Coconut cake, do you have a favorite recipe?

My grandmother always made a coconut cake for my birthday. It was awesome...BUT, someway the recipe got smudged(water damage) and you cannot read it any more. My husband and I LOVE coconut cake. I do remember my grandmother's cake had filling between the layers. (different than the frosting) I know that she used cream of tartar in the frosting and maybe boiled it? Cannot remember..She used real coconut and the juice out of the coconut for either filling or frosting. If my memory serves me correctly (not sure of this) She would pour the coconut juice on the layers after she poked holes in each layer. Have any of you heard of this recipe or one like it? Your recipe does not have to be like my grandmothers, but I am looking for a really moist coconut cake recipe.

My favorite:

3 Day Coconut Cake

Icing
1 8 oz. frozen flake coconut
16 oz Sour Cream
1 1/2 cups sugar
Mix all together and refrigerate for 24 hours.

I box Yellow cake mix
Bake in 2 layers, according to directions.
Cut each layer into two layers.
Spread icing between layers and on top.
Refrigerate for three days.

This is a beautiful, moist, flavorful cake. I like to make it especially for Easter.

This is my all time fave cake with coconut it is not the typical type but it is so good.

Snowball cake
1box white cake mix
1 (6oz) can crushed pineapple drained
1 (6oz) can pineapple juice
1 large box vanilla instant pudding
1 (8oz) pkg. Cream cheese
1 (9oz) container cool whip
1 large can coconut

cook cake as directed. When cake is cooled, remove from pan. Punch holes in cake with a fork or skewer and pour pineapple juice over it.
Top cake with crushed pineapple. Set cake aside. Prepare pudding as directed on package. With electric mixer, mix cream cheese with pudding. Spread over crushed pineapple. Frost entire cake with cool whip. Sprinkle on coconut. Refrigerate

Thai Green Beans and butternut squash 1 medium butternut squash, split in half and baked at 350C until done (pierce with a fork to test) 1 can regular coconut milk (15 oz or so) 2 cups fresh cut green beans (frozen works too but fresh is best) 3 cloves garlic, minced 1 tsp sugar 1 tbsp lemon or lime juice 3 leaves from a kaffir lime 1 small bunch of fresh thai basil AKA Siam queen (regular sweet basil will also work) 1 small bunch chopped scallions 1 sliced hot pepper (I used cayenne and thai red peppers, leave in slices so they can be removed if desired Â green hot peppers will also work here) Salt to taste Bake butternut squash. When cool enough to handle, peel, seed and cut into 1 inch chunks. Open can of coconut milk. Use some of the solids on top (the oil) to sautÃ© garlic, kaffir lime leaves, sugar, salt and hot peppers for just a few minutes (do not burn the garlic). Add green beans and squash cubes and stir. Add the rest of the coconut milk can and cook for 10-15 minutes until green beans are done. Taste, adjust seasonings and sprinkle top with chopped scallions.

I don't often come here, I mostly hang out of the Cooking forum....but stopped in and saw the request. this recipe came from a cookbook that is out of print, called "J.T's Cuisine"....and it is the best I have ever had. Carrot cake Julie TÃ¯Â¿Â½s 3 eggs 3/4 cup vegetable oil 3/4 cup buttermilk 2 cups sugar 2 teaspoons vanilla 2 cups flour 2 teaspoons baking soda 3/4 teaspoon salt 2 tsps cinnamon 1 8 oz can crushed pineapple, drained 2 cups grated carrots 1/2 cup raisins chopped with 1 Tablespoon of flour Buttermilk glaze 1/2 cup sugar 1/4 tsp baking soda 1/4 cup buttermilk 1/4 cup butter 1 Tblsp light corn syrup 1 tsp vanilla Orange Cream Cheese Frosting 1/2 cup softened butter 4 oz softened cream cheese 1 tsp vanilla 3 cups powdered sugar 1 tsp orange juice 1 tsp grated orange rind Preheat oven to 350 With a mixer Beat eggs, add oil and buttermilk, sugar and vanilla. beat to combine. I slice it and saute it in olive oil. Then I serve it over linguine with lots of Parmesan. I don't remember the name for it....they were making it on a PBS fundraiser show. I also add some onions and mushrooms to mine usually. I like it sliced and breaded and fried, also stuffed with a hamburger and tomato mixture, topped with cheese. Sometimes just stir fried and served with steak. I made zucchini fritters awhile back and they were good too, but I didn't save the recipe. I grated them and formed them into patties and pan fried them. I can't remember what else I added as a binder or mixed with them.

i LOVE from scratch coconut cake, i don't make it any other way. Martha Stewart has an awesome recipe that has a filling like very thick pudding w/ flake coconut and a 7 minute frosting (boiled type), it was her mother's recipe i think. my DH makes it for my b-day every year ~ liz

I have a white cake mix I bought last week for it and spaced out the cool whip.DH and I both love this!

Coconut Poke Cake

Ingredients

* 1 (18.25 ounce) package white cake mix
* 1 (14 ounce) can cream of coconut
* 1 (14 ounce) can sweetened condensed milk
* 1 (16 ounce) package frozen whipped topping, thawed
* 1 (8 ounce) package flaked coconut

Directions
1. Prepare and bake white cake mix according to package directions. Remove cake from oven. While still hot, using a utility fork, poke holes all over the top of the cake.
2. Mix cream of coconut and sweetened condensed milk together. Pour over the top of the still hot cake. Let cake cool completely then frost with the whipped topping and top with the flaked coconut. Keep cake refrigerated.

Thank you all so much, I appreciate your recomendations! Although they are different than my grandmothers, they all sound really good. The one that Nodakgal posted and Sue posted are definitely going to be tried. The one that raven posted I will have to try at a later day. I know my husband would love that one as it has pineapple in it. I copied and printed all so I could have a hard copy. Again, thank you!

This reminded me of the pineapple cake I make with Angel Food cake mixed with Pineapple (with it's own juice). Is there a simple (not too sweet) Coconut frosting mix to top it with - right now, I just use cool whip - hey could I add coconut to the cool whip or maybe just sprinkle some on top??? Any suggestions are welcome.

I didn't have any Coconut Cake Recipes and now I have several... all saved on my PC hard drive AND printed off for my recipe notebook.

It will be a little bit before I try the first one because I'm just going to make my first Chocolate Cake from that recipe thread this afternoon.
