Replacing an almost obsolete 27'' drop in range involves more than just cutting the counter. That's the easy, but filthy, part. The whole base cabinet run needs to shift to fit a larger range, as well as the uppers. You can't have any wood over any part of a cooking surface lower than 30''. That means keeping the range centered to the vent. Yes, it's as much work as it sounds like.

There are about 2-3 27'' drop ins still made. That would be the easier and cheaper choice. Then sell the house quick before that breaks and you can't replace for love or money.

Whomever designed your kitchen shoud be flogged for incorporating obsolete machinery from the beginning.

Recut at the stove opening? It sort of happened to me.

There was enough room for my stove, but something looked off. One side of my Caesarstone was undercut by about 1/4" and the opening needed to be made larger so that the stove could be centered. It was done in place without undue mess. Luckily it was an under- rather than over-cut.

Thanks to you both. Holly springs, would it change your mind to know that the front of our oven is actually 30" but then it tapers in and the counter is cut in the same weird shape, therefore more narrow at the back? It might be an actual 30" stove.

Any good fabricator can cut that. Won't be cheap, as you're paying a small job premium for the travel, setup, dust containment, and cleanup. Probably $200-$300 range unless you're willing to wait until he has another job somewhere in the neighborhood so it doesn't kill an entire half day just doing that.
