there was also no friend in attendance, so he didn't finally leave his buddy two hours away from home.....this was a planned trip.....hubby did not attempt to drive home.....he did not get a hotel room upon your advice because he already had one. And, you should be ashamed of yourself for suggesting he drive home drunk anyway. I don't understand why women make idle threats like that. Exactly what does "I won't put up with it" mean anyway? He's not your child, so what did you plan to do? Not get over it? Think about it every day? Is that what you not putting up with it is? You spy on him, listen to his phone messages, make sure you know his every move, argue and cry like a baby, and keep taking his crap. Is that what you not putting up with it is? And why for goodness sake did you get pregnant through all of this? Well, whatever you decide not putting up with it is supposed to be, you might also want to learn about self esteem. That is not his responsibility. He has and will continue to trample you because you don't have any, and whatever little bit you are able to muster is the pidly little he affords you. It should not depend on him. If a person has something to abuse, they will abuse it as long as you allow until you determine what not putting up with it means, that is unless continuing to put up with it is what you decide it should be. What is up to him is respect for you, but that is not forthcoming and never will be. He will never change, not even with counseling. He'll just always think he's slick, so he will get worse, his lies will get more and more elaborate, and he will continue to trample you. All the while, he will dish you out a little momentary security and self esteem with the hugs and baby I love yous so that every single time, you determine "I won't put up with it" means putting up with it.

That's wonderful news. I wish you speedy healing, maybe after a night in your own home you'll do better tomorrow, less pain. I hope this is your answer and you have many, many days of feeling well ahead of you....no more hospital stays ;0)

I am glad you are home and doing better. The pain will go away, and you will feel like a new woman! JoAnn_Fla, I know many people that after the surgery site has healed have no pain from the pacemaker itself. My mom was thin and bony in that area, and complained about it hurting for years after it was put in. But it might also have been something that her mind grabbed hold of to complain about. She has alzheimer's and looking back, it started before she had it put in, and with her, it has been a litany of complaints, continuously. That is just the way the desease has worked on her. Now, she can't even complain. She is sleeping almost continuously, and not eating or drinking, except for tiny tiny amounts. We won't have her much longer. Having said all that about mom, I think that it's possible that the device might be too big for a small person, and cause some pain, but I don't know. I'm not sure how long ago mom's was put in, but at least 5 years ago. They are probably improved so much by now, and made smaller, that it wouldn't be a problem.
