Hanging a shelf on brick veneer

My kitchen is almost finished. I have to install two shelves on a wall that has a thin brick veneer. The house has old style drywall which is actually more like cement board, as it is thicker and much heavier than todays drywall and doesn't crumble when it gets wet.

The wood is an 8 inch by 4ft solid slab. Reusing from an old butcher block countertop. I had a lady make raw steel brackets that these will be sitting on.

I cant seem to find much information dealing with the brick being a veneer. I could elongate the shelves by 6inches and then I may be able to find studs on either end (based on where some outlets are) and then have a central support not in a stud, but I would rather keep the length to 4ft.

The only other thing I thought of would be toggle bolts or tapcon screws. Unsure of how to proceed. If anyone has dealt with anything similar I would appreciate some advice!
