Why not consider a dining table with a leaf or leaves? Is the eating area part of the kitchen and not a dining room? The table looks more like a dining table than a kitchen table.

It's the eat in portion of the kitchen - we've got a separate formal dining room but we live at our kitchen table except for holidays.

We're having the kitchen table made from reclaimed barn wood and guy will make to whatever size we want. We're getting a leaf for times when we want or need, but on a daily basis I want a table that will comfortably for six chairs (2 on each long side and 1 on each end) and have width to be able to put food in middle of the table.

However, I don't want the table to eat up so much space that it ends up feeling right or cramped to get around or into pantry.

But I'm challenged at envisioning it bc I have difficulty figuring out plans

30x60 doesn't sound comfy for 6 chairs to me. We have leaves in our table, and we generally keep it at 48x72 with 6 chairs. That is comfy. We add a leaf or two if we have more than 6 chairs. And, we aren't big people. 30x60 sounds really squashed for 6. I'd make the table at least 42x66 minimum for 6 chairs, and I'd find the room somewhere somehow!

FWIW, I struggled and struggled with the dining table arrangement in my remodel, and I decided that 48" from table edge to wall was enough to put a chair there and get behind it pretty easily. Got the table in now, and that works fine. However, I didn't have door swings to deal with. Could you do something about those pantry door swings? Maybe turn them into pocket doors if those walls are going to be opened up anyway? Looks like you could do one pocket door, maybe 30-36" wide, sliding into the available wall. Or a "barn door" style if you can't do a pocket door. That'd save you a lot of precious floor space.
